It's just something that some people react to. You can develop a reaction to it at any time - like any other sensitivity. (BTW, I've heard that organic wines are better, sulfite wise. I don't drink wine, and am not sulfite sensitve, so don't know personally, just from friends who are sensitive.) -

HFCS does not contain gluten, but some people react badly to it. It can be particularly problematic for people with blood sugar control issues. -

My advice is to be *truely* gluten free (no hidden gluten in things like soy sauce, no contaminatino from croutons or shared toasters) for a month, then do a challenge by eating plenty of gluten (I suggest bagels, as they are made from high-gluten flours) if you are uncertain after that month. Yes, it is gluten free, and has never given me a problem. It could be something else, but you can try eliminating it and see if that makes a difference. -
See if any of the yoga studios (or community centers or teachers who teach out of their homes) have a "karmic yoga" program, or something of the kind. Many places will trade work in the studio for free classes - usually it's something like helping register students before class and cleaning up after class.

Lots of very very low intensity exercise? I mean, like one to two hour extremely leisurely strolls (2mph sort of thing). I haven't liked most of the amaranth products I've had, though I enjoy the taste of the flour when used appropriately in a mix, but I like the whole grain. The stuff in cereals and crackers... eh... they do something nasty to it. -

I don't think there is ONE mix. It depends on your tastes and what you're making. I prefer a different mix for different things. I use the Namaste mix for pancakes, because it's the only one my non-gluten-free husband doesn't find ... not-so-good. :-) I make my own mixes for muffins and quick breads and cookies that vary depending on the muffin, quickbread... -

Depends on the kind of fat. Fried foods do not sit well with my digestive system. Nuts, avocados, and unrefined oils not exposed to very high heat, however, I'm fine with. As always, listening to your body is a good thing. :-) -

A good number of my recipes in the recipe section,, the "As Promised, A Few Recipes" thread are corn, soy, and dairy free. (I am Gluten-free Casein-free, minimize soy, and just plain ol' don't cook with corn very often.)

The stuff you list, avoiding things produced on shared lines, avoiding eating out altogether, and so on - those are the truely sticky spots, and come down to a personal decision. DH isn't caused by gluten in the skin, but by IgA deposits in the skin. To my knowledge, they cannot be sweated out. Maintaining a gluten-free diet, making sure to use gluten-free skin products, and eliminating iodine until the DH has passed are the methods I know of for eliminating DH as quickly as possible.

I use McCormick's or Spice Hunter, but that's just my preference. The liquid smoke I've always gotten (and is gluten-free - haven't seen one that isn't) doesn't need to be refrigerated, but I haven't made jerky in a while... :-) Cooking gluten-free, even from safe foods, doesn't have to be plain, you just need pleny of fresh foods.
