    ARCHIVED Legumes

Hi Dilettantsteph -- thanks for your reply. I should clarify that I'm not posting here on this for me. I'm posting this because a lot of folks online are suggesting just washing the beans to magically remove the gluten, while Jane Anderson is saying that trace amounts may remain. I just want to point that out in case there are other sensitive folks like...

    ARCHIVED Legumes

For what it's worth, I suggest getting a gluten-free testing kit and checking to see if your beans are safe after washing. It's the only way to be sure. Jane Anderson at About.com claims that washing (soap or no) does not really remove the gluten: Open Original Shared Link I'm inclined to agree. Most beans are not totally smooth surfaces, so some...
  3. Hi Folks, I've been gluten-free since Nov 2011 (when I was diagnosed after testing) and lately discovered that a lot of my lingering digestive issues seem to be connected to the small amounts of dairy I was eating (butter, hard cheese, the occasional yogurt). Since I couldn't handle most foods, I'm excited to finally start to expand my diet now. I'm...
  4. It's totally orthostatic hypotension. I only get it after my evening glass of wine, but that has never happened before. I checked and alcohol should only be cause if I'm overdoing it, but if anything I'm drinking less than a whole glass. Nonetheless, could be causing dehydration. I have iron overload and eat way too much protein (not by choice), so dehydration...
  5. Symptoms from gluten can take a while to leave your system, you could also have other food intolerances or conditions. SIBO is one associated with leaky gut, which comes from intestinal damage from celiac. So many possibilities. The only sure way to know is to take all this to your doctor and get some testing done.
  6. I made rice crackers from cream of rice baby cereal, olive oil, and water. It's surprising edible!

  7. OK, started a new thread on that here: https://www.celiac.com/forums/topic/99944-fructose-intolerances-what-does-the-medical-literature-say/
  8. Kareng brought up a good point on a different post -- what exactly does the medical literature say about problems eating fructose for people diagnosed with celiac? Some of us have it, but most don't. Is it a leaky gut thing? Is it a different genetic condition? Is there even a third factor that I can't think of right now that might be causing it? The...
  9. Well, I'm not a doctor. And most folks go off gluten and do just fine. But if you want robust studies on food intolerances connected to leaky gut, I would also love very much to see them. I'm desperate for serious medical research into the subject. Until then, we have outlier anecdotal evidence. It's not ideal. The fact is that fructose malabsorption...
  10. Thanks! No candida here.
  11. I'm a 35-year-old woman with hereditary hemochromatosis. I'm supposed to have zero problems til menopause, but in my 20s I had severe iron overload. After the bloodlettings, things went along OK. But now I'm diagnosed celiac and gluten-free...and my celiac anemia tendencies are removed, allowing the iron free rein in my system. It's running in my system...
  12. Yours may be better than mine, of course.
  13. Just do a search on the boards here. A lot of people say fructose gave them problems initially. But not most people for sure.
  14. Hm...I get very dizzy upon standing at least once a day, but I have absurdly high iron (serum ferritin in the 250s--I'm waiting for a phlebotomy). I'll look into this further, but I'd love to know if its a celiac thing.
  15. Grrr. Because out digestive symptoms are drama queens. Just when you think you get it, it all changes on you. I hear it gets easier, so hang on. When I feel sad, I read the Crohn's boards and thank my lucky stars.
  16. YES. I hate it. I hate it all. I react this way to fructose, so I eat only meat/fish/eggs and plain rice. PM me if you want to talk about the diet. It's more varied than that and a little tricky to get the hang of, but solves all my problems when I do it right. It's been pretty great. Except the dizziness on standing up. No idea why that's happening...
  17. Fructose is bad. I stay away from all sweet things except pure dextrose (in Smarties and pixie stix). Causes me no end of awfulness.
  18. Did someone mention fructose intolerance? Could be that. It's a common thing for us within 2 years of going gluten-free while everything heals. A total mind game to suss out, though, since its in, like, everything. Try plain white rice as your only carb, no sweet things at all, and see if it helps. If it does, PM me and I can suggest some low fructose...
  19. Update: it's looking like either hereditary fructose intolerance or leaky gut of monumental proportions. My only safe foods are plain meat/fish/eggs (cooked--homemade mayo had fructose that laid me out), most vegetable oils and ghee, and plain white rice, thoroughly washed. Oh, and a thimbleful of select spices. Basically any fructose over .1 g per day...
  20. For the hair loss, there's always the possibility of iron being involved. Checking that in addition to whatever else you're testing might be good. I have iron overload AND Hashimoto's, so the symptoms overlap. Anyway -- a simple iron panel (serum ferritin especially) can rule out iron issues. If you haven't been checked for SIBO, it might help. But...
  21. Thanks -- very comforting to know that there's some hope for us starting fresh while on the wrong side of 35.
  22. There's a post on why sushi rice may not be safe here (): Also: Japanese MSG is apparently not gluten-free (although US MSG is) And: cc is a huge problem at sushi restaurants Although a friendly place where you can chat with the chef while he's making it and watch him work will probably be fine. They'll probably also let you check the...
  23. Since we're on the subject... Does anyone feel like a drama queen whenever food comes up as a topic of conversation in the workplace? I try to keep it light, smile and make a joke about it whenever it comes up (and to make sure it doesn't come up), but it's always somewhat awkward. I already have crazy mood swings from accidentally eating things I...
  24. Diana, once again, we are totally on the same wavelength. Just sayin'.
  25. I'm also trying to gain weight (5'2", 100 Lbs). My approach is to get lots of carb-heavy liquids into myself. So I'll put maple syrup on my gluten-free waffles and made homemade water kefir sodas with juice. I've heard sugars turn into fat in your system better than fats do, oddly enough. I can't eat much, so liquids is how I try to sneak it all in. Unfortunately...
