  6. No, there are varying amounts of fat, fiber, and protein in different grains, and hence in different flours. Check the label on the flour packages for each particular grain's information.

Yep, I made the whole meal gluten-free/CF/VLF (that last one is VLF), and while it was tricky and my husband still can't stand the aftertaste of gluten-free flours (hence he didn't like the pie), it was considered tasty by everyone.
