Well... you'll probably need to go easy on whatever you make because MOST (not all) sugar alcohols can cause gas and diarrhea if eaten in sufficient quantity. What happens is that part of the sugar isn't digestible and it goes to the bacteria in your gut which digest it for you, and that causes gas and possibly other effects. Erythritol is the one SA... -
There's a bit link between celiac and thyroid disease (in fact all autoimmune diseases) so it is good you caught this! You might actually go into remission (on the Hashi's) if you're very good about being gluten-free. I've read there's a 30% chance of remission.

I did a bit of a freak out realizing I had to freeze my poop! Then I had to take it to work with me and put it in the freezer until I could get to a DHL drop off location. If your husband doesn't want to get tested, would he just trial the diet for awhile and see if his symptoms improve? That was essentially how I went about it. My IBS disappeared in 2 days. For my neurological stuff it took getting rid of dairy products too although a chunk of it was due to gluten. But some of the digestive issues cleared up very fast. Within 2 days of going gluten-free my crampy diarrhea ended. But other things are still improving and I've been gluten-free for over a year now. Good luck! You might want to try a "paleo... -
I haven't re-tried them again but I was having issues with sunflower seeds. They were coming out of me almost whole. But I think I found a supplement I was taking was giving me issues (Curcumin) and started taking Kefir and things are MUCH better. I should probably try the seeds again.

So sorry about your Father-in-law. But you know, so many people I've talked to, like my sister, that show obvious gluten related problems just reject the information out-of-hand. And even if I did get her to take it seriously, she'd probably be negative on the celiac test and never try the diet anyway. -

I once lived on vegetables, fruits, nuts, seeds, and dried fruit (almost nothing cooked). It was a fad diet my Mom had us on. Anyway, just proves you can live on anything.

celiac disease is much more than just villious atrophy. Those are just the people where the antibodies are attacking in the intestestines. Since it can attack any organ in the body, you might have celiac disease and never have any villious atrophy. -

One problem I forsee for you on a gluten-free diet is the carby gluten free stuff is even more highly refined and much starchier and higher in carbs than what you're replacing. You might want to give an elimination diet a try. The mucus issue sounds like dairy to me. And it isn't just lactose, there are lots of various proteins in dairy that people can have problems with. I'm like you, I wouldn't go back to eating that stuff all the time. It caused other health problems too simply because my diet was too high in carbohydrates. But the pill would be nice for when you go out to eat and need to ensure that you don't get sick from cross contamination.
