ARCHIVED Corned Beef And Cabbage?
par18 replied to GlutenFreeAl's topic in Gluten-Free Recipes & Cooking Tips
I do the same. First I put the cabbage, potatos, and carrots on the bottom. After adding a little water for the veggies, I then place the brisket on top and sprinkle the enclosed spice packet on the brisket. I cook low for 6-8 hours. The juice from the brisket flavors the veggies. Tom -
ARCHIVED Grits
par18 replied to skinnyminny's topic in Gluten-Free Foods, Products, Shopping & Medications
I ate a lot of grits when I started gluten-free diet 11 months ago. The brand I had was Quaker Quick Grits. I did not have a problem then and as matter of fact I had some this morning for the first time in a couple of months. Once again everything seems ok. I don't know if I'm not very sensitive but I definitely have celiac disease. I would say they were... -
My family doctor said he only had two cases in his career. Mine which had the classic symptoms (diarrhea, malabsorption, weight loss)and one other in which the only symptom was anemia. Have you tried a gluten free diet? If so for how long? It was my experience that once I started the diet my symptoms improved immediately. Since the only treatment is the diet...

ARCHIVED Has Anyone Done The Gluten Challenge?
par18 replied to cgilsing's topic in Coping with Celiac Disease
That should not be a problem. In the support group I'm in there are 140 members. One of these people is a former co-worker of mine. He was suggested by his family doctor 30 yrs ago to eliminate gluten from his diet. It worked and he has never looked back. It just so happened after he retired that I got symptoms and had a positive biopsy. I had not seen him... -
Hi Kim I understand where you are coming from. I was there about 11 months ago. I was approx 30 lbs underweight when Dx'd in May 2005. At first I was scared and not hungry. A visit to an RD set me up on a diet of mostly naturally gluten free foods. In the beginning I was eating almost 3000 calories a day. This consisted of 3 meals and 2 snacks a day. It...

ARCHIVED Help! Cornmeal!
par18 replied to penguin's topic in Gluten-Free Foods, Products, Shopping & Medications
I have used two kinds of Goya corn meal. One is fine ground and the other is extra fine (almost like corn flower). I have had no problems with either. I have called Goya before and got an answer about their canned kidney beans which were also ok. Let me say I have not been accidentally glutened since I started this diet almost 11 months ago. I have either... -
I usually get steamed chicken or shrimp and veggies. I take a small bottle of La Choy soy sauce with me and no longer use the dining cards at this particular resturant as they know me. I get the stamed rice and have not had a problem in the half dozen or so trips with eat in / take out. Tom

Mother (Swedish) Father (German) Have found no one else on either side of family tree with celiac disease. I suspect someone else may have symptoms but no one is talking. All I can do is make them aware that it exists and let it go. Tom

No and I really haven't felt tempted. I still miss the occasional beer but will live without until a good gluten-free one becomes available.

ARCHIVED Gluten Intolerant Or Not Gluten Intolerant - That Is The Question.
par18 replied to Amzippity's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hello again, My intent is not to offend anyone. The comment about lactose intolerant I feel is right on. The tips of the villi are the first to go. I don't have a problem with lactose. When first diagnosed I abstained from dairy for the first two weeks on the diet. After that I drank milk with no problem. With so many things that can cause one distress... -
ARCHIVED Gluten Intolerant Or Not Gluten Intolerant - That Is The Question.

I have eaten a couple of times at one of the local Chinese resturants. The next to last time I brought my own soy sauce (La Choy). When I left I forgot to take it with me. On my last visit I stopped on the way and got a new bottle. When my waitress came back with our beverage order she had the bottle I had left on my previous visit. I thought it was wonderful...

ARCHIVED Gluten Intolerant Or Not Gluten Intolerant - That Is The Question.
par18 replied to Amzippity's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Good Morning, Just finished reading your post. I have a question for you. If you think you may be gluten intolerant or may have celiac disease or just feel bad when you eat certain things do you think the treatment would be different for any of the three? Would you feel better hearing some diagnosis from a doctor? It is my feeling after having been dx... -
ARCHIVED Any Athletes Out There Who Had To Completely Stop Being Active
par18 replied to lemonade's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Your situation was very similiar to mine. When diagnosed nine months ago I was about 30 lbs underweight and very weak. I spent the first 6 weeks gaining back some weight ( 10 lbs) just so I could be active again. I did not try to do too much too fast. I am a very avid golfer and missed the game very much. After 6 weeks on diet I started riding nine holes... -
ARCHIVED Regular Grocery Store Alternatives
par18 replied to T. Willick's topic in Gluten-Free Foods, Products, Shopping & Medications
I use Quaker "quick" grits. Cooks in 5 minutes. "My Cousin Vinny" may refer to them as "magic" grits. Anyway they seem to be ok as I have had them numerous times on the diet. My question to nini is how do you prepare the corn tortillas? Do you use them as "wraps"? Tom -
ARCHIVED New Here -diet Question
par18 replied to SusanRachel's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes I think you don't have enough "miserable symptoms" to be committed to this lifestyle. I went years with minor symptoms and did not even know what Celiac disease was or that this message board was available. If you choose to wait until you really get sick (if in fact you do have celiac disease), I'm sure you won't have any question about which path you... -
ARCHIVED Dreaming About Eating Bread?
par18 replied to carriecraig's topic in Related Issues & Disorders
I don't recall dreaming about eating gluten. Then I read these posts 2 days ago. I had a dream last night where I ate 4 1/2 slices of bread. I say 4 and 1/2 because I woke up in the middle of the last slice. This is probably the strangest thing that has happened to me nine months into the diet. The only other thing that I did was lick an envelope (not in... -

ARCHIVED Help, I Need Answers And I'm Scared
par18 replied to honedo's topic in Coping with Celiac Disease
Kirsten, I understand your concern. The thing that helped me the most in the beginning of this diet was to develop a plan. I tried to get a certain amount of naturally gluten free foods and stick to them for at least a couple of weeks to see how I responded. Although it seemed like I was eating a lot of the same things for breakfast and lunch, the intent... -
Family doc treated me for IBS symptoms for a couple of weeks in mid April 2005 following bout with flu. Sent me to GI in late April 2005. GI had 3 tests run the two days after initial visit. (CT scan, upper and lower scope). Found sprue on upper scope and notified me via phone after only 5 days. Diagnosed on May 03,2005. Went on diet that day. Everything...

ARCHIVED I'm Afraid My Kitchen Will Be Toxic
par18 replied to chrissy's topic in Parents, Friends and Loved Ones of Celiacs
Chrissy, I understand your concern. In my situation it is just my wife and myself. We made the decision in May after my Dx to try to make the kitchen as gluten-free as possible. Even though she still has a few items with gluten for the most part we eat the same things. As a matter of fact even though I am the one with celiac disease she is starting to...
