ARCHIVED 3 Random Gluten Questions
VegasCeliacBuckeye replied to Corkdarrr's topic in Gluten-Free Foods, Products, Shopping & Medications
Non-celiac gluten sensitivity has only recently been given any medial acceptance. It is not as well researched as Celiac (which still needs a ton more research), but doctors are being to understand that NCGS has varying levels (some severe, some very slight). In any event, it is best for your body to 100% avoid gluten. -
ARCHIVED Cure: Homeopathy?
VegasCeliacBuckeye replied to majicbunnies's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
FYI, Homeopathic remedies are notorious for being able to assist with the relief of symptoms, but not the underlying cause. In this sense, they are extremely dangerous and the people who advocate their use are often truly ignorant of Celiac Disease. (They attempt to treat it as an "allergy", not what it actually is) -

ARCHIVED Really Gluten Free?
VegasCeliacBuckeye replied to KristiAnne's topic in Gluten-Free Foods, Products, Shopping & Medications
Yeast is added to flours to allow the bread to rise. Essentially, yeast is a bacteria that converts starches and carbohydrates to alcohol or carbon dioxide or both. Hence, once you introduce it to bread making ingredients, it converts some of the starch into gases which are trapped within the bread and allow the bread to "rise". Similarly, when sugars... -

Just to chime in, when you order vegetables at a restaurant, make sure your order them "STEAMED AND UNSEASONED". this will ensure freshness and less of a chance for Cross contamination. -

ARCHIVED Amy's Labeling Change "no Gluten Ingredients"
VegasCeliacBuckeye replied to a topic in Gluten-Free Foods, Products, Shopping & Medications
I love her Mac N Cheese, Thai Asian Stir Fry and the rice bowls. It seems to me that her statement as "no gluten ingredients" would be more technically correct than "Gluten free" well, maybe the logan should be "no intended gluten ingredients.." In any event, the mac n cheese is a staple of my diet and someone would only be able to pry it from "my... -

ARCHIVED I Need A Drink
VegasCeliacBuckeye replied to fanny's topic in Gluten-Free Foods, Products, Shopping & Medications
Most liquor is distilled liquor (vodka, gin, rum, whiskey, tequila, etc) I usually stay with the "clear" liquors. I like vodka so I drink pretty much all of them. Some people are still sensitive to ones made from grain, so they usually drink Smirnoff (made from corn) or potato vodkas (chopin, blue ice, glacier bay, llelowosa). Get a screwdriver... -
On a side note, I just saw Pearl Jam last night at the MGM Grand Arena. Eddie was hammered, but performed for almost 2.5 hours straight. The arena went crazy when they played "Betterman", "Alive", "Black" and "Daughter"... Darn good show!!!

ARCHIVED What Is With The Pricks Of The Food Industry
VegasCeliacBuckeye replied to mark91's topic in Introduce Yourself / Share Stuff
Marcus, The best lesson you can take out of this is realizing that you need to be vigilant about celiac disease. Other people (most people) are ignorant of celiac disease and they need to be taught. Very few people understand celiac disease (including doctors -- if most of them don't get it, how is the kid at McD's going to???), so when you run into... -
1. Gluten Free Lettuce Wraps --- be careful with this dish because it is easily mixes up with the regular lettuce wraps. Whenever I order it, I have them put the rice noodles on the side (that way they know which one is mine) 2. Chang's chicken -- its great, but inconsistently spicy -- I wish it was spicy all the time, but sometimes the spice sorta falls...

As much as I love to cook, I am still a creature of habit. I usually have an egg white omelette in the a.m. with salsa and cheese (or gluten-free cereal with bananas and berries) For snacks during the day, I have yogurt and gluten-free energy bars (glutino) For lunch, I usually have turkey and pepperjack sandwiches (with lettuce and mayo) (and kinnikinnick... -

ARCHIVED What Questions Do You Ask At A Restaurant?
VegasCeliacBuckeye replied to wozzy's topic in Gluten-Free Restaurants
The first question you should ask should be directed to the hostess. It is: "On you way back to the hostess stand, can you ask your manager to come to the table?" I am dead serious. Putting your faith in some 20 year old who is likely working there to get beer money is pretty risky to me (Disclaimer -- I worked as a waiter for 9+ years -- this... -
