My dietitian and all I have read says the endoscopy biopsies are required to confirm a celiac disease diagnosis. My GI doctor's office called and said I don't need the endoscopy after the blood test panel confirmed Celiac Disease. They said stay on gluten free (WBOR). I don't go back to see them till Nov. 5th to find out how I am doing.
Confused.

If your anti-endomysial antibodes are positive, you can conclude that your diagnosis is Celiac Disease. No biopsy would be needed.

No shenanigans to report. The abundance (or over abundance) of wine kept me rather mellow!
I did find it interesting that, instead of hanging out a shingle to indicate a brothel in Pompeii, a giant stone penis was "mounted" above the door. And once inside, you could select your "pleasure", by choosing from a series of pictures. "I'll take #5".

I just spent a week in Italy, returning home last week. Other than choosing well, the key to my success was an Imodium before lunch, daily. It helped with the anxiety of an "issue". If you are touring, bathrooms are few and far between, with long lines and no toilet paper. Imodium is a must, in my opinion.
Most grocery stores or restaurants are familiar with "Gluten Free" or "Celiac" - it transcends the language barrier. But, Google on line "I am Celiac" in Italian and print it out. I never used mine, and had great pasta's and wonderful service. But I was on an arranged tour and our wonderful tour guide made previous arrangements for me. Dining on our own was not an issue either.
And a Caprese Salad will be your best friend for lunch.
Enjoy your stay and savor your experience. It's a lovely place.

Just to make that matter more confusing....I was wondering if the waiter was confusing the dusted material as cellulose (a common ingredient to prevent cheese from sticking - non gluten related)
Kraft lists cellulose as a non-caking ingredient in their grated cheeses.

I've drank Ocean Spray with no problem for 25 years, the change to Cane Sugar was just recently and that an immediate poison to me.
After the Ocean Spray got me, and I saw the cane sugar on the ingredient list I searched on cane sugar intolerance and found a plethora of sites discussing this. Evidently cane sugar is very similar to wheat.
I have never had a problem with Ocean Spray, ever.
Could you please direct me to your information?

When in doubt I stick with oil and vinegar... Think I will look for those pavkets though.

Kraft will label all forms of gluten on there ingredient listing. They are a great company.
They also make individual packets of their salad dressing. I usually keep several in my purse all the time.

Has any one tried products from Silly Yak Bakery in Madison, Wisconson? I see that they ship, but the products are so expensive that I want to see what others think before I order. The foods sound very good, but sometimes it is hard to tell from an ad.
I order from here and I love ALL their products. Gluten Free Galley is a small, but growing business by a fellow Celiac.

Yes, all cookies should be gluten free, and they are, gluten free in my house. But, those slobbery gluten kisses that are approaching you, quickly...Tomorrow is a new day and I still love the baby girl, with all my heart. :rolleyes

I don't usually have a reason to check the expiration dates on my gluten-free bread because I never have it long enough to worry. But I've been cutting back and I have a 2-week old loaf of Udi's that's moved between the fridge and freezer a couple times. It doesn't smell quite right, but neither does my freezer, and there are some white spots on it, but I can't tell if they're mold or just the spots of flour that get more noticable when the bread is frozen.
The trouble is... There's no expiration date stammped on the bag or the clip! I don't know if this loaf was just skipped over or if this is standard now on the new packaging.
So I have two questions: 1) Has anyone else noticed a lack of expiration dates? and 2) How long is a gluten-free loaf safe to eat when stored in the fridge or freezer?
I'm going to go out and buy a fresh loaf in any case, but I never really thought about the expiration date.

I'm not a big bread eater, but I'm currently in the mood for Rudi's Cinnamon Raisin Bread. That has gone quickly. All my bread lives in the freezer. My other breads, after a month or so in the freezer, get recycled into seasoned toast points or croutons (both again kept in the freezer.)
Expiration dates on gluten free bread...I have never noticed. But, I would assume that it would/ or should be accompanied by "freeze me or eat me really soon" label.
If you are concerned, pitch it. I would. We have enough issues.

I've been buying a lot of food from the local Vietnamese market recently, because most of their food is naturally gluten free. Last week my husband picked up a different brand of rice noodles than we usually use. Out of curiosity I looked at the ingredients list, and it just said "Flour, Water."
I'm assuming the "flour" is actually rice flour, because they look and taste just like rice noodles. But what are the chances that "flour" could have some wheat blended in? I know all US labels have to mention any presence of wheat, but what about imported items?
Imported items much comply as well. Yet, still that would make me feel uncomfortable.

I've been reading a lot about gluten-free since I'm a newly diagnosed Celiac & I've read that "modified corn starch" & "other natural ingredients" could contain gluten.
No, and Welcome!
In the US, any ingredient containing wheat will be required to be disclosed.
Modified Corn Starch is gluten free. No wheat involved.
And any natural ingredient, if involved wheat, by law should be listed. If you don't see it, it's not in there.
We have had and increase of members, who are ADDITIONALLY intolerant to corn, post. Generally, most people with Celiac, do not have issues with corn.

Boar's Head meats and cheeses are all gluten free (prepackaged), as well as many of their condiments....and pretty good too!

It is strange for me to be asking this: I try to esteem each day alike. However, my extended family is very in to traditional holiday traditions.
At first I thought I will just have Thanksgiving here and that will solve my problem. I could invite them all here. I have ample room to cook the needed food. However, My children think nobody could stand my food. It is also tradition for everyone to bring something. I have been reacting to airborne stuff. One jar of pickles or a salad with vinegar is possibly going to send me reeling. I also react to the smell of yeast bread and up until this year I ate my once yearly bread binge. Now enter celiac.
My mother is absolutely irritated with me even before celiac. I ask what is in something and then I won't eat it. I have not attempted to explain it to my mother since I know better than to talk about my health. She would not trust what my professional help tells me anyway. My sister thinks that I am obsessed with food and is hoping that I will get over it. That is pre- Celiac dignosis. She hopes that I will consider peoples feeling in the future more important than food.
Ok, so maybe I should bring my own food to someone elses party? I know what is for dinner and can match it. But I havent' been staying at the table when my family has gluten, yeast, or catsup. Can I get by with it that day?
Well, if anyone has ideas how to politely, but firmly deal with this situation please list them. I am going to take care of myself, but I don't want to be a "snooty hermit" either. I did notify the family of my celiac diagnosis and also shared the papers which told what I could and couldn't eat.
Well, I am probably dealing with a family of untreated celiacs. What to do?

Sometimes it's a fine line we have to walk. Have you offered to share a dish that you consider safe, with others, at family gatherings? That's what I do. And there is no reason to leave your family dinner table. You don't always have to share what they eat, but share the gathering.
I also don't think that others should conform to me. I, rather, try to fit in, in a good way so others are not put out too much because of my diet. It's not their fault and I'm in charge of my food safely. I prefer the subtle approach.
It works well for me.
You mentioned that you react to the smell of vinegar, ketchup and yeast. You may have allergies, in addition to Celiac. Generally inhaling smells will not generate a gluten reaction. But then I don't know "how" you react.
I, personally, hate the smell of donuts, but I have no physical reaction....they just smell bad to me.
Maybe you should sit down with your mother and explain your feelings.It might open some avenues for you.
