  1. I have psoriasis, had psoriatic arthritis and also had candida. The psoriasis and PA went away after a year of eating an EXTREMELY limited diet and I also took large quantities of probiotics and digestive enzymes. I now "only" avoid gluten, dairy (except small amounts of butter and raw goat cheese), eggs and soy. I take probiotics regularly, but don't...
  2. I like it too! My dh likes it better than pasta. I also like to use the leftover squash by sauteeing it in olive oil with some garlic powder and then adding a bit of romano (sheep milk) cheese right before serving.
  3. What about their coconut pudding mix? I've eaten it with no problems, although I'm not sensitive enough to get a reaction from a microscopic amount. It's great mixed into a cake mix.
  4. Try peeling them and eating them that way. A friend all of the sudden started getting sick from apples, but found she could eat them peeled. She doesn't know if it's a pesticide, wax or something in the peel, but she just knows she can't handle it.
  5. I'm sorry for all the hassle you've gone through. Maybe you don't have Celiac, but maybe you do have a problem with gluten. (I've never been diagnosed and probably have Non-Celiac Gluten Intolerance.) You've felt better, lost weight and look better gluten-free, doesn't this tell you something? You seem to be a very intelligent person, please trust your...
  6. The food I make tastes great. I do a lot of naturally gluten-free foods - soups, stews, salads, casseroles, meats and vegetables, tacos, fajitas, etc., so there's no problems with bad taste or lack of fiber. For baking, I use the Bette Hagman basic flour mix (Br. rice, potato starch, tapioca starch), but usually add golden flax meal and Montina flour for...
  7. I think it's easier to have a "mostly" gluten-free kitchen. My 11 yo son and I are the only gluten-free ones, but dh and the other 3 kids only eat sandwiches (usually packed in lunches) and occasionally french toast that contain gluten. Sometimes regular toast too - in their toaster. I make EVERYTHING else totally gluten-free for everyone - pizza, cookies...
  8. I'm just seeing this today. Welcome Liz! Now there are two of us! I've never been officially diagnosed either, but won't EVER go back to gluten again. I've had more than my share of doctors blow me off and basically tell me I needed psychatric help. With the help of 2 naturopaths I figured out I couldn't eat wheat, but even they didn't catch the celiac...
  9. I cook everything from scratch, rather than buying expensive gluten-free food. I use time bake and the crock pot a lot since I have 4 kids and work part-time and don't have too much extra time to cook. I also stick with basic foods - chicken and rice, chicken salad, stews, soups, tacos, etc. And I learned to cook with dried beans (they're pretty cheap...
  10. I'm just seeing this for the first time. Thyroid problems can make your hair curly? Really? My engagement picture - almost 19 years ago now, shows me with straight, maybe slightly wavy, thick hair. Now my hair is curly, I mean CURLY and very thin. I've been on Armour Thyroid (tried a couple of others too) for about 10 years now and my hair has only become...
  11. Have you tried experimenting with these ingredients? I've made up recipes simply by experimenting - although never using those specific ones. There are some basic principles - for example 2 C flour goes along with 1/3 C oil and about 1 Tbs sweetener and 1 tsp baking soda and 1/2-1tsp salt. Most recipes have similar proportions. Depending on how sweet...
  12. If you've been gluten-free, your tests will come back negative. I've been wheat-free and mostly gluten-free for 10 years, and my doctor still thought I should have the whole celiac panel. At least she took me seriously, but she obviously didn't know what she was doing. I know nothing about DH - sorry I can't help you there. It sounds like you already...
  13. Has anyone else ever counted the number of cookies in their Mi-Del bag? My kids and I started noticing that the packages were light and seemed very empty. The last one definitely weighed less than 8 oz and we counted 53 cookies, rather than the 80 that the package said. I emailed the company with a complaint and they are sending us a free coupon. At ...
  14. I think it might be worth it for you to get a copy of "The Allergy Self-Help Cookbook" by Marjorie Hurt Jones, R.N. (Over 325 natural foods recipes, free of wheat, milk, eggs, corn, yeast, sugar and other common food allergens). I have one that someone gave me 10 years ago, and the author has come out with a completely revised and updated version. $14...
  15. I don't think you'll get too sick unless you ate a lot. I've eaten a lot of beans, some of them undercooked and gotten nothing worse than a little stomach ache. I think the package must not have given the full directions. What you described is called the "quick soak" method for softening the beans to get them ready to cook. You do this instead of soaking...
  16. Yes, I would get them tested. It certainly can't hurt anything.
  17. Here are some links that you might want to show him. They don't all address weight gain, but they do all talk about how prevalent and underdiagnosed Celiac is. Open Original Shared Link Open Original Shared Link Open Original Shared Link Open Original Shared Link
  18. I also have good luck with heating them on a dry pancake griddle for about 30 seconds on each side.
  19. Turkey Ranchero (really easy) 1 lb raw turkey, cut into bite-sized pieces 1 can gluten-free enchilada sauce 1/2 Jack cheese Sour cream or alternative Brown turkey in a little olive oil. Add enchilada sauce. Simmer on med-low for 20-30 minutes. Stir in cheese until melted. Serve over rice, topped with sour cream.
  20. Do you mean turkey breast and thighs or ground turkey? I have a few recipes for the larger pieces, and for the ground turkey I use it just like ground beef.
  21. I can help with 2 and 3. I've never had a problem with NOW xanthan gum (or Bob's either). I have added coconut pudding mix to a different recipe with great results - I added about 3Tbs. more liquid so it wouldn't be dry. I hope your recipe turns out well. If you want another recipe to try, the white cake recipe in the recipes section here on celiac...
  22. Did you see the recipe I posted last night here? Do you think it will work?
  23. Really? I looked at their ingredients and in some of their breads they just use flour and water.
  24. I'm sitting here with a bad headache and just thinking about some things. I'm VERY THANKFUL that I figured out that I'm gluten intolerant (or have Celiac or whatever). I appreciate my relatively good health and am thrilled that I can be active after being told that I would be in and out of a wheelchair for the rest of my life. Anyway, I was just thinking...
  25. I keep mine in the fridge. Wouldn't want them to spoil since they're so expensive, although we eat them pretty fast.
