Hi Carol, and welcome to our board. While I agree with everything that has been said, I want to add that being gluten free involves more than just eating gluten free food. I agree with the cranberry juice (and take cranberry pills as well). Also, take pro-biotics (acidophilus), my homeopath says that they are very helpful to get rid of bladder infections. I'd never have thought of that myself! -

I just read (I believe in Dr. Green's book) that they tested how long the effects are visible from a glutening, and I believe it said three weeks. Still, it isn't a good idea, of course. And as for the elevated cancer risk for celiacs, it takes five years on a strict gluten free diet for our risk to be average (as in non-celiacs). So, you never want to do... -
Megan, if it makes you THAT sick, that should be all the evidence needed! You obviously can't tolerate gluten at all. Do you really need an 'official' diagnosis from a dumb doctor? Is it really worth it?

Nicole, it can be hard at the beginning. What is done is done, no point in berating yourself for a weak moment (okay a few week moments). Just start over, and make sure you have some nice treats around for yourself for next time you get tempted. Stephanie, if you have been gluten free for two years, it could possibly be at least a year of eating gluten for enough damage to show up again for a positive test result. Debbiewill, you make a good point here. I believe that you likely were intolerant all along to a food you can't tolerate any more after not having it for a while. That goes for the cheese, Monica (you are likely casein intolerant), or the breads (gluten intolerant all along without knowing). If it makes you feel bad in any way when you eat it, cut it out... -
Personally, if we would have a toaster oven (and if I could eat gluten-free bread, which I can't, since I can't tolerate any grain at all), I would just get a new, cheap toaster (okay, I did, it just sits there now ). Because for me, I would find it a lot of hassle to constantly have to put foil in whenever I would use it, and would probably forget at times...

Saturated fat isn't bad. The only really bad fat is hydrogenated fat and trans fats. Real butter is healthy, lard is healthy. A lot of oils that are claimed to be healthy are not. I know you are not. But it would be better for you to substitute sugar for the Splenda (while sugar isn't good for you, its better than Splenda), real butter, regular cream cheese and regular cottage cheese, then I have no problem with those recipes, they look like nice treats. -
