  5. You can definitely use shortening as an icing base. I use shortening instead of butter for icings that I use to decorate sugar cookies and stuff. It stays stiffer than butter, but should work fine!

  10. Hi E, Yes, it is very possible to have it and not have symptoms. I am one of those people, so I know exactly what you mean! I ate a diet very high in gluten (especially while I was awaiting my biopsy, lol), and never experienced any digestive troubles.

  17. I also showed gastritis on my endoscope. However, like my celiac disease, it gives me no problems or clinical symptoms. I didn't really ask about it, I guess I am just thinking it will also get better on my gluten-free diet. I have read that gastritis and celiac disease commonly go together.

  19. It would be helpful if you could have an allergy test for barley, rye and oats as well. I agree that while wheat free is probably what you need, you will likely find that means pretty much gluten free because of the mixed grains in so many things. Most breads, for instance, even rye and stuff, also have regular wheat flour in them.

  21. This is the sort of thing my nurse's brain has been telling me as well. It just doesn't make sense that an intoerance can turn into celiac disease. That to me sounds like saying if you eat too much sugar you will get diabetes (my mother used to tell me that as a child!).   23. I have in some places seen the terms Celiac Disease and gluten intolerance used interchangeably. However, in other places, I see them used quite differently. celiac disease causes definite measureable damage to the villi of the intestine. A gluten intolerance my cause similar symptoms but not the same type of damage as celiac disease. celiac disease...

I had + bloodwork, but I opted for the scope because I really had to know, especially since I have no symptoms of celiac disease.   25. Honestly, I don't know how they test for intolerances. It would not test + for an allergy, because it's not an allergy, and it would not test + for celiac disease because it's not celiac disease. While the symptoms may be similar, an intolerance will not damage your villi in the same way as celiac disease. Sounds like I am making you more confused, sorry
