ARCHIVED Sprouted Grains
eKatherine replied to Sandyo's topic in Gluten-Free Foods, Products, Shopping & Medications
In sprouted grains, the starch is turned to sugar, but the protein is unchanged. Other misconceptions I have heard are that fermenting the dough by use of sourdough for a leavening will remove the risk (untrue, it just changes a little of the starch) and that somebody whose ancestors came from Northern Europe are better adapted to eat rye than wheat.... -
ARCHIVED How Do College Students Deal With Absences?
eKatherine replied to megsylvan2's topic in Coping with Celiac Disease
Think about it. This is really the worst reason for not going gluten-free. If he eats hardly anything but wheat products, and they're bothering him, no wonder he's so sick. -
ARCHIVED Question For The Expert Bakers
eKatherine replied to Mango04's topic in Gluten-Free Recipes & Cooking Tips
I will work out a recipe or two in the next week. -
ARCHIVED Hollandaise
eKatherine replied to Jess's topic in Gluten-Free Foods, Products, Shopping & Medications
Real hollandaise is a bit of a tricky thing to make. It's much easier to make if you've got somebody else showing you. If you make it a few times, you'll get the hang of it. It takes me about 10 minutes in all. Hollandaise sauce 1 egg yolk 1/2 teaspoon water 3 tablespoons butter, melted and cooled to barely warm fresh lemon juice Make this... -
ARCHIVED Worms Maybe?
eKatherine replied to Lister's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Most of your questions I have no experience with, but you know that damaged skin will at first appear to heal, then slough off, as with a sunburn. So it's not impossible that it's part of the regeneration process. Probably not tapeworms. Ones I have seen are don't look like tape, more like little pasta segments that move slowly. You generally get that... -
ARCHIVED I'm Running Out Of Thing To Eat : /
eKatherine replied to klemmen's topic in Coping with Celiac Disease
Are you keeping a food diary? If you eat simple foods as much as possible for a while, you should be able to eventually track back to what has been causing the problem. Processed foods would make this much more difficult. -
ARCHIVED Worms Maybe?
eKatherine replied to Lister's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
How big was the thing? Did you save it? There are things we eat that contain indigestible membranes, like citrus, for instance. -
The first time I ever heard of the elimination diet for testing dietary sensitivities was probably 35 years ago. At that time the person who wrote the article I read was recommending beginning it with a 4 day fast.

I'll take buttered "toast" anytime over that. -
ARCHIVED Vegetarian Vs Eating Meat
eKatherine replied to schuyler's topic in Related Issues & Disorders
Studies show vegetarians not living longer than people who eat a mixed diet. Open Original Shared Link -
It took about 3 years to come back. I just eliminated those two as soon as I started to feel they were causing problems. Hopefully I've got it under control now for the duration.

ARCHIVED Vegetarian Vs Eating Meat
eKatherine replied to schuyler's topic in Related Issues & Disorders
I have seen this said on vegan sites, but that's not how meat digests. Meat is digested within a few hours of eating it, leaving very little residue. So you do need to eat fiber in addition, in order to keep from being constipated. -
I think that beer has to contain barley malt in the US in order to be called 'beer'. Most brewers of American-style beer use part corn sugar and rice because it's cheaper than barley malt and makes a lighter-flavored and colored beer. If a beer has wheat in it it will be labeled "wheat beer" or "weisbeer", which is a specialty beer type. Types of malt are...

ARCHIVED Omg...i Might Be On To Something
eKatherine replied to Rachel--24's topic in Food Intolerance & Leaky Gut
The list contains every symptom known to man. You may be sensitive to msg, but it is not as common a sensitivity as was once thought. Go msg-free and do a challenge. Keep in mind that you should not confuse msg, the food additive, with glutamates, which occur naturally in many foods. If you are sensitive to glutamates, you will need to avoid them, but... -
York Peppermint patties are capable of fueling the worst crash imaginable.

I had that in the feet, ankles, and hands. It went away when I gave up gluten. Later it came back, but after having given up dairy and wine, I'm again free of it.

Sorry you feel that way. I myself do not believe in situational science. -
ARCHIVED Vegetarian Vs Eating Meat
eKatherine replied to schuyler's topic in Related Issues & Disorders
Meat is the natural diet of the human. We evolved on it. The human digestive system is not designed to digest cellulose, like the gorilla or the cow. Only recently have sufficient quantities of other foods been available to become the major portion of our diets, and most plant materials need to be cooked to be maximally digestible. If somebody on Oprah... -

If the bread's a little fragile, put it in a sandwich box rather than a baggie. -
ARCHIVED Breakfast, gluten-free, Low Carb, High Protein, Ideas Needed
eKatherine replied to VydorScope's topic in Coping with Celiac Disease
I used to bring a dish with peeled soft boiled eggs, breakfast sausage, spinach or some other vegetable, and rice for a late breakfast at work. -
ARCHIVED Vegetarian Vs Eating Meat
eKatherine replied to schuyler's topic in Related Issues & Disorders
I disagree on both these points. If you calculate out the nutritional contents of a diet that is mostly vegetables, you will find it very deficient in protein. Try it sometime. In fact, very few people eat 3x the protein that they need. The governmental required/suggested quantities of protein in the diet of a healthy person have in fact been shown to... -
ARCHIVED Hormels Little Sizzler Pork Sausages
eKatherine replied to Lister's topic in Gluten-Free Foods, Products, Shopping & Medications
These are breakfast sausages. Breakfast sausage meat should not have any starch binder in it. If it is on Hormel's gluten-free list, it should be ok. -
I lost my sense of taste for about three months after a bout with bronchitis. I agree, you definitely need to see the doctor. Whatever it is can become permanent if you don't get it treated.
