ARCHIVED All You Celiacs Hiding In Tacoma/puyallup
lonewolf replied to Thx4noticingMe's topic in Introduce Yourself / Share Stuff
Where in the South Sound area? I'm in Federal Way and would definitely like to see a GOOD gluten-free bakery in the area. I bake a lot myself, so would only go occasionally for treats for my kids when I was busy or for a fun trip out. I've thought of doing the same thing, but don't have any business sense whatsoever. -
ARCHIVED Thank You Lonewolf
lonewolf replied to bakingbarb's topic in Introduce Yourself / Share Stuff
Yay! So when are you going to open your gluten-free bakery? I live in the Seattle area and I'd drive up to support you! Suggestion - if you have a good carrot cake or apple cake recipe, they are also delicious and good "early success" recipes. Just follow your regular recipe with the gluten-free flour. -
ARCHIVED Dairy-free, Soy-free Whipped Topping
lonewolf replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
Okay, I'm going to have to try the coconut milk. I got a bunch of it on sale (full-fat, organic) and I am up for an experiment. Now, I hope no one from the diet thread peeks in here. Maybe I'll make it and let my kids try it. -
ARCHIVED Dairy-free, Soy-free Whipped Topping
lonewolf posted a topic in Gluten-Free Recipes & Cooking Tips
I would really like some type of whipped topping for a couple of desserts I'm planning to make over the holidays. I can't find anything in the stores that is dairy-free and soy-free. I've tried the cashew thing, but thought it was gross. Does anyone have any ideas? Has anyone tried whipping coconut milk? -
ARCHIVED A New Weight Loss Support/accountability Thread

Okay, I'm posting my food. Not as good as I had hoped, but maybe posting will keep me from eating the cookies that I need to bake for my kids' lunches. B - 3 pieces turkey bacon, large slice Pamela's bread L - stir-fried rice with chicken and onions, satsuma orange S - Envirokidz bar with about 2 tsp. almond butter D - Rosemary roast chicken... -

LOL - I think we MUST be related! -
If you want to go slowly, start with a chocolate bar that has soy lecithin in it. If no reaction, try something with soybean oil in it - like a salad dressing. Then maybe move up to Ener-G pretzels or Mi-Del cookies that have soy flour in them. Then try something "pure" like soy milk or tofu. If you go slowly, you might discover that you can tolerate...

ARCHIVED A New Weight Loss Support/accountability Thread
lonewolf replied to lonewolf's topic in Related Issues & Disorders
Hi everyone! Thanks for the welcome back. I will try to stick around this time. I need a little support and accountability around the holidays. Sometimes I wish I wasn't so good at baking! Off topic, but I know Kat will be interested and I don't have time to PM. I met a little boy who has the same kidney disease as Kat and I have (had, maybe, since... -

I'm almost ashamed to show my face around here. I have been SO bad for the past few months, despite getting excited for a day here and there and then blowing it by evening. I've gained several pounds and feel pretty discouraged. I have been exercising regularly, so it's not all bad. Basketball season started today and I'm coaching high school JV... -
I just posted this last week on another thread. We all love it at our house. Puppy Chow 1/4 c. Butter (Spectrum shortening or oil if CF) 6 oz. Chocolate chips 1 C Peanut or Almond Butter (the almond butter is surprisingly good in this) 7 C Corn and/or Rice Crunch

ARCHIVED Which gluten-free Flour Is Closest To Regular Flour
lonewolf replied to maze4's topic in Gluten-Free Recipes & Cooking Tips
I like the basic recipe of 3 C Brown Rice flour, 1 C Potato Starch, 1/2 C Tapioca Starch and 2 tsp. Xanthan Gum. Sift together 3 times to get the xanthan gum evenly distributed. I use this for just about everything. (Sometimes I add more xanthan gum, like for Pelmini, or use a bit of bean flour, like for pizza crust.) I mix up 3-4 batches of this flour... -
ARCHIVED My Cupcakes Were A Disaster.......potential Projectiles.......
lonewolf replied to DingoGirl's topic in Gluten-Free Recipes & Cooking Tips
Susan, I have used this recipe with great success for cake and pineapple upside-down cake. Haven't tried cupcakes yet, but there are directions for them. Looking at your recipe I would say that there's too much tapioca starch - were they heavy and chewy? Why don't you give this one a try. (Copied from recipe section on celiac.com.) This recipe comes... -

ARCHIVED Ok..day 5 Of gluten-free..what's For Dinner? I Haven't A Clue.
lonewolf replied to Kara'sMom's topic in Parents, Friends and Loved Ones of Celiacs
I'm a PE teacher, so I can totally relate to that! I do hope that you find some good recipes that your whole family will like. When you get the chance, post some of your "normal" meals and we can help you convert them to gluten-free. -
ARCHIVED Converting A Recipe To Be Gluten-free
lonewolf replied to julerson's topic in Gluten-Free Recipes & Cooking Tips
I make noodles occasionally and follow my "normal" recipe, just use gluten-free flour. The flour mix I use is 3 C Brown rice flour (you might experiment with white rice flour), 1 C Potato starch, 1 C Tapioca starch and 2 tsp. Xanthan gum. Sift together 3 times and then measure your flour from this. Then, add an additional teaspoonful of xanthan gum to... -

I've made ghee before and think I bought it once. I bake as much as possible with Spectrum Shortening and just cheat occasionally with the butter. Is the ghee cheaper in Asian markets?

ARCHIVED gluten-free Baking Tips
lonewolf replied to bakingbarb's topic in Gluten-Free Recipes & Cooking Tips
I like "Mochiko" brand of sweet rice flour. However, I prefer brown rice flour in baking because it seems to work better and doesn't turn out gummy in most recipes. I use the sweet rice flour to thicken gravies and sauces -

ARCHIVED Please Explain The Difference Between Celiac Disease & Gluten Intolerant
lonewolf replied to dolly's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Hmmm, interesting. I only have gluten intolerance, but I definitely have immune system reactions. I have a lot of the same auto immune problems that Celiacs have: thyroid problems, psoriasis and excema, had psoriatic arthritis and an auto immune kidney problem. My thyroid and skin problems have gotten MUCH better since going gluten-free and the other two... -

I posted 25 recipes that both gluten free people and gluten eaters can enjoy. Here's the link: Open Original Shared Link People have made some good suggestions. You need to get some Tinkyada pasta and white rice flour (to thicken sauces and gravies and use for things like your steak). There are other essentials, like flours or a flour mix for baking... -

ARCHIVED Negative Dna Test... Now What Do I Do?
lonewolf replied to splash's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Going gluten-free resolved pretty much all my health issues. I was SURE it was Celiac Disease. My GP was sure too and wanted to run the gene test to "confirm", since I wasn't about to eat gluten again to be tested. I came back negative for DQ2 and DQ8 and wasn't told what my genes were. I was really confused, because I'd had such a dramatic recovery....
