Well you stop being able to absorb nutrients from your food with Celiac, so it probably caused your B12 deficiency. Although some people have pernicious anemia and always have to take B12 supplements or shots. How wonderful that new annoying symptom is gone though! -

Do they even feed pigs wheat? Usually they feed cattle corn. There was an expierment done where they fed cows either corn or wheat and the ones on wheat got really sick. Even corn is pretty unnatural to cows. I've heard that it causes their gut to get unnaturally acidic. If they weren't being fed antibiotics they'd all die from gastrointestinal diseases... -
You just need to practice speaking up. It gets easier the more you do it.

They're starting to use behavior therapy to good effect to counter sleeping problems. I also had that crushing fatigue that felt like hypothyroid and it has mostly lifted after going Gluten free, sticking to a healthy low carb diet (lots of veggies, some fruits, plenty of good protein) and getting off of milk products. The last piece of the puzzle for me seems to be getting some vigorous exercise. I wish you luck! -

You're eating essentially a low carb diet and one thing that happens in the first week is you lose a lot of water weight. All that glycogen (basicaly excess carbs) you were storing bind up a lot of water. Have you noticed you're peeing like a race horse? I saw him in San Diego, not the seminar. I loved his lecture. It was more about the research on celiac and gluten sensitivity he is doing than specifiic dietary recommendations. I differ with him on the dietary recommendations a little. I personally think we need more animal protein than he suggests and I also think eating both cooked and raw foods...

Dr. Fine states that there's only one genetic combination that doesn't seem susceptible to gluten intolerance and that is double DQ4. Some people don't have obvious symptoms that are terrible but the long term damage can happen to almost any organ in the body (See the Gluten File for more info) or it can cause autoimmune diseases. Your daughter can have treats but make them gluten free treats. Chances are you or your daughters father may also have an issue but you don't realize it.... -

Hair loss can be an indication of thyroid disease and guess what? Thyroid autoimmune diseases are often linked to celiac! The other thing that seems to cause hair loss is sudden weight loss. But get your thyroids checked! -

There's always the option of not eating bread, pasta and also not eating processed meats. I find unprocessed meats are delicious. I just process them at home!
