  1. My 11 year old son developed some really weird eye movements (excessive blinking at times, rolling eyes to side involuntarily and twitch-like movements) a few years ago. The doctor and his teacher thought it was related to stress, since we were in the process of adopting our youngest. Other symptoms started pointing me to celiac or gluten intolerance. ...
  2. The Vegetarian ones are gluten-free too!
  3. Cheri, Did she like them? I might try that if it was a hit.
  4. Yes, this is the original "recipe". I mix 3 C Br. Rice Flour to make a bigger batch and increase the potato and tapioca accordingly. I always add xanthan gum in when I'm mixing it so it's ready to use when I need it. It's so easy to have it in the fridge and be able to just measure it out like "regular" flour. I usually make up a double batch, since I...
  5. Oops, sorry. Didn't mean to be too scientific. It's latin for your butt muscles. (That will be the "education" part of physical education for today.) Tighten, release, tighten, release, tighten, release...
  6. You guys are all toooooo funny! As the new PE teacher I recommend LOTS of laughter - it's very healthy. And while you're sitting at your computer tighten and release your gluteus maximus' regularly to prevent computer chair spread!
  7. A+! I always studied hard in school!
  8. Are you gluten free? YES! YES! YES! Do you promise to never infiltrate Rachelville with gluteney foods? Heaven forbid! Yes, I promise. Do you promise to never bring gigantic Auxigro ridden produce into R-Ville? Absolutely! OK...Thats about it. If you answered yes to all of the above....the job is yours. Cool! Let's start with a nice walk...
  9. Hi, Just visiting Rachelville. Looks like a nice place to visit, but don't see an opening for a PE teacher.
  10. According to their website, "You are safe to eat everyting we serve except..." then list flour tortillas, hot red tomatillo salsa and vinaigrette dressing (the latter two contain vinegar, which is sometimes controversial). They also say that there is a chance for cross contamination. The last sentence in their FAQ sections says, "For this reason, (cc chance...
  11. I was just going to ask the same question. If he believes she is Celiac, why would he want her to go back on a "regular" diet? If you notice problems, make an appointment sooner than 5 months out.
  12. I'm glad she's home. I hope she continues to do well.
  13. I'm not an old wife, but I can verify that eating too many cherries can DEFINITELY cause D. And it's been worth it every time .
  14. I'm happy that you have an answer and that her doctor is supportive of a gluten-free diet. It's always nice to figure out what's wrong. I'm woefully ignorant of all the testing, so I can't help you there.
  15. Sorry, I really do understand how frustrating it is. I've been an athlete all my life and for the past 10 years I've had health problems and just can't seem to keep up the same level. And it's not just because I'm getting older. For me, the key is to just keep on going and do the best that I can and try not to compare myself with other people. But I know...
  16. I'm still praying for little Megan too. And the whole family.
  17. Welcome! I think that lunch can be a hard thing to pack, especially if you're new to all of this. I can't do dairy or eggs either, so I'm really limited when in comes to lunch away from home, but here are some things I take. Lunch meat rolled up in lettuce leaves, secured with a toothpick Salads Sandwiches made with Br. Rice tortillas or corn tortillas...
  18. Well, after all is said and done, I won't be going back to Chipotle for a very long time. My stomach still hurts. I KNOW it's gluten because it's exactly the same reaction as I had back in January when I ate at my SIL's house and was told AFTER I ate that, oops, there were breadcrumbs in the meat cutlets after all. Which wasn't a surprise because I had...
  19. We eat Mexican food at home at least once a week. I eat a lot of beans, rice, chicken, salsa and avacado, so it's nothing new to my system.
  20. Is it prednisone that you're going off of tomorrow? I've never heard of anyone going off of a 50mg dose. I've been on it before and I had to wean down from 70mg to 5 mg before I could get off. You might want to call your doctor to make sure he/she wants you to stop cold turkey.
  21. Welcome! I'm glad you got a speedy diagnosis and that you're feeling better. I hope you like it here!
  22. Oh no, please don't even think that. I'm allergic to enough already. NOT my beloved coconut too!
  23. I love the coconut oil, but it does seem to dry my skin out, hair too, if I use it every day. I've seen on another board that others have had the same experience. I have weird skin though - I have psoriasis and excema (gluten-free doesn't seem to help much) and I can't always predict what it will like and not like.
  24. I literally buy coconut oil by the gallon. We use it to pop popcorn, use it in some rice dishes and I use it on my face and hair sometimes. The weird thing about it is that after about a week it starts making your skin feel dry. So I use it for a few days, then take a couple of days off then use it for a few more and so on.
  25. Do you have curly hair by any chance? I just discovered that if I only shampoo once or twice a week and "wash" my hair with conditioner it's much less dry and frizzy. I saw this tip in a book written for girls with curly hair.
