I've made grilled cheese with Ener-G Brown Rice loaf and Light Tapioca. Spread with butter and grilled with cheese, they really aren't bad. For soup, my favorite is Imagine Foods Tomato Soup in the quart sized aseptic package. It's supposed to be served "as is", but we all like to add a little water - I'm sure milk would be good too. -
I need to bring a "fancy" dessert to a function at church on Saturday. There are a few other people there who also avoid wheat and dairy, so I want us all to be able to eat it. Egg-free would be good too, but I can modify a recipe that calls for eggs or use one or two if I'm only going to eat one piece. I am a good cook/baker, so I'm not afraid to tackle...

I'll have to ask my friend how she got it. I don't know if you have to go through a doctor or not. I'm thinking about getting one for those once-in-a-while occasions where I need to bring my own food, like the topic at hand. Having to miss a day or two of work from being glutened qualifies as a medical "alert" condition to me. -

I have a friend who wears a medic alert bracelet because of Celiac. She shows it to people in these type of situations and explains that she will become VERY ill if she even accidentally gets a little bit of gluten - that's why she has the bracelet. She's had good success. -

I agree that carob is great in brownies and cake. I posted a recipe for carob brownies that are gluten-free, egg-free, soy-free, dairy-free and potato-free. If I can find it I'll post a link. I agree that you should get your thyroid checked. I discovered I had low thyroid at the same time I found out all my food intolerances. Now I know that having 12 cavities at one visit (about age 9) to the dentist REALLY wasn't my fault. And now I know why I started having stomach aches so frequently in high school and college - I learned to bake delicious yeast bread and baked often for family and friends and always some for me too.

I rarely eat beets, except occasionally in borscht, so I can't comment on pink pee. But, in the words of my husband, "I know why bears have green poop". Try eating WAY too many blackberries and it will be a very sickly shade of green. -

The easiest flour mixture I have found is to mix up 3 C Brown rice flour, 1 C Potato starch, 1/2 C Tapioca starch and 2-1/2 tsp. Xanthan gum. Sift this together 3 times before using. I use it (scant) cup for cup in all my baking and everything turns out great. I tried for years to bake with just rice flour and found very few things that actually worked... -

The only thing you need to be careful about is making sure he gets enough fat and protein. (Children under 2 should NOT be on a lowfat diet because their brains are still developing.) I was on a large dose of prednisone for 9-1/2 months. It did cover up some of my food allergy symptoms/glutening symptoms and cleared my psoriasis, but at a high cost. Don't be so sure they are dying them. We have 6 apple trees and two of the red varieties "bleed" red color into the white part when we cut them. I can assure you that we DONT put any dye on them. Macintosh (I'm guessing this is what a "Jersey Mac" is) can do that too. -
I eat at the salad bar at our local health food store deli all the time. The only things that contain wheat are the crackers and croutons at the very end, so I don't try the other little things like raisins, sunflower seeds and dried fruit that are nearby.
