First, please know that it is wildly bewildering at first, I even cried for three days, had the breakdown in Whole Foods (lots of people do), but that it gets SO much easier.   2. Just two or three Doves a day! What discipline....do I get cravings?? Only all the time now. Hershey's Hugs for me, milk chocolate and almonds.....wish I could say I was like Patti, but am known to eat half a bag at a time.... Generally I don't keep stuff like that in the house as I just want to keep eating!
  3. I don't know how satisfying this will be for you....but, when I'm reading in bed or watching something, I eat low sodium sunflower seeds - lots of 'em! Just good to crunch and healthy too. Or, rice cakes, for something really bland adn uninteresting!

  5. Can you even stand it, how Paula eats the food at the end of her shows - esp. the dessets - and you could just DIE from how good she makes it look??? I no longer have expanded cable, so I haven't seen her show since removing gluten...I think it would be a particularly heinous form of torture now... Eat up, Chelsea..... Great picture, Julie!

Yup, Tika comes up with very exotic (read: expensive) illnesses and friends now call her The Dog Who Will Not Die (lymphoma survivor, pancreatitis, Cushing's, now what appears to be Celiac..... ) On a serious note, my Annie is quite sick, with symptoms that are not indicative of giardia, and I was informed of this by 2Kids4Me, whose husbnad is a vet...

This is good info....when you go to most Celiac sites, the main symptoms discussed are intestinal, and I have had trouble finding satisfying research on neuropsych symptoms, so I stopped looking and went with the theory that it was malnutrition that caused depression and bipolar issues....I am really going to be researching now, thanks...
  10. I'd go the Paula Deen route, just sequester yourself, and figure ALL of it out WITHOUT gluten! It is true, in regular Cordon Bleu or whatever, you'd be contaminating yourself, and you DO have to taste everything, test everything, and you'd be around flour all the time. And then wild mania started in my early twenties....I think this is so exhausting on the body. Your doctor sounds brilliant - - are you looking into any issues of adrenal fatigue? Has he mentioned this? I brought it up to my doctor...

I haven't tried any gluten-free baking at all yet, but, from my research, it seems that the xanthan gum is pretty crucial for getting any kind of chewy texture.....I think ChelsE posted something about this somewhere, she will know - she had a better description for it than I do, as I recall. I think it's really expensive, too, but kinda necessary, unfortunately...

Chocolate chip cookies (with walnuts and oatmeal) - my mom's in particular - are my binge/to die for/all-time favorite thing IN THE ENTIRE HISTORY OF FOOD.....used to be that I could not make a batch as it was guaranteed that I would eat ENTIRE double-batch in two days.....(yeah, I had a really healthy diet before going gluten-free ) Chocolate chip cookies...

  23. I was losing a ton of hair - - my iron and other nutrients were really low. About four months after being gluten-free, it FINALLY stopped falling out.   25. wow Phila, let's pray it's not a tumour. As far as lack of menstruation - that can be due to severe malnutrition, a result of untreated Celiac. And depression, of course - same thing. It's all connected. The ffect of long-standing malnutrition on the brain is pretty amazing and definitely not good....
