I think the answer to this might be... they're not celiacs but they're gluten sensitive and have been for many years. Rinne, I've been diagnosed recently with akylosing spondylitis but now I'm wondering about Lyme. I went through a check list of symptoms and I have a lot of them. Let me know what you find out about the testing! I'm going to bring it up with my MD when I see him, but I have a feeling it might not get taken seriously. -

I don't think the gluten sensitivity/autoimmune issue is completely understood. There's lots of theories but that's about it. Call your endocrinologist and ask to speak to his nurse, pronto! You don't want to go around being hyper, it isn't pleasant. You can have D as a side effect to hyperthyroid. If you've got hashimoto's it isn't uncommon for your thyroid to kick into gear again. Sometimes it does go away once you get off gluten (30% remission rate according to Dr. Fine)...

It is a very forgiving recipe. Basically you need eggs, flour, levening and some flavorings. Just get the batter to about the right consistency and don't over/undercook in the microwave. Another thought is... perhaps the doctor is an idiot? I mean, they may not realize that gluten lurks in everything. I remember hearing that a doctor gets an average of 11-13 minutes spent on celiac disease in med school. I saw mesquite flour, I believe it was, in a HFS. I'm always looking for non-starchy flour substitutes. Do you know if this is an actual flour or is it a a gum type of stuff? There's no doubt that many, perhaps even most, people will not change their diet and rely on drugs and accept that they're going to cut about 18 years off their life. You need fat, protein and fewer carbs, especially refined carbs. Everyone in my family gets low blood sugar if we eat a lot of starchy/sugary stuff.
