  2. I haven't done a girl scout camping trip, but we do go camping in the summer with friends. Here are some things I have found to help.   3. Cheri, Next time I am going to try to use egg replacer and gelatin. That's worked well in the past for cakes. This time I used real eggs, although I don't normally. It was for my kids, who can have eggs, but I tasted a little bit too. I'm pretty sure there is a list that mentions gluten-free pudding mixes somewhere on this website.
  4. I'm glad I'm not the only one who tries to tell people about the dangers of soy. Please, PLEASE don't feed it to your children, except in small amounts like soy sauce. Especially don't give it to little boys. If women take it to balance out their female hormones, what do you think it will do to developing little boys?

  6. Just a hint - toasted sesame oil is good for stir-fry. Gives some more asian flavor. Use half sesame oil with your other oil.

  9. I haven't made gluten-free sourdough yet, but my guess is that the potato starch and rice flour are necessary. I have a "regular" recipe for a sourdough starter that uses potato flakes. Potatoes will ferment as will rice (think sakee), so I would think these would be necessary. Can you post the recipe? I'd love to try it.
  10. Judy, The coconut sorbet is sweet, but isn't too sweet. It's not overpowering like some of the fruit sorbets are. It's very rich though. You will be satisfied with a modest sized serving.   11. I second the motion! It's GREAT! I've never had a problem with it. For a really yummy treat mix in some crushed Kinnickinnick K-toos. Closest thing I've had to a "Blizzard" for 10 years. Our Trader Joe's stopped carrying it, so I might have to drive the hour to Whole Foods here.

  14. I agree about using it in small quantities with other flours. For buckwheat pancakes I have used 1/4 C buckwheat flour with 1-3/4 C gluten-free flour mix and that's enough. I made a loaf of cement bread once with it too. No one makes that mistake twice!

I talked to a vet a few months ago (long story how we got on this topic) and he said that cats are the only animal he knows of that can get celiac disease, but they can also get it from other foods - it's the damage to the intestines and secondary problems that are considered celiac, not the trigger...

  24. I don't use a mix, but I make pancakes from scratch at least once a week. I have found that it's best to mix in too little liquid at first and then slowly stir in more until the batter is the right consistency.
