ARCHIVED Semi Productive Doctocter Conversation
tarnalberry replied to Lister's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
The problem is, if you haven't been eating dairy, even if you've healed, you're not producing lactase, 'cause your body doesn't need it. So, just eating a bunch of dairy right now, even if you're not normally lactose intolerant, will give you lactose intolerance symtpoms. You have to give your body time to get back into 'production mode', so don't eat a... -

ARCHIVED Gluten-free Migraines
tarnalberry replied to GlutenWrangler's topic in Coping with Celiac Disease
The produce section is filled with fruits and vegetables, many of which don't even need to be cooked, that you don't have to give a second thought to their gluten status or contamination. -
ARCHIVED As Promised, A Few Recipes
tarnalberry replied to tarnalberry's topic in Gluten-Free Recipes & Cooking Tips
The dried spices I use are either McCormick's or Spice Hunter. I use Lea & Perrin's Worchestershire Sauce (US), and San-J Wheat Free Tamari. I don't remember the brand of liquid smoke I've used, but it was gluten-free. -
ARCHIVED Old Friend Said We Can't Come Over
tarnalberry replied to mart's topic in Coping with Celiac Disease
You're right; I'm shocked. That is amazingly callous. And, while I hate to judge, especially off of one experience, the tough times - and their reactions to you following through - mark your friends, and she failed miserably. I have not had *ONE* friend stop inviting us over. I have had a number say "I don't know what to serve you" and when I tell... -
ARCHIVED As Promised, A Few Recipes
tarnalberry replied to tarnalberry's topic in Gluten-Free Recipes & Cooking Tips
Yep, that's what I use. Someone (Annie's?) makes an organic, gluten-free worchester sauce as well, though I don't think it tastes as good. Growing up, we had an electric slicer; I should get one of my own. :-) Yeah, I hope to work on some additional recipes. This is a very classic, standard, and salty recipe, but I've come to appreciate the sweeter... -
ARCHIVED Splenda
tarnalberry replied to lemonade's topic in Gluten-Free Foods, Products, Shopping & Medications
If you want to make green tea, you may not even need any sugar if you don't overbrew it. Use water that's around 190F, and only brew for about 2 minutes. Do NOT brew longer, or you will start extracting the bitter tannins, and it will be bitter! Of course, the higher quality green tea you use, the better tasting it will be, but when you start paying $... -
ARCHIVED Gain Weight On Gluten-free Foods? Is This Possible?
tarnalberry replied to blondeambition's topic in Related Issues & Disorders
Eat more calories than you expend, and you'll gain weight. It doesn't just have to be ice cream, avocados, nuts, and oils, though those have a high calorie density. Rice, beans, eggs, meat, dairy (if you can have it), fruits, and vegetables all help. -
ARCHIVED Help! I Am New To This And Glutened Myself.
tarnalberry replied to jabberwife's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If it makes you feel any better, I've been doing this for almost three years, and go glutened yesterday. I tend to get plenty of sleep, plenty of water, and plenty of *healthy* food that I KNOW is safe because I cooked it myself. -
ARCHIVED Old Friend Said We Can't Come Over
tarnalberry replied to mart's topic in Coping with Celiac Disease
With my food issues, friends who are overweight, odd schedules, a desire to not be cooped up in good weather (now that summer's here) and everything else life throws at us, I make it a point to try to do stuff that does NOT involve food at least half the time I'm planning things. (Ironically, my plans tonight involve teaching someone (who's not gluten-free... -
ARCHIVED Remission And Return Of Celiac Disease?
tarnalberry replied to blondeambition's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
yep, celiac disease is not one of the autoimmune diseases that goes into remission. what happened is that you no longer had obvious GI symptoms. damage was still being done to your intestines, but you were asymptomatic (this happens to many people and is one of the reasons the disease is so underdiagnosed). the lack of symptoms while damage is occuring... -
ARCHIVED In Need Of A gluten-free Laxative
tarnalberry replied to sparkles's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Ditto on the magnesium. Start with a small dose and work your way up to what works for you. -
I'm in the area, but do not have a GI, so I'm afraid I can't suggest anyone. I was dx'ed by my PCP down in SoCal based on inconclusive blood tests after two weeks gluten free and a positive response to the diet and a negative response to a gluten challenge after being gluten free for a few months. All further followup has been with my PCP, but I'm a fairly...

ARCHIVED Old Friend Said We Can't Come Over
tarnalberry replied to mart's topic in Coping with Celiac Disease
I would encourage you to talk to her, from the perspective of: "I know that you don't know how to accomodate my diet, and that's ok. But it hurts that you exclude me from your life, just because of food. I can eat before I come over, I can bring my own food, I can help you find recipes that are safe for me, and above all, I won't get mad at you if I get... -
ARCHIVED Gluten-free Migraines
tarnalberry replied to GlutenWrangler's topic in Coping with Celiac Disease
dairy definitely caused some headaches (not migraines) for me, and it helped to entirely eliminate dairy for me. (my migraines came after eliminating dairy, and do not appear to be food related.) -
ARCHIVED Anyone Recommend A Good Tomato Sauce?
tarnalberry replied to Clark Bent as Stupor-Man's topic in Gluten-Free Foods, Products, Shopping & Medications
While they're all recipes, I did add three recipes for tomato sauces (one with meat) to my "As Promised, A Few Recipes" thread. -
ARCHIVED Gluten Free Oats Are Here!
tarnalberry replied to SofiEmiMom's topic in Gluten-Free Foods, Products, Shopping & Medications
I'm so very very torn on the issue. I love the taste of oats. Really do. Maybe I was a horse in a past life; I don't know. And I know that I have a 90% chance of not reacting. (Eh... approximately. 90% or so of celiacs don't react, anyway.) But do I want to take the chance? If my reactions were more obvious, it'd be easier to say "yes, I can test... -
ARCHIVED As Promised, A Few Recipes
tarnalberry replied to tarnalberry's topic in Gluten-Free Recipes & Cooking Tips
I'll bet you knew I was going to say this, but there is no right answer. Well, there is one definitive answer in all of that: **always peel the tomatoes before using in a sauce, unless you're not cooking them at all** Other than that, tomatoes work a lot like apples when making apple sauce - they'll cook down on their own if you let them, but you don... -
ARCHIVED Gluten-free Migraines
tarnalberry replied to GlutenWrangler's topic in Coping with Celiac Disease
I developed migraines after going gluten free. I get them without having been glutened. Sometimes gluten-free status makes a difference, sometimes not. -

ARCHIVED Why Are Friends, Family And Others So Uncomfortable W/gluten Restriction?
tarnalberry replied to Sarah8793's topic in Coping with Celiac Disease
So here's a question - why should someone be offended when you don't eat their food that will make you sick? Shouldn't you be offended that you are being expected to injure yourself? I think people are uncomfortable because they are ignorant. And things people don't know scare them. Even your dietician friend doesn't know how to live with celiac disease... -
BMI is not accurate for the very athletic, and is only an approximation, but 105lbs at 5'7" IS definitely underweight. If you're concerned (and there could be good reason - being underweight brings its own health issues), you should talk to your doctor about finding what *your* idea weight is. While it is almost certainly higher than 105lbs, and is likely...

ARCHIVED As Promised, A Few Recipes
tarnalberry replied to tarnalberry's topic in Gluten-Free Recipes & Cooking Tips
'regular' pasta sauce?! hehehe... all these recipes aren't recipes that I cook from, they come from me making something from whatever's in the kitchen (or in my brain), and saying "oh, that turned out well, I'll post the ingredients I used". so I really don't have a 'regular' pasta sauce. I have, like... five, or six, or seven fairly standard 'ideas' I... -

their recipes for raw foods - foods that don't get cooked. google "raw recipes" and you'll find a bunch. since it's food that never gets heated or cooked, there's pretty much never any dairy in any of the foods. ever. so there's usually substitutes using raw nuts that get ground up with water. the recipes aren't always easy, sometimes require a variety...
