With me an accidental gluten poisoning makes me gain weight. My other problem is the thyroid and it is not helping my weight go down at all. In the beginning my weight dropped but the thyroid is holding it back.

I suggest we all go and see the head of your school and flog the tar out of him. Tell him that his causing you stress is not good for your disease and will only make y6ou miss more.

Much better tasting than soy milk is almond mild. In my opinion anyway. Then I am not a milk fan never was, just on my cereal and even then I had to make sure I could not taste it. As a kid milk made me choke and sick and I was forced to drink the vulgar stuff.
Now looking back my younger sister had the same problem and none of my family can have milk.

I'm in Edmonton and my dr. is Dr. Richard Fedorak who I know is really well known in the gastrointestinal field so I am thankful that I am in good hands.
Ohhh, I hope the lactose intolerance goes away though!

I have yet to have mine leave. Mine is a dairy thing, my whole family has a dairy thing. I sometimes do eat the dairy (bad me) but mostly I eat goat cheese then I don't suffer. I would sugges joining your local Celiac Chapter. They will give you a ton of great info.

Welcome Lynda, where are you in Alberta? I am in Calgary. I would say you have your diagnosis with the flat villi. The flu that is going around is not helping us as I have had it for about a week the first day I vominted and the big D for 15 hours straight, every fifteen minutes.
Many times bloodwork will show negative and even sometimes biopsies will too. With bloodwork you need to eat gluten everyday and even then it can still show a false negative. The flat villi shows the Celiac. The thing is with reading biopsies it depends who the doctor is and what the doctor is who is reading it that week or month. If the doctor is not a doctor versed in Celiac then they will not see it as that. This was explained to us at the Celiac conference here in October, he was one of the specialists there.

I hate to say this but I am sure if we all live long enough we will all die of some sort of cancer or auto accident. So far everything we eat, breath, touch or slather on our bodies seems to cause cancer. The doctors give an FDA approved drug out and a year later you grow horns, cloven hoofs, impregnated by consuming watermelons and licking light bulbs with give warts along with cancer.
What is safe? Nothing is really safe because even staying in your house the furnace can go screwy and posion you. So, maybe Soy causes cancer and maybe it doesn't, they still can't make up their minds on wine and eggs.

Sol burgers are terrific and they are wheat/gluten-free and come in everything from Tex Mex to about three other varieties.

Usually fads hit up here a few months later than down there. Weee I am now part of the "in" crowd. I never was before. In some ways this would invalidate us but if it can get more glute-free food out there for us then all the better.

My blood work was negative but then I was gluten-free when they took it which of course it would show negative. Many times you get a false negative with blood work.

in Canada you have to be diagnosed by a doctor. Then it is a lot of figuring and hoop jumping as a medical expense.

I talked to Tim Hortons. All drinks, including hot chocolate, all yogurt, chili and turkey and wild rice soups are gluten-free. Now I have had the chili and the soup it is excellent and I did not get poisoned. However, one has to be aware that the building is full of gluten so you could get some in it by accident.

Saying all Celiacs can't have soy is like saying all Celiacs can't have dairy, or all Celiacs have the same symptoms. Which we know these statements would be untrue.
In my family so far I am the only positive tester for Celiac but the whole family can not have dairy and we can not have Casein. Not all Celiacs have the same symptoms exactly as any other one.
Let us all remember some doctors have no clue really and their information they get on various things changes also. Today she may get something that says that or she interprets as it saying all Celiacs can't have soy. In three months from now she may get something that says all Celiacs can have soy but not corn gluten. The whole medical profession, medications and treatments is one snafu after another.

So gluten doesn't have to be listed in Canada?
I asked abou the CYA because another poster said that's what she got from the company.

Not yet, they are getting around to it...ever so slowly. I wish they would put a move on getting full discloser on packaging sooner.

I went to the store and forgot my potatoes, of course there was nothing saying they were gluten-free on the bag...whatever will I do.

I'm curious if Black Diamond said their cheese does have gluten, or was it just the CYA, "we won't guarantee." I ask because I just looked at their web site and didn't find a cheese with gluten in the ingredients. And the shredded cheeses use cellulose for anti-caking.

No, Black Diamond said their cheeses contain gluten. If they would have said they would not guarantee that they contained no gluten, I would have said that instead.

Jerry, if you really do have Celiac then there are chances your children may also have it. This is more than just "dad with the runs" it is life or death. If they want you to die because they can't give up wheat then they are selfish. We have rice pastas that replace the wheat things and bread well there are some not bad ones out there and there are gluten-free pizza's so, it won't kill them to change over, but it could kill you not to.

From what others have told me some people it has taken three weeks, I hope not that long. I have some added stress with my psychotic landlord also which is not helping.

Chili prep time from scratch is maybe 15 min and if you have a slow cooker you put it all in and it cooks while you are at work. What I put in chili is this:
Green, red, and yellow peppers.
Onions,
Mushrooms, lots of garlic
Fresh tomato wedges
If I want meat I use chicken or turkey, I put it in the bottom of the cooker with everything else on top.
Kidney beans or black beans, maybe both.
tomato sauce and paste
Chili pepper and a bit of cayanne pepper and whatever else I want and voila, I let it cook.
See how hard that isn't?

Well Shirley, I can't afford organic monetarily speaking but physically I have to sobe it. You are lucky, you have fruit trees and stuff like that. I need to live in Jamaica or the Bahama's with Johnny Depp, they have real fruit trees, unsprayed and they taste like fruit. Not like the crap you find in Safeway.
For all the American's I am so jealous you have Trader Joes.

I reserve my allergy definition for restaurants and people I don't have time to tell a long story to. Also to the ones who I know are not genuinely interested but that really have to know I will sit and explain the disease to them. The rest know what it is by definition but can't get their head around it.
However, to start with saying it is an allergy is good till you can get them into the right mode.

Well, that must mean I need a month's worth of stomach flu...oh horrible!
Johnny and I had a great time except the cracken got him but I will save him when I feel better. I know I can con Davey Jones. Right now my stomach once again feels like it is out in the ocean during a hurricane.

If I waited for everything up here to say"wheat/gluten-free" I would not be eating and that includes potatoes and rice noodles.
First of all for Canadians you should know Black Diamond Cheeses do contain gluten as I talked to the company. I stick with Kraft because they list everything. As for fruits and vegetables they wax and crap they spray on them has been reported as containing gluten.
As I am paying a fortune for my food as it is I decided to continue with the trend and buy organic for health's sake. They taste better also organic and when I can I buy fresh from the organic growers.
