  1. Do any of you know if there are other things that can cause Keratosis Pilaris? My 9 yo son has it, but 2 doctors have said it's not diet related and he tested negative on the celiac panel. He already eats very little gluten, since we are mostly gluten-free in our house, but his skin is really bad.
  2. One more tip for Ener-g bread. I eat the brown rice loaf, since it's one of the few without soy, milk and eggs. It is completely inedible untoasted. I make garlic butter, spread it on liberally and then cook it on my pancake griddle, turning it so the back side gets lightly browned too. This is the best way I've found to eat it.   3. You can use Ener-G or another replacement that has baking powder in it. The point is that for cookies you need both qualities of eggs - the stick-together factor and the puffing-up factor.
  4. Gelatin doesn't work well in cookies. I know your wife will cringe at the thought, but try some ground flax meal (about 1 Tbs.) mixed in 3 Tbs. water, mixed in with the sugar. Then also use the egg replacer. This will make them stick together and puff that little bit. I also usually use 1/3 C of almond butter, but I think you try to stay nut free.
  5. Our Trader Joe's doesn't have any of the breads you're talking about. They have one really nasty brown rice bread that tastes just like my baking disasters used to and that's it. You must all be on the East Coast? I'm on the West.
  6. One thing I have found to be helpful with my 11 year old is to have LOTS of gluten-free food available. I'm gluten-free too, so I understand how frustrating it is to have nothing gluten-free to eat when you're hungry.   8. Yes, I use the Bette Hagman gluten-free flour recipe. 3 C br. rice flour, 1 c potato starch, 1/2 C tapioca starch and 2-1/2 tsp. xanthan gum.   9. Hmmm, I'm trying to figure out why y'all get flat cookies. I use real butter, egg or substitute and follow the regular recipe with my gluten-free flour and they turn out just like "normal". In fact, I made them today for my son's baseball team snack, using Sunspire Sundrops instead of chocolate chips. The kids all scarfed them down without a complaint...

  11. My son has been off milk since he was about 18 months old and has been gluten-free since January. It takes a while for the kids to get used to it, but there are lots of good foods to eat. I used to play basketball in college, became a PE teacher, always ate really healthy food, exercised, etc. and I got so sick I honestly thought I would die.   13. It's a good idea to eliminate dairy at least temporarily. Remember though, eggs aren't dairy - some people have problems with them separately though.
  14. My whole family likes Tinkyada. We eat the spaghetti, elbow macaroni and spirals and have tried the lasagne too. They're all good. I don't ever make "regular" noodles and have served it to company numerous times. I make my own sauce, so sorry I can't help you.
  15. If you stop eating gluten, you could throw the test results off - then your doctor really might think you're a hypochondriac! If you want a diagnosis, go to your doctor and ask for the celiac panel to be done ASAP. BTW - I have dental problems too - more cavities as a child than anyone can imagine and now my teeth are practically transparent. I had cavities...
  16. Envirokidz cereal bars, Panda Puffs and Gorilla Munch (cereals) make good snacks. There are several kinds of rice crackers available at health food stores, Trader Joe's and some regular stores. Ener-G makes some good pretzels that you can order online or get in lots of stores.

  18. I use NutriBiotic Vegan Rice Protein. It says "GMO and Gluten Free" right on the label. I get it at our local HFS.

I really don't measure exact amounts, but the gist of it is this: Brown boneless, skinless chicken in a pan with some olive oil or coconut oil, add coconut milk, onions and curry powder to taste.   20. You might have some other food intolerances also. I had horrible arthritis for a while in almost every joint except my jaw (thank goodness I could still talk!) and it went away by eating a very limited diet. I cut out wheat/gluten, all dairy, eggs, soy, nightshade vegetables, red meat, most beans and peanuts and a few other things. The arthritis went away...
  21. Welcome! I have a son named Caleb too and he is gluten-free. There are lots of good foods that don't taste too "plain". Look in the recipe section here and also get a copy of the book, "Incredible, Edible gluten-free Foods for Kids". I'm across the country, so I can't help with a support group, but wanted to welcome you anyway.
  22. I make muffins from scratch a lot and this isn't enough "wet stuff". For 2 cups flour my recipe calls for one egg (or substitute), 1/3 C oil, 1/3 C maple syrup and then enough milk/rice milk to make all the liquid equal 1-3/4 C. Depending on what flour I use or what the humidity is like, I may add a little more rice milk.

  25. I also like the Incredible, Edible . . . book. One suggestion though - try to keep your food as similar to what you're used to eating as possible. This will help with frustration on both sides. I make spaghetti and meatballs, tacos, pizza, quesadillas, chicken and rice, meatloaf, soups, stews, pancakes, cookies, etc. all from the same recipes I used before...
