Have you tried it in the oven yet? I'm not a big microwave fan either - this is just how the recipe was. I'd love to be able to make a whole batch and toss them in the freezer or something. There should be several pre-packaged flour mixes that don't have pectin or citrus products in them. I prefer to make up my own mix - it's easy and much less expensive. Try using a second Tbs. of flax meal. The "original" recipe called for 2 Tbs. of flax - it's a bit more "grainy", but still good. -

Mmm, sorghum flour sounds great! I like it, but don't buy it because it's so much more expensive than rice flour here. I'll have to get some anyway to try it. It's just about the right size for a hamburger bun. I actually like to slice it into 3 slices and make a sandwich from the top and bottom. I eat the center part later with butter or jam. Ginnybean - welcome. I'm sorry you're having a tough time with this. It is normal to feel angry and sad at first so go ahead and grieve and vent. You'll get to the point where you see your diagnosis as a positive thing, but it might take some time. My son went gluten-free when he was 11, but it wasn't too big of a change because I was already gluten-free. But I do remember that it was hard on him at first. I ran across boxed Mac and Cheese at Trader Joes yesterday. I'm wondering if anyone else has tried it and if it's any good before I mix it up and give it to my kids. I know, I should have asked before I bought it, but I was so surprised to see it that I just grabbed it. I've never seen it there before. TIA -
I usually make Pamela's Gluten Free Bread Mix in muffin tins for dinner "rolls". They're delicious straight out of the oven especially. I usually time it so they go into the oven 20 minutes before we sit down to eat - after the meat is out. Very simple and always turn out well as long as you follow the package directions.

I'm sure it seems like bad news, and it will be tough to get used to the change. Allow yourself to grieve. It's not easy at first, but you will be able to catch on. Is anyone still doing this? I started a few days ago and haven't really noticed much, except that I don't seem to have as bad "morning breath" as usual and I do get mucus coming up and my nose runs for a while each morning after doing the swishing. I'm hoping it will help my psoriasis, but I'm not holding my breath.

What about our professional sports teams? The football and baseball stadiums will sell gluten-free Garlic Fries, Mo-jo potatoes, nachos, hot dogs, beer and all the other fun food you eat at a game. The basketball arena will have similar food along with gluten-free, Soy-free teriyaki, dairy-free ice "cream" and gluten-free sub sandwiches. -
