  1. Have you tried hummus? Chick peas pureed with oil. I love the stuff and have practically eaten half a cup of the stuff in one sitting. But alas, my daughter can't have it because of the EE. I won't take the chance of cross-contamination with all the beans and leguemes.
  2. I've been gluten free for over 5 years and it makes perfect sense. If it is at a restaurant, call the place during the hours it is not busy and work something out with the chef/kitchen staff so you don't have to deal with any extra drama during your interview. How you interact with others is the reason of the face to face interview. I assume you want...
  3. You are going to rely on the other sources of protein like beans and nuts to make up the difference in your diet. I would suggest that you take vitamins to supplement. My natural headache cure.... Vitamin supplemented water like Smartwater, with a sublingal vitamin B12 supplement, deep breathing for relaxing the muscles, and "remember what it feels like...
  4. I think you have the right plan. Work out the details with the secretary. You have a plan to supply your own food if neccessary. This could turn out to be a positive in your interview. It shows how you manage obstacles quickly, effectively and without drama. Good Luck! and I hope you get some BIG MONEY!
  5. People don't realize that they actually get shampoo in their mouths while they shower. You can try the baking soda test. Put baking soda in your hand with the shampoo and go about your usual routine. The baking soda won't hurt you and it has a taste you can recognize. If you taste it at all, there's your proof.
  6. I don't want your post to go unanswered. So this is more of a reply to bump you. From my memory.... If your sibling has been diagnosed you have a 1 in 10 chance. The average American has 1 in 133 statistic. You have to remember this auto-immune disease has a "trigger". Thought to be an illness, severe stress, chilbirth, and maybe even an injury. Your...
  7. Maybe some one can post a link for you. Immune response can take up to 2 weeks. (This is from other disorder research on eosinophils and cross referencing with Celiac diesease.) Some reports can have different time lines. i.e. I don't know how long a DH rash takes to heal.
  8. I'm a bit sleep deprived. Your son is gluten and casein free, and now considering corn free? Don't panic. Go corn free ~ no high fructose corn syrup and search out other possible sources for label reading. There are other things to use in place of corn starch. i.e. arrowroot has always been considered a far superior thickener especially with heat...
  9. It will really depend on the judge and the case. Explain the situation. The judge will decide if he/she is willing to have unexpected breaks. If the case has any chance of sequestering the jury. (This is very rare.) So long as you have the ability to sustain a gluten and allergen free diet you will be fine.
  10. I have read some studies that link the gluten free diet as an effective treatment of schitzophrenia too. Diet should be the first line of treatment for any disorder. IMO
  11. I understand the frustration with doctors when you are trying to get your baby healthy. Lower intestine damage is very concerning, as it isn't clear cut for a Celiac diagnoses. Keep a food journal. Noting all ingredients, amounts of food, note bowel movements ~ with description "D"/ formed/ hard/ soft/ color, any vomiting, fussiness/crying symptoms...
  12. Like Peter stated, testing is unreliable for children under two. Catch 22 situation... the patient needs to be ingesting gluten and have enough damage for the testing to pick up on. i.e. enough antibodies in the blood, enough damage to the villi during the endoscopy with biopsy. You can opt for the genetic testing, but it still is not covered by all insurance...
  13. You need to look into vitamin B12 defiency from Celiac and/or Pernicious Anemia. Lucky, today the sublingual B12 vitamins are thought to be as effective as the shots.
  14. I would suggest you keep a food journal. You will be trying new foods and may find you have other food intolerances other than gluten. You can also keep track of products you do and do not like. Once you find products you like you can order in bulk on-line. (I click through goodshop and a small percentage of the purchase goes to a charity I choose when...
  15. I didn't have time to respond to your post yeasterday. (and very little time today, so this may be confusing) A good mix to use a start, is some of the Chebe bread mixes. Some of the mixes have dairy so read the label! You have to find a good substitue for replacing 2 eggs. It has suggested subs for the butter/oil and liquid you can use anything...
  16. Thank you for the i tune link. You will probably have a few rounds of medication for the H. Ployri. Once that is taken care of you have a better chance that the EE was caused by the H. Ployri. from what I understand.
  17. Did you find out the cause of infection? Are you being tested for any further viral infections or disease?
  18. A gluten challenge has health RISKS. (your last experience with gluten was vomitting for 2 weeks, a gluten challenge is one month) You do not sound as if you need further testing to convince yourself. You can decide the benefit/risk for further testing.
  19. For the clinical trials.... My daughter is 7. The trials are usually seperate for pediatric medicine. From what I have researched so far, it has been asthma medications used for trials. The test study placebo group showed improvement almost as high as the medication group. (Positive thinking always makes a difference!) Sharing of biopsy samples (Tulane...
  20. She was on the oral steroids for a very short time. It was to help heal after the endoscopy with biopsy and the damage caused pre diagnoses. She went for allergy testing. No allergies found. Her treatment plan at this point has been elimination diet. NO gluten wheat, rye, barley, and oats (probable celiac diagnoses when she was 17 months old) top...
  21. The ped should screen them based on your diagnoses alone. (They are your biological children, right?) You can have the check list of symptoms. List of odd behaviors, i.e. chewing food and spitting it out. (My daughter did that, not really every Celiac kid's symptom. Just keep it for reference after starting the gluten free diet to compare changes....
  22. The pre-packeaged rice krispy treats are not gluten free. Please use the gluten free lists as a guideline. Go for these items and always READ THE LABEL. Products change the formulations with out warning. Holidays are challenges. Special holiday shaped candy that is normally gluten free can have gluten added for special molds or to retain the shape...
  23. My daughter has EE and Celiac. So this is a very sensitive person, with many sensitivities to food and environment. She has been complaining about the Rice Chex but not the Kroger brand Rice Bitz causing her pain after eating. The only difference we can find on the label is BHT. This is a new revelation and I am currently doing the research and food journal...
  24. Big HUGE cyber ((HUGS)) for you! I have seen the pain EE causes and my heart goes out to you. If you need to talk, I'm here. There are others here on the board, because gluten is their trigger. My daughter was diagnosed December of 08. She is still avoiding all top 8, gluten, leguemes, milk is all the way to casein, and food dyes. I can help find some...
  25. My opinion is from my experience. Get the testing done. Our daughter only went as far as "probable" Celiac diagnoses. She later was diagnosed with Eosinophilic Esophagitis. Have the information and a baseline to start your child's health history. Yearly check-ups to make sure the gluten free diet is working. If any other health issue develops in the...
