I've used my cuisinart for softer grains like millet, nuts for nut flours and safe oats for oat flour. I don't think I'll try brown rice with it though.

My husbands friend who is a personal trainer in a up scale training gym puts people on gluten free diets all the time. He loses weight when he goes on it and loves it. My husband also lost wt. on it and feels better then ever. My youngest son (22) decided to go gluten free because he wanted to see what all the fuss was about and he's losing wt. and telling me how good he's feeling. He's just coming off a round of antibiotics and just wants to feel healthy again. So I have a gluten free household now! I'm finally going to go through my pantry and throw out all the flour and spaghetti's and cake mixes that I've wanted to do since I started a year ago.

Soy Bad, Soy Good: The Pluses of Fermented Soy
Why? Nonfermented soy products contain phytic acid, which contains anti-nutritive properties. Phytic acid binds with certain nutrients, including iron, to inhibit their absorption. This is a direct, physical effect that takes place in the digestive system. Their ability to bind is limited by the milligrams of phytic acid present.
Products using nonfermented soy include:
Fresh green soybeans
Whole dry soybeans
Nuts
Sprouts
Flour
Soy milk
Tofu
What makes unfermented soy particularly unsafe: It's hard to avoid soy in processed foods such as baby formula, meat substitutes, drinks and snacks. One can find it in a great many domestically-produced food products at the grocery store. Additionally, soy is sanctioned by groups like the Soy Protein Council and USDA that cite the presence of isoflavones scientists say reduces one's risk of cancer.
On the other hand, fermented soy stops the effect of phytic acid and increases the availability of isoflavones. The fermentation also creates the probiotics--the "good" bacteria the body is absolutely dependent on, such as lactobacilli--that increase the quantity, availability, digestibility and assimilation of nutrients in the body.

Phytic acid can be found in most grains, seeds and beans. Rich sources of phytic acid are wheat bran and flaxseed (3 % phytic acid).
Action of Phytic acid: Phytic acid has been considered as an anti-nutritional component in cereals, seeds and beans. Research has traditionally focused on its structure that gives it the ability to bind minerals, proteins and starch, and the resulting lower absorption of these elements. However, resent research have shown that phytic acid has many health promoting effects. Phytic acid has antioxidant, anticarcinogenic, hypocholesterolemic and hypolipidemic effects.
In animal studies phytic acid showed a protective action in carcinogenesis. This action could be explained by its mineral chelating potential.
Phytic acid lowers blood glucose response by reducing the rate of starch digestion and slowing the gastric emptying.

So I really don't believe fermented soy is good and unfermented bad. If you are sensitive to MSG or have problems with candida yeast overgrowth fermented foods along with aged foods or anything with molds or yeast in it is NOT good for you and I know there is alot of people who have that problem.
I have decided this year to give up red meats and I've decided to include soy to see how I feel. It is after all a good protein low in fat and a great alternative to milk. So far I haven't noticed a reaction to eating it. Well see how I do down the road.
I don't think it's a good thing to give baby boys as a formula. That would be my only concern, but it does offer protection with girls to prevent breast cancer. If you have thyroid problems don't eat soy. Otherwise I think the split in opinions are the ones that don't tolerate it anyway over the ones that do o.k. with it.
You'll have to post the reason its bad for celiac's because it contains gluten like reactions or whatever you're saying before I can exclude this from my diet. I take things like this seriously.

For example you can have...
Have fruit every morning and try to vary it. I buy apples, pears, oranges the most and I buy frozen blueberries, cherries and raspberries. I have about a cup of one of these in the morning and sometimes as a snack in the afternoon. Have a bowl of cereal or gluten-free toast.
Have a salad for lunch with a protein portion or a sandwich. Or have soup with veggies in it.
Have two servings of veggies with your evening meal. One starchy like beans, rice or potato and nonstarchy like spinach, green beans, zuchinni, asparagus, salad greens. Have your protein with it.
Actually breads always constipated me. It was too much fiber and carbs and it didn't move along well. Vegetable fiber is much easier to assimulate and makes IMO the best stools to pass.
There are days you'll have pasta meals or pizza but I eat above most of the time.

I did the paleo diet last summer and I didn't sleep good at all. I think its just the reduction in carbs. When I do have a high carb meal like spaghetti sauce on tinkyada spaghetti noodles and have a big o'plate full, I'll sleep for 8 to 9 hrs. So I'll do that if I haven't been sleeping good for awhile. I usually get about 6 to 7 hrs. and about once or twice aweek I'll only get 5. I don't really suffer to much during the day though, its like I just don't need alot of sleep and have more energy when I'm low carbing. My mind is also more sharp. I'll feel like I'm alittle drunk when I have that spaghetti meal.
So go figure.

Thanks for the info raven. I have loose ligaments and especially right before my period it gets bad. I think its the same hormone that's released at the end of the pregnancy? I'll wake up with neck and hip pain just if I don't change positions alot.
Even though I can bend further then most people it doesn't mean its good for me cause it does cause joint pain if I do it. I wish the muscle would do the stretching instead of the ligaments but I never figured out I needed more calcium and magnesium then what I was getting. I wish I knew more about this. I'll have to explore it.

I would blame the coffee. Its better to have it on an empty stomach. It can cause troubles digesting your meal otherwise.
Cough drops may be a problem and I've heard they don't do that much good. They don't stop you from coughing and if its to lubricate your throat just any hard candy will do.

I have a hard time with any B vitamins. They make me nauseous. I'm pretty sure its the B vits. that make you wired. I know you shouldn't take them with you evening meal if you have trouble sleeping. Make sure your increasing your calories if your activity levels go up. If you drop to low it takes a long time to recover. Also eat a small snack (mostly carb) before going to bed and this will release tryptophan to work for you. Have you tried taking melatonin? Another good one is a formula containing Valerain and or passionflower.
I eat a very good diet so right now I'm not worried about vitamins and the ones I do take don't make me sick. Like I said its the B's that get me and I'm almost certain its the niacin that does it. Even though they claim to be allergy free it doesn't matter. Taking B's separetly can cause a definciency in the one your not taking so that's not good.
I hope you figure it out its really a trial by error thing and needless to say can end up costing money and throwing away vits. unless you can find a place that will give you money back on your vits. that cause problems....is there such a place?

Thats wonderful Stef! I feel better when I stay away from grains also. Giving up dairy was very hard though,....I still cheat with that one with a little cheese here and there. If I was just grocery shopping for me I'd literally would just need to shop the perimeter of the store except for olive oil. They've been tellling us to do that for years, and I remember thinking who does that! Its weird how life is.

The chex-mix sounds good....I haven't made that gluten free yet. I'll be making that and I always add red pepper to the spice mix.
Popcorn with parmesan cheese is quick and easy.
Refried black beans with chips.
Quesidillas cut in wedges. Served with guac.
Potato wedges baked with olive oil, grated lemon rind, fresh rosemarry, salt and served with sour cream.
Toast gluten free bread cut in fours and rub with fresh garlic and serve with a mixture of diced tomato, garlic and black olives in a dressing made with olive oil and balsamic vinegar.
I've always love salty savory over sweet.

We'll be watching the Packers beat the Bears
and eating a millet/flax crust pizza with maybe a grist beer. It may be Brett Favre's last game if he decides not to play next year. I'll be in bed by midnight I'm sure. I usually wake up early no matter what time I go to bed so I'll have to see if there's any New Years days sales in the mall.
Happy New Years if I don't pop on here which I'm thinking would be fun.

I know food is not the be all and end all of Christmas, as it is more than that. It is families, it is unity, but when all these things are together, there is where you find the food, and a lot of it.
Last Christmas, I told myself that that was the last Christmas where I would make a pig of myself as I was feeling quite ill, and was just getting my head around seeing a doctor about my problems.
I have had the ususal Christmas shouts at work, with only being able to have the strawberries, or a piece of cake I have bought in myself. But I am feeling like I don't want any more fancy food, ie as in procceessed, full of sugar and fats. So it looks like last Christmas is not the last where I will feel ill. It might just be an annual thing that has to be managed. Unfortunately the Christmas build up begins in October, and the month before Christmas life is so focused around food, morning teas, goodies in shops, presents, social gatherings, you can't miss it.
I admit I am not feeling too well, it is all these extra temptations, and most of them as far as labelling goes, and I have not overeaten, have no gluten in them. But I am still feeling lousy, as some of the food probably does have the minutest bit of gluten in them.
Does this happen to you over Christmas, where you try so hard not to eat gluten, but it is other supposed gluten free products that get you? I was doing so well, until I started to eat different foods as in processed and now I feel a bit like death warmed up at times.
I know I have been glutened, but that is a different question as it is so much harder tonail as there are quite a few different things that could've done it.
The next question is, and it is does your sense of taste change. At first I thought it did when I first went gluten free, but I don't think so anymore.
But this week food does definately taste different, something sweet just tastes sweet without the flavour, potatoes are weird and coffee not nice. I cannot seem to taste coconut and popcorn is not as nice. Nothing seems to have the edge to it. I was just wondering if this is a side effect of being glutened? I know some have said they can taste gluten when they eat it, but no mention of altering taste buds.

What I decided to do was just eat healthy and not even try to make desserts. I don't really crave them anyway. I treat for me is to have extra carbs like a big slice of gluten free pizza or two. I usually go low carb thru the week. For Christmas my treat will be to have that new beer called red bridge that everyone is talking about. I can feel like one of the gang watching football with it. The dessert table doesn't even bother me its weird.
I could make gluten free desserts but I hate baking. I don't have the patients for it. The only thing I do is make pamela's brownies. I'll put raspberries on it with whipped cream. Or I'll make apple crisp since its crustless and I have oats that I tolerate. With these at least I'm getting fruit. And I only make them on special occasions.
Believe me I pamper myself in other ways. I'm always buying the best shampoo's and conditioners for my hair. I love bubblebaths with products from Philosophy and yummy smelling lotions. I have one that makes me smell like a gingerbread man. Can't eat them but I smell like em.

Last time I got glutened I didn't like eating for two days after. It felt like I was slightly nauseated. Its so not worth it. I didn't even make cookies for my husband and son. I figured they can just go the bakery. They'll get plenty at the gatherings.

Gail, Your making me think. I never suspected acid buildup as the culprit, I always assumed that I didnt have enough acid to digest my food. Acid indigestion did cross my mind recently though because I noticed a sour feeling in my throat and I wondered if I really did have an acid issue. The GI doc that I recently saw listened to my symptoms and wanted to prescribe an acid blocker. I told him no because I dont like having to take meds, and I wasnt sure if acid was really my problem. Do you think its better to take over the counter stuff, since its probably much more mild. Im going to try it. Thanks a bunch.
I really think this is your problem because I have the same exact symptoms for years and I didn't want to believe it was acid either. Someone explain to me it was. I would also have a feeling in my head like it was swimming in water. At its worse I would get little hard bumps break out (not many) but they would kinda itch. I believe when there is an excess of acid your blood gets the same way and crosses the blood brain area giving me the swimming in water feeling. And the skin is just another way your body uses to get rid of toxins.
I have taken prilosec but its expensive and I was never sure if I needed to take it for the length of time they tell you. So I've learned to take the Maalox Max a couple of times during the day and then before bed I'd take peptol bismol because that has something in it that kills a bacteria that can cause problems. I do it for as long as I need it, about 4 days. I'll notice I'll sleep through the night when I start to get better.
I remember you have problems with candida, so do I and this may be the problems we get this way. I read somewhere when I was doing research that candida causes an acid state in your gut. If I find it I'll post it.
I read to find out if its an acid problem you mix 1/2 t. of baking soda in a glass of water when your feeling that full feeling.
It you start burping its likely to be acid, if you don't you don't have enough. Don't know how valid that is.
It'll be interesting to see what happens. I hope you get to the bottom of this.

When my stomach feels that way it's usually because of acid buildup. I get that way frequently, and it feels like your stomach has undigested food but not necessarily so its the acid that makes you feel full. I would eat a bigger supper and try time it so your going to bed about 4 hrs later. I would skip the snack because it interferes with suppers digestion. Then before you go to bed take a tablespoon of Maalox Max or Peptol bismol. Both work good. You can try taking it during the day until you get the acid to balance out again. This is what always works for me. I have to take it for about 4 days depending on how bad it is.

You have a wonderful sense of humor although I know going through the learning period is no laughing matter. It been almost a year now for me and realizing that c.c. happens to me. I thought I was above it.
I will have to break down and get my own toaster and breadboard this week. Its sad but yeah most people won't understand how sick we get when we have contact with gluten. I won't even bother discussing it anymore although I've tried. I can with a few which is nice because when your intestines are twisted in knots its something you'd like to be able to talk to someone about.
I have a puppy too. Solid Gold doesn't have wheat and is primarily millet and rice but does have some barley in it. I feel good giving this to my dogs but I don't really know if you can find anything gluten free. I'm sure someone will know.
I'm finding holidays are the worse for getting c.c. I've been gluten twice just since thanksgiving. I just want to sing It's the most glutenous time of the year instead of wonderful to the old christmas tune. It'll get alot easier when January comes and everyone's on diets. They tend to be more sympathetic.

To all you guys who have seen these "alternative" practitioners, did you have to sign a waiver declaring that you weren't someone who was representing a government agency with the intent of entrapment? I guess the fact that I had to do that gave the whole thing an air of "illegality"........

No not with this clinic but it was back in the 80's when they probably got away with more.
Does anyone remember a time when hydrogen peroxide was a cure all? You were supposed to dilute it and drink it. Its claim was to deliver oxygen and kill certain types of disease for instance candida in you gut.
Anyway you could buy it flavored and all ready mixed to the proper dilution by calling this number. Well the guy that answered must of got his hiney kicked by authorities. He was sure I was a reporter and started giving me the third degree. I was almost in tears because I just didn't expect it. Good thing in the long run because I know now it wasn't a good thing to do.
If they don't have anything to hide then they shouldn't worry right. Sounds like a good assignment for "Stone" to do from 20/20.

No this wasn't BioSet it was what Karen was talking about. BioSet sounds alot different and its been nice listening to how your doing with it. Maybe in the future this is something I'll look into.

I had this done many years ago. We had to fly to Reno Nev. to get it done. We were following the advice of a lady who thought the world of this clinic and how it helped her so much.
The thing I remember is holding that bar and her shoving all these plates into a machine that would represent the food. I tested high on everything. She made it sound like I was so sick. Then she made this liquid concoction and put it in a syringe and shot me up with it.
We both had a bad feeling about this clinic and I threw away all the test results.
It was a wasted plane ticket, wasted money on tests and wasted time as far as I'm concerned. I did have fun being at the peppermill casino however.

You know what also would be good is smoked salmon. Then serve it on a nice tray with cream cheese and rice crackers. I think they run about $30 a pound but I know all those gift baskets are expensive.

Barley malt adds to the flavor because it has MSG in it. There is also malt extract and malt flavoring to look out for. I've avoided MSG for 20 years because I'm extremely sensitive to it and never knew barley malts had it. And I drank beer quite often. Its no wonder I never felt good.

Guhlia-thats how I eat. I can say you'll be healthier for it but yes my grocery bill is high. We don't go out to eat anymore so I guess its a wash for my family. We'd easily spend $80 a weekend eating out before gluten free days.
One tip is to make soups. I'll buy a package of chicken legs and make my own chicken broth. A package of maybe six will end up making 8 cups of broth. Thats 8 cans of chicken broth! So you save there, chicken legs are pretty inexpensive and so you just throw an onion and 2 celery stalks and 2 carrots cut up, some spices like thyme or poultry seasoning and salt and simmer for 2 hrs. I'll drain it in a 8 cup pyrex pour cup and give the chicken meat to my 3 dogs for supper but you can eat it.
Then this week (yesterday) I made lentil soup. I used lentils, carrots, onions, green pepper, and about 1/2 lb. pork sausage. I used the other half for a pizza on sunday. But that little but of sausage really made the soup taste great and there was leftover for lunch and still have some left.
Gluten free flour is just expensive and not only that but I order mine and have to pay for shipping. I have to buy some this week and I'll just buy the biggest amount and just bit the bullet on that one. Amazon has gluten free grocery that I buy but it comes in bulk, usually a six pack. I'm saving alittle there but there's shipping, however they've been offering free shipping if you don't mind the wait being 7 days.
Have you ever tried polenta? As much as I love tinkyada pasta I'll serve polenta every once in awhile. Top it with a great spaghetti sauce. Its just corn so its cheap. Corn bread is also cheaper then gluten free flour blends. Although you'll need alittle flour blend for a decent corn bread.
My market had puffins on sale awhile ago and I went crazy. So they do go on sale I suppose to move they've been sitting for awhile on the selves, it doesn't happen often.
I hope this helps alittle, I know its more kitchen time but its not intensive work you can do other things with alot of this.
