  9. I freeze them in small batches as soon as they are cool. That way - only have out what I now we can eat. Fo slices of cake or bars - I put wax paper between a few pieces so they dont freeze all togther. Or the cake recipe is made inot cupcakes and I can take one or more when I want.   10. Not necessarily, esp in a young child. Villi blunting alone is not definitively celiac. they look for various cell types in the the crypts to diagnose.   11. The amount of pee produced has nothing to with nutrient absorbtion - but rather fluid intake. Especially in a child. Is he active and alert - has an appetite? Perhaps when you eliminated the foods he was allergic to - his appetite did improve (becasue he feels better) and is eating more of the foods he can tolerate - and those foods have a lot of moisture...
  12. Have they ruled out endometriosis? This can cause the symptoms you describe.... you could have celiac PLUS endometriosis...so they should check for both. If the pain is getting worse, you should contact the doctor and let them known the intensity of the pain is changing. Thinking of you and hope they find out what's going on. Sandy
  13. my heart goes out to you. My daughter had hypotonia, fatigue, and fell behind developmentally until she was classified as global developmental delay. The various tests they wanted to do seemed never ending but they did have to rule out a number of issues that can cause hypotonia and it would be negligent for them NOT to do investigations since early therapies...

Hi and welcome, I too enjoy baking and it was huge learning curve - I had a bad day when I purged my pantry of gluten and thought of all my favorite recipes that seemed to be part of the past....UNTIL I picked up some cook books (Bette Hagman), read more about baking with gluten-free flours, figured out which flour worked best in cookie or cake recipes...
  15. Anytime you are dealing with an infant - you want to err on the side of caution. Document what yuo have discovered so far - what foods make him sick and how he improves when those foods are withdrawn. There are a number of things that can cause diarrhea and lack of weight gain - other than celiac. It certainly sounds like a food related intolerance /allergy...

  20. Every lab has normal values. Even if she came back weak positive - its still positive. My daughter had the lowest number you can have and still be called postive. She had a biopsy that was conclusive for celiac (damage consistent with celiac sprue). Another consideration is lactose intolerance - even more common than celiac. You can try at home to withdraw...

  23. umm, yeah I second the energy level comments! In vet medicine we joke that Jack Russells are the ADHD of the dog world. They are not afraid of anything. They were bred to go down holes after rodents and badgers...ever seen a badger? A Jack Russell will take them on. A westie is definitely more laid back and not as "dominant" as the Jack Runners...
  24. Test results can be unreliable in babies and young children, simply because of their immature immune system. You have a positive response to removing gluten from the diet. At this age - that's good enough for now. So many choices - sweet potatoe, potatoe, rice, carrots, chicken blended in the blender. I never fed my kids dairy or wheat until they were older...
  25. I did not get the impression that VyktOr was or did say we dont get sick from gluten. My interpretation is that he is questioning the classifcation of celiac as a disease . He said that gluten is poison to us. Maybe we are just a variant of normal. The discussion (I think) has been about the semantics of naming something a disease / defining a disease...
