  1. I'm rather new to this and have only been totally gluten free for 4 weeks. For years, I reduced my "wheat intake" and was always on a diet. As I've gotten older the gluten symptoms have worsened until I knew I had to go gluten free. Today my cleaning lady brought chicken sandwiches over for our lunch. I took the chicken off the bread with the radishes, tomatoes and rugala and had them as a salad. Next thing I know, I'm asleep in front of the TV for 2 hours. I woke up and began coughing like mad, my sinuses were draining, I had shortness of breath and my eyes were swollen and runny. I had a slight headache and my neck and shoulders hurt from fibromylagia symtoms. Luckily I didn't have intestinal distress....yet that is. I didn't think contamination would be an issue for me, but undoubtedly it is. Is it normal to have a reaction that fast? Your comments on the subject of contamination would be appreciated.

    You may have a wheat allergy which results in your symptoms. Cross contamination must be a issue for you. For people with celiac or gluten sensitivities, taking the chicken off the bread is a big no no.

    What great information!

    Sometimes, I think that we get a bit intimidated by doctors suggestions (well, most doctors ) for the quick RX, that the common sense decisions get lost, as you stated. I think I will stick with the walking and diet for a while.

  3. Has anyone else noticed a sensitivity to Maybelline solid eyeliner? I had used it for years without any reaction. About a month or so ago, my lids started feeling itchy and like there was grit near my lid lines. I thought it was from not removing the makeup at bedtime ;) ....so I got better about taking it off with plain Vaseline. It did not help, so I went bare(not a pretty sight......a co-worker asked me if I was tired!!) After the itch/grit went away, I bought some pricey liner(I sure missed the $5 variety) and the itch stayed away. I thought after a few weeks, I'd retry the Maybelline today and within a half hour the itch/grit came back. Off it went again. I doubt I;ll retry, but I was curious if anyone else has had a similar reaction.

    I can't vouch for the eye liner, but I believe that the mascara contains gluten.

    If you are going to pursue testing, do not have him begin the gluten free diet. Your GI should suggest and endoscopy exam, that will look into the small intestines (area effected by Celiac Disease) to see if there is any damage and take multiple biopsies. A biopsy can confirm Celiac, but it is not 100% reliable as the biopsy can be hit or miss.

    After testing, a simple diet is best in the beginning. Meats, Seafood, Rice, Potatoes, Fresh Veggie and Fruit. Once familiar with what to look for (wheat, malt, rye, barley) you can add additional foods. Don't rush out and buy expensive processed gluten free foods. He won't like them in the beginning, although GREAT inroads have been made in taste and texture in the recent years.

    There are listings of gluten free products, but ingredients change frequently and their gluten free status may be in jeopardy. Those lists are great in the beginning, but should not be relied upon for any extent of time.

    Good to hear from you again. New Bern is a beautiful town. You will love it there. I live about a hour and half up the coast from there.

  6. I think you actually want to keep drinking....

    Moderate amounts of alcohol raise the 'good' cholesterol.

    Yup, red wine is especially good for the cholesterol, but the trade off is that my liver is not a happy camper with alcohol which, in my case, raises my cholesterol to an unhealthy level. Kind of a catch 22, huh? <_<

    The statins were prescribed not so much for today, but for years down the road when I may have heart issues.

    You will find no better experts on celiac than here. Please read as much as you can from this site.

    There is no enzyme pill that will "cure" celiac or break down the offending gluten. Only a true gluten free diet will work for celiac and it's symptoms. Please don't fall for a gimick.

    I also found it curious that studies show that statins offer no benefit for the prevention of plaque in the heart, which is what my brother is experiencing currently, who is eight years older than I. My father passed away at 62 from his second heart attack.

    That and my 250 cholesterol is the reason he put me on statins. I don't think it is settling well with me. Perhaps I can work better on lowering my number through diet and exercise and get off the statins.

    You start simple, by what we call the Naked Diet. Simple meats, seafood, fresh veggies, rice, potatoes, fresh fruit, with as little seasoning other than salt and pepper. Don't panic, this is just in the beginning of the diet.

  10. Hello Everyone,

    My doctor, due to family history and high cholesterol, has put me on a generic statin. I have developed some muscle strain and cramping, that I attributed to increased exercise. Although, this muscle strain and weakness never resolves with rest or continued exercise. I have always felt rather agile and now, after sitting in a chair, I get up and limp across the room until my muscles can acclimate to a new position. Sitting on the floor is no problem, getting up is a near impossible. All of this began a few months ago when I began taking Simvastatin 10mgs.

    I have done some looking on the Internet and now I am concerned. Many sites indicate that statins can diminish the absorbing of Co-Q10 which can effect the muscles.

    Anyone with similar experience? Advise?

  11. Anybody also have short list of spices they use to season food that they know are gluten-free??? I am assuming things like salt, pepper, paparika, are ok?

    Also, what about coffe or caramel flavored ice creams??

    McCormick's Spices will clearly list all forms of gluten. Any spice in it's authentic form would be gluten free. Kraft Cheese will list all gluten on the label.
