  1. I always make my own. Hellman's mayo, vinegar and sugar...easy. Can't help you with other options though.
  2. Sometimes that remains a mystery between all of us. There seems to be a lot of variables which I hear from others. How long ago were you symptomatic of cross contamination and were you certain it was gluten? I have heard from other that after a deliberate gluten that they had no problems, then another time a severe reaction. Why it varies, don't know....

  4. Lissa, You have been gluten free for three years and most likely totally healed from when you were so ill. It might take continued exposure to gluten over an unknown period of time for you to react as you did before. Or, your reaction could be delayed for several more hours or several more days. Everyone is different. Try not to get nervous...

    I would think that every Mexican Restaurant is a little different. I have used my Truiumph Dining Cards in Spanish and the staff was very helpful. I would speak to the manager during off times and you can go over the menu.

  20. I have heard that first degree relatives have a 20% change of Celiac Disease. If that's the case, it's a very good likelihood that your children may never develop Celiac. Testing for children under the age of five is highly unreliable and your child is not symptomatic. I would be aware of the possibilty and watch for symtoms.
