  1. I'm 59 and just went gluten free after probably 40 years of being gluten intolerant and not diagnosed. Everything got worse after I turned 40 and even though I had an allergy panel done six years ago, the dr. didn't give any guidance so didn't really know how to avoid everything I needed to. I'm a little over 2 months gluten/casein free and a couple weeks...
  2. Do you boil millet just like you woud quinoa or rice? Is millet seed something that you can get at a health food store (not bulk, but in a box?). I have some puffed millet and puffed rice, which I mix in some honey for a sweet treat.
  3. Tonight is fried breast of chicken strips; wild rice mix with gluten-free/cf margarine + herbs + celery; peas with leeks, sliced tomatoes on spinach leaves. If I'm up to it, I'll also make chocolate pudding made with non-dairy "milk" and tapioca + coconut + nuts. I'm making lots of this meal so it will also serve as Sunday dinner, and also some of the...
  4. Last night was Mexican casserole made from scratch: hamburger, red beans, diced onions, green and red peppers, and Green Mountain salsa for the sauce - I added some cummin to it. Side dish of green beans.
  5. so, where do you get this gfcfsf protein powder - I'd sure like to have some of this on hand for when my blood sugar is down and I don't have any cooked meats on hand for protein.
  6. Good for you for getting serious about your diet now while you are young enough that you'll be able to live a healthy productive life without having to focus on the bad things that this disease does to a body whose gone decades without a diagnosis. I have felt the very same thing and am often "sick and tired" of dwelling on my health and my diet....

    ARCHIVED Sick...

A while back I tried the Ph balance diet. While I haven't stayed with it completelyt, I did learn a lot about eating foods that balance the system and are alkalin-producing (bacteria and viruses can't live in an alkalin environment but really do well in an acid environment). The first time I got a cold after being on this diet, I switched to eating ONLY...
  8. I've going back to the good ol' days and am now using a handkerchef. I rather like the pretty prints. However, I am one of those people who rarely have to blow my nose, so it's not much of an issue for me. I'll have to pick up some Scott's tissues - soon, before they change their forumla!!
  9. Thanks for all your replies. I can see that level of outward symptoms vary from individual to individual and don't appear to be the result of intolerance vs celiac. Must be something else that controls the type and severity of symptoms. I was just curious about it. My heart goes out to those who get really sick from such a small amount of gluten. I'm rather...
  10. 1) Beef round steak strips browned in Earth Balance shortening with chopped onion, then continued cooking with added Imagine organic beef cooking stock and a few squirts of Bragg's amino acids. Rounded the meal off with boiled potatoes and sauerkraut (rinsed well to remove most of the salt, simmered for a while in broth from the meat to mellow the flavor...
  11. Is corn one of the ingredients? If any of you still have a box of these, would you mind looking. Thanks
  12. I've been wondering if there is any difference in tolerance level with minute amounts of gluten such as CC in individuals who are celiac and those who are (only!) gluten intolerant. Or do *intolerant* people's symptoms go the whole gammet that *celiac* folks do. I'm wondering because I am diagnosed as gluten intolerant (via Enterolab - two intolerant genes...
  13. Wash your hands after handling gluten laden foods and wipe down the counter top - retire the cloth to the luandry and put out a clean hand towel - actually, I have my own hand towel and my husband has the "gluten" towel. Are your children old enough to make their own sandwiches? My husband makes his sandwiches now on the kitchen table rather than the counter...
  14. Yeah, and the barley, too (i.e. - feeding of the 5,000).
  15. That about sums it up, for sure. I'm too new to all of this, and have been on an "allergy adventure" with other foods as well as gluten, so I'm still emersed in the process. Hope to reach the point that it's just second nature, that I've reserached and found out all the foods and brands I cannot eat, and just settle into the lifestyle without havnig...
  16. First, let me say welcome to the forum. It is the world's greates support group - not to mention all the high-level information herer that will make your gluten-free life so much easier. And, I think that everyone goes through periods when they are really angry about it all. Just last weekend I we had a whole house full of company, and catered in a barbeque...
  17. Not much different than any other internet shopping site. Everything is pricey. However, they only have one shipping charge of $4.99, no matter how much you order. Edit: oops, wasn't this place - no, they don't have the one-price shipping. Sorry.
  18. I just found a site that caters to people with multiple food allergies. You indicate all the things you can't have and then what you can have is displayed. I listed wheat, gluten, corn, soy, egg, milk - and still there were many items - some energy bars and some licorice candy (yeah!) along with even some cleaning supplies. Open Original Shared Link
  19. Then run it through the blender.
  20. I switched to grain-free (except for rice) dog food, also. Even the biscuits are gluten-free. This way I'm much more safe and there's one more thing that isn't a potential problem. There's a thread or two that list some gluten-free dog foods - you could do a search. I'm using Nutro Natural Choice dry and "Chops" biscuits that I got at PetCo. there are...
  21. I know. I do tell them. But telling doesn't seem to be enough. That's why I thought the card would help. Talking to the server doesn't necessarily mean it's being communicated to the cook. If you'll notice on the text of the card, I'm only asking that my meat and vegetables be prepared without ANYTHING on them. This does not require reading a label...
  22. I wouldn't be ordering any pasta or pastries or any breads. I thought it would be easier for people to understand if I just said "wheat" and didn't try to educate them about where gluten comes from, since, as you pointed out, there are some pretty ignorant people out there. Maybe, though, I could say "gluten" with "all flour and all bread...
  23. Thanks for the suggestions. I'll give them a try. Leah - I've never hear of baba ganouj before. What kind of store do you find it in - or do you make it yourself.
  24. Chris - I'm so glad for you that your mother is going to come and stay with you. This should be a great help to you, not only in getting things done and cooking, but a great morale boost, as well. I got to thinking about your going to work and what I've done in the past, eating wise, while working and thought I'd pass on some of my more helpful methods...
  25. Thanks, Leah - I've added soysauce to the card. Since I will be ordering my food without sauces, I'm hoping to avoid hidden gluten, etc. It's a jungle out there!!!! I've only eaten out twice in the last two months - first time was good, but that was out of town so can't go there again. Next time it will be at Outbacks where so many here have had safe...
