Have you tried hummus? Chick peas pureed with oil. I love the stuff and have practically eaten half a cup of the stuff in one sitting. But alas, my daughter can't have it because of the EE. I won't take the chance of cross-contamination with all the beans and leguemes. -
I've been gluten free for over 5 years and it makes perfect sense. If it is at a restaurant, call the place during the hours it is not busy and work something out with the chef/kitchen staff so you don't have to deal with any extra drama during your interview. I think you have the right plan. Work out the details with the secretary. You have a plan to supply your own food if neccessary. This could turn out to be a positive in your interview. People don't realize that they actually get shampoo in their mouths while they shower. You can try the baking soda test. Put baking soda in your hand with the shampoo and go about your usual routine. The baking soda won't hurt you and it has a taste you can recognize. If you taste it at all, there's your proof. -

Maybe some one can post a link for you. Immune response can take up to 2 weeks. (This is from other disorder research on eosinophils and cross referencing with Celiac diesease.) Some reports can have different time lines. i.e. I don't know how long a DH rash takes to heal. -

Go corn free ~ no high fructose corn syrup and search out other possible sources for label reading. There are other things to use in place of corn starch. i.e. arrowroot has always been considered a far superior thickener especially with heat... -
It will really depend on the judge and the case. Explain the situation. The judge will decide if he/she is willing to have unexpected breaks. If the case has any chance of sequestering the jury. (This is very rare.) So long as you have the ability to sustain a gluten and allergen free diet you will be fine.

I understand the frustration with doctors when you are trying to get your baby healthy. Lower intestine damage is very concerning, as it isn't clear cut for a Celiac diagnoses. Keep a food journal. Like Peter stated, testing is unreliable for children under two. Catch 22 situation... the patient needs to be ingesting gluten and have enough damage for the testing to pick up on. i.e. enough antibodies in the blood, enough damage to the villi during the endoscopy with biopsy. You can opt for the genetic testing, but it still is not covered by all insurance... -

You need to look into vitamin B12 defiency from Celiac and/or Pernicious Anemia. Lucky, today the sublingual B12 vitamins are thought to be as effective as the shots. -

Thank you for the i tune link. You will probably have a few rounds of medication for the H. Ployri. Once that is taken care of you have a better chance that the EE was caused by the H. Ployri. from what I understand. -

A gluten challenge has health RISKS. (your last experience with gluten was vomitting for 2 weeks, a gluten challenge is one month) You do not sound as if you need further testing to convince yourself. You can decide the benefit/risk for further testing. -

She was on the oral steroids for a very short time. It was to help heal after the endoscopy with biopsy and the damage caused pre diagnoses. She went for allergy testing. No allergies found. The ped should screen them based on your diagnoses alone. (They are your biological children, right?) You can have the check list of symptoms. My opinion is from my experience. Get the testing done. Our daughter only went as far as "probable" Celiac diagnoses. She later was diagnosed with Eosinophilic Esophagitis.
