ARCHIVED gluten-free Flour Recipe?
lonewolf replied to lonewolf's topic in Gluten-Free Recipes & Cooking Tips
He could have the Vance's, but I'm tired of having to order all this stuff. It would be so nice just to be able to go to the store and buy what we need without having to pay shipping, etc. I might try the recipe without the milk powder and see what happens. But today I have a killer headache (3rd day in a row), and I'm not up to anything besides survival... -
I don't really measure, but I'll try to describe our favorite chicken recipe. It's Indonesian style Coconut Curried Chicken. (It's mild, not spicy, but you can use saffron or tumeric if you want to avoid all spice.) About 1 pound boneless, skinless chicken, cut into bite-sized pieces 1 small onion 1/2 can coconut milk 1 tsp. salt 1-2 tsp mild curry...

ARCHIVED Seeking Gum-free Bread Recipe
lonewolf replied to felineaids's topic in Gluten-Free Recipes & Cooking Tips
You can make your own rice milk - just do a google search for "homemade rice milk". My flatbread recipe calls for a lot of xanthan gum. It won't work without it. Perhaps an asian grocery store, or an asian person who likes to cook/bake could be of help. We have several Korean families at our school and a couple of the moms make interesting things with... -

My test came back in 3-4 days. My kids' tests all came back in 2. I'd call tomorrow to ask. -
ARCHIVED Seeking Gum-free Bread Recipe
lonewolf replied to felineaids's topic in Gluten-Free Recipes & Cooking Tips
In looking through my recipes, this is the closest thing I could find. It's more like a corn bread than a sandwich bread, but it did turn out edible. I adapted the recipe from "The Allergy Self-Help Cookbook" by Marjorie Hurt Jones, R.N. p. 112. Rice Casserole Bread 1-2/3 C sifted brown rice flour 1-1/2 tsp. baking soda 1-1/2 tsp corn-free baking... -
ARCHIVED Seeking Gum-free Bread Recipe

Hmmm. Been thinking about this for a few days now. In 10 years of trying to make decent bread without gluten, eggs, dairy or soy, I haven't succeeded and I'm a good cook. I've made quick breads and tortillas, but have used xanthan gum every time. Just wondering why you can use baking soda, but not powder? No flax? Can you use rice milk? No other types... -

I've found that freezing them makes them fall apart - especially "peeling" into layers. Maybe you could ask your HFS to save a couple of packages for you before they freeze them? Our store has them in the refrigerator section. I discovered that if you wrap the little white paper around your wrap or burrito, kind of like they do in a fast food place... -

Welcome to the board! I hope we can help you out. Lots of people here have multiple food intolerances/allergies, so you're in the right place. If you've been avoiding all of these things, then you'll do fine with gluten-free. It's not much more of a change. It's all the "other" things that make it difficult. When I first found out I had food allergies... -

I wish I knew the answer. Sometimes I'll get a bad stomach ache before I finish my meal, sometimes several hours later, sometimes no stomach problems at all. I haven't been glutened for a long time now, but I really thought I had eaten something wrong last week, was expecting a problem, and it never came. In the past, I've had other non-digestive problems... -
ARCHIVED gluten-free Flour Recipe?

I haven't found a powdered milk replacement yet, so I haven't tried it. Caleb LOVES his sandwiches on brown rice tortillas, corn tortillas and even romaine lettuce leaves, so I haven't worried about bread much lately. He'll eat French toast (he can have eggs, lucky kid) made with Ener-G brown rice bread, so I have it under control for him for now. I'm... -
ARCHIVED gluten-free Flour Recipe?

I used the flour mix and subbed sweet rice flour for the corn flour. My son wanted donuts, so I made the donut recipe from Betty Crocker and baked, rather than deep fried them. They spread all over the cookie sheet, but still tasted pretty good. A good sprinkling of cinnamon sugar while still hot helped. -

Our Trader Joe's just started carrying sliced turkey breast that looks and tastes suspiciously like Applegate Farms - it's $3.49 for a 7 oz package. Anybody who has a TJ's nearby might want to check into it. They also started carrying turkey bacon that also looks like Applegate Farms for $3.99 for a 12 oz pack. -

Thanks - does it work for cookies? I found something to tide him over, but still need to bake tonight, if possible. -

Can you get brown rice flour, potato starch and tapioca starch in bulk at a health food store? If not, what about boxes of Ener-G brand potato and tapioca starches - they're in yellow and red boxes. Maybe your local HFS could order some Lundberg br. rice flour? I make my own mix from these, and it really does work well, with xanthan gum. It's waaaaay... -

Does anyone know if you can mix up a batch of gluten-free flour, that will actually work in recipes, with sorghum flour, potato starch and tapioca starch? I might have a 1/2 C of sweet rice flour somewhere too. I'm out of my flour mix, no time to go to the store, and need to bake something in a little while. I usually use the Bette Hagman recipe to mix...

Could it be rosacea? I was dx'd with it a few years ago and mine was scaly too - the doc said that wasn't typical, but it was still rosacea. I've found that sticking strictly to my dietary restrictions (no gluten, eggs, dairy or soy) has helped a LOT and using plain coconut oil on my face (not right out of the shower - let it calm down first) is the best...

What? I've been on it for 10 years, except for the two different times doctors wanted me on Synthroid and then Levoxyl to see if they would work better. No one ever mentioned that to me. Why don't pharmacists know this? Does it work better that way? Would I lose weight easier? Do you just cut your pills in half or get a prescription for half-doses?

ARCHIVED What Makes You Happiest About Being Gluten-free?
lonewolf replied to a topic in Coping with Celiac Disease
I love being able to walk, run, coach basketball, play baseball in the yard with my kids, and just feel healthy. Considering that one doctor told me I'd be in and out of a wheelchair for the rest of my life (at age 32), the minor "incovenience" of a changed diet is nothing. There's no substitute for good health. -
Hmmm, I was wondering if all those gray hairs had anything to do with gluten or thyroid or something. I can't pluck em out fast enough anymore. My sister is almost 50 (MUCH OLDER SISTER) and is totally gray and my grandpa was totally gray by 25. Sis is on thyroid, I think grandpa was too. So I guess I'm no help - just wondering the same thing. I did...

Bette Hagman uses it in addition to eggs - to help with the texture/rising. If you can't find it, try mixing 1 tsp. baking soda and 2 tsp. baking powder (or any amount in the same ratio) and measuring the amount you need. It's not exactly what the egg replacer is, but it should work in a recipe that also calls for eggs. In a recipe that doesn't use real...

ARCHIVED More Than A Gluten Allergy?

Yep! Soy too! I'll try to post some recipes/ideas when I have time tomorrow. I learned to love rice pilaf made with nuts, spices and dried fruit. Cornbread can be made pretty easily in mini muffin tins. Those are the quickest things I can think of now - more later.
