Health Valley makes gluten-free corn crunch-em and rice crunch-ems that are a one-to-one substitute for chex, if that would help. -
As has been discussed many times, while the gravy packet is not gluten-free, the turkey itself must list any nutrition-carrying ingredient such as wheat. Additionally, I have called Butterball when on a business trip, and they confirmed that their poultry (plain, of course) is gluten-free. Not all modified food starch contains gluten.

Deb, before the law passed, the CSA had a statement on their webpage that said they didn't support the bill because it was focused on labeling allergens, and requiring a gluten-free definition (one that manufacturers can test to) fairly late. The main problem here is that the bill doesn't require the labeling of *gluten* but the labeling of the eight common... -

I go with soy milk - my preference being unsweetened Silk, but everyone's tastes are different. You can also try rice milk (not Rice Dream, it's not gluten-free), almond milk, or DariFree (based on potatoes). -
I posted my rice stuffing recipe under "Thanksgiving and Christmas Dinner Menu" in the cooking section. Healthier than bread-stuffing too! ;-) (Brown and wild rice with lots of veggies.)

The recipe for banana muffins on the quinoa flakes box is quite good - I've made it a number of times. Light muffins, but tasty (and freeze fairly well). -

To top it off, a study put out a few weeks ago shows that McCann's is sometimes also contaminated - over the 200ppm level allowed by the old CODEX standard. -

I called Butterball a while ago while out of town, and the noted that the will ALWAYS label any allergen in their products. Additionally, the reason Richard says it will be labeled is because the USDA requires meat producers to use those labels. Check the labels, but aside from things that are half fake or wacky, I've never seen a cheese with gluten. Kraft labels their products, so I'd probably stick with them for the shredded stuff (on general principle), but just check the labels. Cottage cheese and ricotta should not contain any potentially gluten containing ingredients if they're of decent... -

as for natural foods - quinoa and rice bran (which together make a good hot cereal) have a lot of fiber. (intersetingly enough, using a serving a soy milk with that gives you even more fiber.) It's not an onsite bakery, but it is a bakery owned and run by Whole Foods. They only distrubute to their east coast stores (and not even all states along the east coast), but - per an email response - are looking into setting up such a bakery out on the West Coast as well. Assuming that you're doing all the rest of the "right stuff" (like getting 35g of fiber a day or so, drinking plenty of water, getting plenty of exercise (helps the bowels move), and all that), then perhaps there is something else that is bothering your system? There isn't a "normal celiac range". If you're above the cutoff, you're positive. I don't see, based on those numbers, any reason to think she's NOT gluten intolerant. Unfortunately, despite whatever symptoms she may experience, you do NOT grow out of gluten-intolerance. If she eats gluten again, she'll do some damage to her intestines. (Of course, accidents... -
Going Gluten-free Casein-free takes some doing, but it doesn't have to be that hard. Take a look around the GFCFdiet.com site, and generally google around for some tips. It's not an uncommon diet, and there are a couple yahoo groups that you may find helpful as well. (I've been gluten-free for ~15 months, and Gluten-free Casein-free for ~4 months.)

Celiac can almost be ruled out by a blood test, but not an iron count. There are specific blood tests for celiac disease, but there are some false negatives amongst those. (And a lot more that are incorrectly read...) You might consider asking for the full celiac blood panel, or finding a doctor better suited for addressing your problems. Do continue... -
You can use a lot of different things for making gravy - arrowroot, corstarch, rice flour... I wouldn't go with potato flour, but many of the other ones work just fine.

I'm sorry you're having that difficulty. I guess they don't really need to understand, just accept. But if they can't even do that... then really, what are they doing?

It also does get somewhat easier with time. It may never go away, but you'll find other things you like so much, and you'll forget _exactly_ what those things tasted like. (You'll probably always remember something close, though. ;-) )
