  10. After many, many months of pleading with my husband to have endoscopy he did it. He was diagnosed thru blood test 9/03 & responded to gluten-free diet. He's been 100% gluten-free since then.   11. Maltose, according to the CSA's "bible" is: malt sugar dervived from malt extract. Used as a nutrient, sweetener, culture media, and a stabilizer especially in the brewing industry. This means it contains the gluten which celiacs should not eat.

Milk is gluten-free despite the cows eat grain....I don't think the farmers are giving the cows grains that contain wheat, oats, barley or rye because they're expensive grains (as compared to grass and hay).   14. My husband (celiac) describes it as a pressure. I am thinking he needs a Vitamin B shot. Sounds neurological to me and Vit B deficiency can give you leg/foot/hand pain.

  21. I agree, it seems like society is ignoring Celiac. Other diseases are plastered in the media all over the place, everyday, celiac is only sometimes mentioned. Let's think about this, is the number of people with confirmed celiac about the same number of people in this country with AIDS? There might be more people with celiac than with AIDS or HIV...
