  1. Ok--we will see how they turn out. The dough is chilling right now. I'm not much of a baker to start with so we will see. I'm going to bake these today, made a small batch, to see how they turn out.
  2. Have you been diagnosed with Celiac for sure? Any chance you are pregnant? I think it's time to go to the dr for some testing. If you want to be tested for Celiac you need to start eating gluten again though. I would also suggest getting tested for diabetes and eosinophilic esophagitis.

    ARCHIVED Brain Fog

    Now that the brain fog is mostly gone, it was one of the things I noticed went away going gluten-free. It was bad but I just wrote it off to getting older. I've had a couple accidental glutenings in the past few weeks and the brain fog came with those.

  10. The title says it all. I was at Walmart and saw this today. Great price for a gluten-free flour. I have no idea how good it is but it sure is a good price!!
  11. That is not true at all. With the ACA they have removed rating for preexisting conditions as well as denying for preexisting conditions It is not a reason to get diagnosed.
  12. I'd ask the GI to run the blood tests again since you will be there anyway. You might see an increase in numbers from your previous tests. Couldn't hurt since you are eating gluten anyway. I would also get a copy of your old tests. Did they even run the full panel? If not, the full panel might show a positive some where. I would also request at least...

  14. I had some leftover pancake mix that I put in the fridge overnight and made some for breakfast. The mix held up overnight and the pancakes were actually a little lighter this morning. Nice to know Pork chops tonight--not sure what I'm going to serve with them, probably zucchini.

  18. I think there was a miscommunication somewhere with that report.... OP, it's possible her levels are coming down but you won't know until she is under 100 I guess. I'd skip the restaurants too, and a month of not eating out isn't long enough really. I have an app on my phone, Shopwell, that is pretty good at tagging foods with gluten, not so good at...
  19. Had pancakes and bacon. I thought I had some of the Bisquick gluten-free mix but I didn't, but I found some Krusteaz in the cupboard. They were good, on the sweetside, but so are their gluten mixes. They are heavy and they don't bubble up like gluten ones so it's a new learning curve to cook them .
  20. Living with Celiac is "easy"--or at least manageable once you get used to it. Living with the other illnesses that result in undiagnosed/treated Celiac can be deadly. Maybe providing your mom with better info will prompt her to get tested. I'm pretty sure both my parents were undiagnosed, and both died very young.
  21. Constipation is a very, very common symptom of Celiac.
  22. Did you mix the flour like she said or did you use an all purpose flour? I have a homemade flour mix that is similar, just wondering if I could substitute that.
  23. I know what you mean. We have a pizza place in town that is amazing and if you don't have your order in by noon for dinner, you won't get a pizza. They have an amazing deep dish pizza especially!!
  24. We used to make those hot dogs all the time when we were little. I LOVED those (and forgot about them).
