  1. You might have to make your own Hoison sauce, I think all the ones I looked at contained wheat. I just nabbed a recipe off the internet.
  2. You might check into pouch cooking. Bascially you're making a packet and putting in things like meat, veggies, maybe rice noodles, spices and set them into the oven to cook for awhile.     I'm pretty relaxed with the rules, but I do try to keep to paleo foods. The better I do, the better I feel.

  9. They are shifty and underhanded! I think I'm sensitive to peanuts myself. I get loose bowels sometimes after eating peanuts or peanut butter. I think the idea of trying peanuts alone is a good one. If you have to give up the peanuts you could try almond butter. I wish they'd put salt in it though, it always comes unsalted!

  12. Your daughter sounds hypothyroid. Which might also be related to Celiac, since a lot of people with autoimmune thyroid conditions also have gluten intolerance.   14. You should see a rhuematologist. The autoimmune disease I have, Akylosing Spondylitis, shows up in young men very early. It attacks the joints. Although it usually starts in the lower back. Not that he has it, but a rheumy could do the tests.
  15. I wouldn't expect the celiac diagnosis process to change very quickly, if at all. It took 10 years for doctors to change how they treat ulcers after it was found that it was a bacteria causing most ulcers, and that only happened after the NIH got involved in a huge push to reeducate doctors. Its like trying to steer a charging rhinocerous!
