  1. The only reason I got tested was so I could have a piece of paper to wave at my family and tell them they probably have it too. It didn't work though. They don't want to go gluten-free.

  7. You have to be careful even of tamari, some of them do have wheat. Check the ingredients, of course! But I use San J.

  9. I made this tonight, without any added flour and starches. It was delicious! I can see why they have you put it in, the meat was pretty greasy and having a lot of grease floating around in your taco shell just isn't pleasant.
  10. Unfortunately for many of us, eating starches like rice and corn causes us to eat too much. It makes your blood sugar high, which causes you to produce a surge of insulin, which then causes your blood sugar to drop quickly and go too low. That stimulates you to eat again. It is a terrible, vicious circle. Not only that, but grains are very addictive....
  11. Mild is bad enough! Basically all my joints hurt at times, tendonitis, TMJ, random muscle spasms. I think sticking to a low-starch, paleo-type of diet is helping. I hope you test out ok! I think finding a good rheumy is very important.
  12. Gotta say I agree with Ursula. If your symptoms don't resolve goign gluten free you can pursue more testing, but it kind of sounds like they do.
  13. It's fat basically. If I recall my Alton Brown lessons correctly, it "shortens" the strands of proteins (usually gluten) that get twisted together that keep baked goods from falling apart. So it makes baked goods tender.
  14. Rachel beat me to it. My hands shook so hard with Graves disease I couldn't eat soup. Another thought is low blood sugar. Cutting down on carbs increasing fat and protein should help with that. You might want to look up the symptoms of hyperthyroidism and see if you have any other symptoms.
  15. I try to avoid all grains. I can't think what the flour would add taste-wise. Texturewise it probably makes the meat less greasy.
  16. Liver problems can definitely cause nausea. Not sure about the fever though.
  17. I also had a positive ANA (Slightly speckled). But the follow up test (anti-DS? forget the name) was negative. They diagnosed me with ankylosing spondylitis, an autoimmune arthritis that causes tendons to fuse together. I have it very mildly though.

  24. I hope that was a long, long time ago because that isn't how ulcers are treated these days. They're usually caused by a bacteria and the treatment should be antibiotics. It might be worthwhile to seek treatment again. I'm not sure how Enterolab deals with it, but you might have an IGa deficiency, in which case those could all be false negatives. ...
