Spelt is not gluten free. It is closely enough related that the very similar amino acid sequences in the proteins are very likely to cause damage. -
I often use it, but it does have a unique taste, and generally use it as part of a mix.

I also disagree with stopping the gluten. No one knows how fast your system will heal, how much damage your GI wants to see on the slides to count as celiac disease, and how many biopsies he'll actually take when he's in there. You can definitely react to elements in a vaccine - that's why you're not supposed to get a flu shot if you have an egg allergy. (It's "grown" in eggs.) Buckwheat does not contain an offending gluten (it's actually a fruit) but you can still be allergic to it or intolerant of it. Try eliminating it, then testing with JUST buckwheat to see how you respond? -
Based on that study synposis, I'm taking a guess that we're at least 10 years away from production - IFF a company decides to go to production with it. They need to do further animal studies, human safety studies, human efficacy studies, and get it past the FDA - all assuming there's a manufacturer who wants to make it.

I've put a bunch of Open Original Shared Link that are gluten-free (and mostly CF) that are often fairly fast. It mostly boils down to broiling (particularly fish), stir fries, soups, and stews. If you're proficient with chopping, that can mean 1 hour for prep, cooking, eating, and cleaning. -

During the holidays, when I do some baking, then yes, I do see my grocery bill go up, but other than that, I pretty much stick to naturally gluten-free foods (so I do soups, chili, stir-fries, stew, veggies, baked items, etc.) and they don't need to be any more expensive ('cause they're not specialty foods!). :-) Depends on your cooking style, of course... -

Another reason to go natural foods. I've yet to see a "manufactuered food list" that's of soy free foods, unfortunately. I think it means just reading labels very closely. (BTW, you can get plain water pack tuna - meaning tuna and water, not broth - if you look around for it.)

To a point. It would be nice if they knew, but they can't keep up with every last drug change. Ultimately, yes, YOU are responsible for identifying what you are consuming, but you asking was a good idea, and asking them to check on meds for you is also reasonable. (It's unreasonable to expect they can always do the work for you, though.) Just my opinion... -

Eating after a sugar crash for a hypoglycemic is different than eatting after a crash for a diabetic. Part of the reason is that, with hypoglycemia that is NOT caused by a treated diabetic condition, the body is naturally producing too much insulin anyway. I can only echo what Richard said. Are you sure the cereal you at had no rye, barley, oats, or other ingredient which contains gluten? (I haven't found many that don't.) As for the sushi... did the California roll have imitation crab, as is often used? If so, it almost certainly contained gluten... -
stargirl, perhaps sticking to whole foods that are naturally gluten-free will help keep you from getting sick and still get plenty of nourishment: nuts still in the shell (so you can rinse and shell them) fruits/vegetables meats rice/beans (again, rinse if need be)

I make most things from scratch, but not pasta. I'm a self-proclaimed food nazi, and prefer to make food the way I want it made. I did that before going gluten-free as well, though. :-) Works great for me, and no, I don't spend hours a day cooking. :-D -

I just say that I'm gluten intolerant. I don't try to claim the celiac label myself, since I haven't had a biopsy, but say "It makes me sick." I'll mention damaging the intestines and digestive tract "issues" if they ask further, and if they're still inquisitive, I'll go into it further.
