  1. The last several days I've just been kind of down. Sad, unmotivated, irritable, blah. No idea why. Didn't think I had been glutened, because I wasn't having any of my other usual symptoms. It was getting to the point where I was starting to wonder, but not really. Like most people, the glutened feeling is pretty specific. So I was thinking it must...

    ARCHIVED Montel

That's really interesting because I know he was diagnosed with MS several years ago. Wonder if he's been tested for celiac. Nancy
  3. I use Bob's Red Mill All-Purpose Baking Flour Mix the same way I used to use regular flour. It works great. My husband even uses it when he makes a stroganoff-type sauce too, and he's not gluten-free.
  4. These are the cookies that my family always made every Christmas since before I can remember. When I figured out my gluten problem last year, I thought I'd never taste these again. But now I can make them with my kids!! These are heavy on the nutmeg, so may not be everyone's taste, but you could always cut that back or use cinnamon instead. The...
  5. Hi Nancy! (I'm Nancy too!) Your English is perfect by the way. I never would have guessed English was your second language. Since putting my son gluten-free, he is a completely different kid. I never thought about autism much with him. But that was just because he acted just like the kids on my side of the family act. Not unsocial, not especially...
  6. Oh my gosh. I had absolutely NO idea that the symptoms were so vague, or not easily noticed by a parent. I always just heard about the peanut allergy and the epipen and calling 911 type anaphylactic reaction. I didn't realize that someone could be allergic but still eat it or that there were different levels of allergic reaction. I just thought that if...
  7. Welcome to the board! I'm glad you found us here. This is a goldmine of information and support. Nancy
  8. You know... back to the original intent of this thread, it's the combination of different points of view, and different experiences and levels and types (mostly neuro symptoms vs mostly GI symptoms) that gives a newbie the best information. I know there has been once or twice where I was the first poster on a newbie thread from hours ago when I hoped...
  9. Rice Dream has barley (gluten). It's kind of hidden though and not in the ingredient list. The only statement of it is below the ingredient list and it says something about 2% barley (can't remember anymore what it says). Not sure about the soymilk though. A lot of the time, people have a hard time with different foods for a while after going gluten...
  10. I got the muffin top pan at a local kitchen store, but I've seen them around. Here's a pic of the same one I have so you can see what it looks like. Open Original Shared Link One thing I didnt' like at first was it was slightly sticky (not underdone) in the middle. So now I leave it in the breadmaker until it's cool. Doing that drys it out just a...
  11. My stools were never light. But they did stick to the side of the bowl. I think I saw somewhere something about fat malabsorption (therefore it ends up in your bowel movements) causing that, but I can't remember where I saw it. Mine aren't sticky anymore unless I'm glutened. Nancy
  12. As for the 10-inch signatures, I'm definitely guilty . I'm sick of looking at my own in a way, but it cuts down on the length of my posts too. I've been planning on putting it into a blog here but haven't had a chance yet. If nothing else, it could use a good edit and pare-down. But honestly, I'd rather spend my time here answering questions and helping...
  13. Everyone's reactions are different, and last for different amounts of time. I've heard as long as three weeks here. My reactions are pretty immediate and the worst is the first 8 hours, but I have lingering symptoms like being tired and unmotivated for a few days afterward. If I get glutened consistently for days on end, it will take me a week or so to...
  14. That's a great point Catherine. There is NO such thing as a lost loaf of gluten-free bread. Breadcrumbs, croutons and stuffing all come out great with not-so-perfect bread results. Even not-great gluten-free bread can be improved just by toasting it. Or making french toast and slathering it with syrup or jam. I made a different type of bread last week...
  15. This is such a great post. We all forget how confusing this was at first. Once all the details make sense, you hit your stride and you're good for the long haul. It's a great testiment (sp?) though that after just a few months post diagnosis, most of us just come here to visit each other and answer questions from people who have just found us. ...
  16. Wow! There are so many people who have helped me. Either directly by answering a questions, or indirectly when I was pouring through the archives. There are people who make me laugh, people who are just plain nice, and people who are fellow information junkies. Have you ever been a part of a big group where you just feel at home? Whether it's a...
  17. I keep bringing this up in posts so I thought it deserved it's own topic. It smells like wheat bread. Especially when it's baking. It's pliable. It doesn't have an odd flavor. It doesn't crumble. It's not gritty at ALL. Everybody likes it. Even non-celiacs. Even my MIL, who will point out the negative in just about anything, made a point of...
  18. YES!! When my daughter gets glutened, the first thing that happens is she gets dark circles under her eyes. For me, it's negative thinking and exhaustion. It's very common to have non-classic or less obvious symptoms with a glutening. Pale and achy would make me think he got glutened too. I like your word though. Zapped is definitely how it feels...
  19. I don't know the answer, but wanted to let you know that the bread I use is a premix called Pamela's Wheat Free Bread Mix. It's WONDERFUL. The texture is very good. Not gritty even in the slightest. It's pliable and lasts. It's actually bends and doesn't crumble. It's also very close in flavor to regular wheat bread. Even smells like wheat bread. ...
  20. You may be having symptoms that you aren't aware are gluten-related. A lot of the stuff that went away after I went gluten-free are things that I thought were just part of my personality or just "me". I didn't do well in school, despite high(ish) IQ scores. I couldn't remember anything. I had a hard time concentrating. Was exhausted all the time...

    ARCHIVED Professional Dilemma

I think a lot of the reason some people get frustrating is that a lot of the tricks and tips of living a delicious gluten-free life aren't well-known. Maybe you could find out what things she's most missing when on the gluten-free diet. She may not realize that there are SO many options. A lot of people just think that the Ener-G White Rice Loaf "bread...
  22. I just came across this today, so I thought I'd post it. I haven't contacted the company to see how sure they are of it being gluten-free, so anyone wanting to try it might want to do that. Open Original Shared Link I looked into it a little further and it says that it doesn't contain any drugs, stimulants or suppressants. I've never used this...
  23. YAY!!! That's great Lisa! Keep us posted! Nancy
  24. Hugs to you. Nancy
  25. There were several surprising things that I never would have thought might be all connected to each other. For me, one of the things that went away was my insomnia. I had insomnia for years. Mine was the not being able to fall asleep variety rather than the waking up after falling asleep. I literally remember being four years old and crying at night because...
