I found out why I react to wines, balsamic vinegars (which are made from wine) and coffee. They are all de-acidified by pouring over gluten and casein proteins!

This is the second claim you made regarding this subject. This is absolutely untrue! Can you support this claim with verification?
Hearsay is not acceptable, when you telling people that their wine, vinegar and coffee is contaminated with gluten.
Accurate information on this site is essential.

The other morning I packed my lunch early and did not notice the bottom of my yogurt said best by Sept 17, and for some reasdon noticed it after I ate it! It was thin now that I think about it and that was about 48 hours ago and Im not sick yet knock on wood! But does anyone think Ill get sick still????
I think that if you ate bad yogurt, you would know it by now.

Great ideas already!
We celebrate Christmas with a large group of people. Someone else does the turkey and it's usually stuffed.
So, last year I popped a cornish hen in the oven while we were opening gifts and it was ready for lunch.
It was a big hit. I had my own personal "mini-me" bird. I can cook a turkey for myself and family anytime.

Anti-gliadin antibodies (AGA) both IgA and IgG
Anti-endomysial antibodies (EMA) - IgA
Anti-tissue transglutaminase antibodies (tTG) - IgA
Total IgA level.
Yes, you must continue to consume gluten for optimum of results. A good gluten diet for SEVERAL WEEKS is suggested.

Make your own and use San J - Wheat free Tamari, or La Choy soy sauce. Both are gluten free.

And I eat Miracle whip light with no reactions. There are no obvious gluten containing ingredients.
This to me is a VERY GOOD indicator that Miracle Whip Light is glute free.

Hi Jody and welcome to this forum!
Celiac Disease can have up to 200 symptoms and yours certainly fits. It is important to know that if you should pursue testing, that you must remain on a gluten diet. Celiac can be diagnoses through a blood test, endoscopy exam and biopsy and positive dietary response.
If you elect to try the positive dietary response, it may indicate that you have a gluten intolerance, a gluten allergy or Celiac Disease. The others test are more specific toward Celiac Disease.
Many people here are self diagnosed and feel quite comfortable with that choice. Others feel that they need a more specific diagnosis for themselves and their family since it is genetically linked.
The diet is rather complicated in the beginning, but it can be done. With time and experience, it will become second nature. There are a lot of people here who can help you out with that, should you decide this is the avenue you wish to take.
If you would like to be tested, this is what you should ask you Doctor to order:
Anti-gliadin antibodies (AGA) both IgA and IgG

Anti-tissue transglutaminase antibodies (tTG) - IgA

I'm baking a birthday cake for my daughter's birthday, and I need black icing. In the rural area where I live, I can't find food coloring that color. But a local party store carries pre-made, packaged icing from a company called Wilton. The ingredients say: sugar, corn syrup, water, cornstarch-modified, carrageenan, salt, citric acid, sodium benzoate, artificial color, FD&C red #40, FD& C blue #1, FD&C yellow #5.
The only thing I can see that's questionable, is the modified corn starch. And to my understanding, they're required to list wheat, if it's in the modified corn starch, right?

I also want to note that those who share my thoughts, have been dealing with Celiac and associated ills for many years. With experience comes wisdom.
I am sure that many, many people are still adjusting the this new lifestyle. It does take some time.

Here is my thought:
A crowded hectic restaurant with a hassled waitress is the last place that I would seek help in ordering for my Celiac child, let alone a place where they primarily serve gluten specialties.
I would not expect her to spend extra time with my family, when ten others are yelling for her.
You have to make good choices to eat when you can have the time of the wait staff. Call ahead and know what you're walking into. And don't expect staff to stand on their heads to accomodate those of us with food issue.
Eating out well is a privilege for me, it's not my right.....just my thoughts.

This question came to me after I offered to forward a power point presentation to a group of nutrition professional.
"In your experience can kids with celiac exhibit ADHD-like symptoms such as impulsivity or oppositional behaviors? What age is screening appropriate since there can be false negatives without sufficient antibodies? "
Wondered if anyone here had any experience, opinions or other references that I could look to.

Many companies will not guarantee their product is gluten free, because they do not test for gluten. They can state that there are no gluten ingredients. Under those circumstances, I would consider that product gluten free.
Many times it's a CYA Statement.

My jaw dropped last night while watching Cold Case on CBS. Jeremy Ratchford (Nick) tried to get an extremely overweight woman to hurry a forensic analysis on a gun for him. He brings pastries to her desk and she lashes out at him stating she is a Celiac and allergic to wheat.
Main stream TV getting with the program! The allergy reference is poor but more awareness is better than none. I was diagnosed 15 years ago, when there were no foods to eat, no alternative flours to bake with and no awareness at all. It's easy to be a Celiac today. All the Celiac whiners should take a time out and think what it was like for us old timers.
I watched last night with one eye closed. I missed it. What I watched was about a teacher killed by another teacher and they blamed the street kid. Maybe I saw another show. I would have liked to have heard that.
Yes, I agree, in the four years that I have been dealing with this, it's been nothing short than miraculous.

Why not just try the Miracle Whip and loose the "Lite". I find it difficult to believe that Miracle Whip is gluten free, but the "Lite" version is not.

Lisa, as always thank you for your insightful information. I typically don't eat frozen meals, but sometimes it's nice to eat something a little different for lunch.
Hormel has some gluten free options. And some Thai soups are easy. Underwood Deviled Ham is gluten free. I mix it up with cream cheese and it's great with carrotts and celery.

Hello all. Question about modified food starches. I found some frozen meal made my Healthy Choice Smart One's that clearly state the food allergens. It will say wheat if wheat is in there. But I found several without wheat, but found they contain a modified food starch. If the starch isn't coming from wheat, what other form of gluten would this starch be coming food. Is this safe to eat? Thoughts?
Generally, modified food starch is derived from corn. If it is derived from wheat, it by law, must be listed as "modified food starch (wheat)" or listed in an allergen statement.
Be careful with regular processed meals. Often "natural flavor or species" could contain barley, malt or rye, as they are not required to be listed. I really have to dig through the frozen section to find a gluten free meal. I usually don't bother anymore.

I've researched this all morning but can't find a current answer. Is Kraft Miracle Whip LIGHT gluten free? Kraft lists the REGULAR as gluten-free, but doesn't list the LIGHT. Does anyone know??? I've only been diagnosed 6 weeks and I've stopped progressing. It coincides with figuring out that Miracle Whip Light tastes great on my chicken! So know I'm wondering if I've really screwed up!
I've contacted Kraft, but no response yet. Any clue?

Kraft's policy is to always list all forms of gluten. If wheat, barely, malt or rye are not clearly listed on the ingredient listing or allergen statement, it is gluten free.
