  1. What would be the point, from a marketing standpoint, of going to the trouble to make gluten-free products, and then put on the label a statement that tells potential customers that the product isn't safe if they need to eat gluten-free. Doesn't make sense to me.
  2. All the responses have been interesting. So, most have "recovered" from GERD simply from going gluten free. I didn't, but then corn has also been a major issue. Perhaps finally going corn-free was the operative factor and the vinegar "treatment" was irrelevant? Guess I'll never know for sure. Diet sure can have a major impact on so many parts of the...
  3. I love the taste of vinegar, too, and find it really refreshing as a beverage. Queen - do you put it on your cooked greens, too? (spinach, kale, etc.) My mother always did this and added (real) bacon bits. Yummy!
  4. I'm hoping that the problems I've had with acid reflux and stomach pain have been "cured". First of all, let me say that I've not had an official, MD diagnosis of GERD, but my symptoms were: Stomach pain (at the top of the stomach) relieved immediately after eating, then returning about a half hour later Acid reflux - made my lower esophegus sore and...
  5. No eggs for me, either. I agree with Vincent - how would you completely separate the two parts of the egg.??? Avoiding egg isn't too hard, but it IS hard to make good gluten-free bread without eggs. But, the hardest yet for me is avoiding corn and corn derivatives.
  6. I don't think that there are celiac genes in my family's gene pool, otherwise there would have been more unexplained illness and/or death. I remember my mother saying that my sister was the only one who she could find out about who had Type 1 Diabetes. All she could turn up was one child two generations previous that had died young. My parents and their siblings...
  7. This is an interesting discussion. As one who is "only" gluten intolerant (diagnosed with two intolerant genes and no celiac genes) I've been wondering how this difference plays out the medical consequences. I sure hope this is true. I probably have been gluten intolerant since I was in my early 20s and am now 59. Enterolab tests show NO malabsorbtion...
  8. The microbe that produces Xanthan gum is cultured on corn syrup and is, therefore, contaminated with corn. If you have a corn allergy this could be why you react to Xanthan gum. I intend to try guar gum soon, as I am corn intolerant, but just haven't gotten around to purchasing it yet. It's a real bummer that all the gluten-free bread mixes (even those...
  9. perhaps it will be better over time.
  10. I also just say I have food allergies or am allergic to wheat, but thank you anyway. I don't even mention that something will make me sick. No one has presured me, but if they had, I'd have just said that I really can't eat (whatever). Now, if it's a private party, I would inform the hostess/host beforehand so they wouldn't feel offended that I'm not eating...
  11. I've gone off Splenda, too (also, the individual packages contain dextrose and I'm allergic to corn). I used it when it first came on the market, but then figured I was better off not using any artificial sweetner and went back to sugar and stevia. As a nation we are really addicted to sweet things (and high carbs, which is in reality the same thing...
  12. The short answer suffices! Seriously, gfp, thanks for all the research. I may print some of this as a handout for stupid doctors.
  13. There may be other threads that have a reference to this site - so, sorry if this is redundant. There are many articles about Celiac and gluten-intolerance. And, they mention that the disease is underdiagnosed, that it is mostly misdiagnosed, and that many go years and years before a diagnosis. I'm going to suggest this site to my doctor (who thinks...
  14. Thank you so much for this recipe. It's so hard to find special recipes that are dairy free (and this one is also corn-free). I'll be trying this one out for sure!
  15. "vegetable broth" can also mean MSG - if that's an issue with you. To avoid potential problems I only eat tuna that has nothing else added except salt and water.
  16. Yummmmm. Got to try these recipes. I can't have dairy either so am always on the lookout for safe CHOCOLATE!
  17. You can freeze fried potatoes for use later on in the year. Peel and cut the spuds in small cubes and fry in oil/shortening until barely soft. Blot the potatoes to take off excess oil. Spread on a cookie sheet and put in the freezer just until frozen. Then pour them into a plastic bag (this way they'll stay separated in the bag). You can take out just...
  18. My question exactly. I've already done the Enterolab testing so don't need to run the test for celiac, but I was wondering about the 96 food allergy test. I had that done (regular blood draw from a lab) several years ago and was wanting to get it done again. The doctor I saw last week doesn't even know about food allergy testing (IgG) and so he is useless...
  19. First, I want to say how very fortunate you are to have a doctor that doesn't blow off your symptoms and actually understands about gluten intolerance and celiac. You have been spared so much anguish in havnig to fight with a doctor when you KNOW you are sick. I had genetic testing done through Enterolab who found I have two intolerant genes. I also...
  20. I made an infusion from fresh ginger, sweetened it, and added some to sparkling mineral water. This was SO good. Here's what I did. diced some fresh ginger root (peel off the outer bark. cut thin slices, then cut them up in small pieces - maybe next time I'll try grating the ginger.) Ended up with about a tablespoon of ginger. Dropped the ginger in...
  21. intolerant to: gluten, dairy, eggs, corn sensitive to: soy and other legumes including chocolate, potatoes and green peppers I haven't eliminated everthing yet - just gluten, dairy, eggs and corn and eat very little soy - but have greatly improved because of this diet.
  22. I bought the book. I think these workshops are something new. The instructions in the book are very easy to follow and there are pictures.
  23. Oh yes, I've tried it. Pete Egoscue's exercises are WONDERFUL! I've had the book for several years and have sung its praises to anyone who complains about hurting anywhere. There's a set of exercises for just about any ache or pain. And they DO WORK. A friend of mine had her arm in a brace and could hardly function - couldn't even hold a fork to feed...
  24. I have three bread mixes that I bought a few months ago, before going casein- and corn-free. These mixes are gluten-free but have other ingredients (egg and/or fructose [corn] ) so I can't use them. If you live in the Kansas City, MO area and would like these, I'd be glad to give them to you rather than just throw them away. Pizza Crust Mix, The Really...
  25. I haven't eaten at a restaurant for several weeks. Not just because of being gluten-free, but now that I have to be egg/milk/corn free, it makes eating restaurant food seem like just too great a challenge. Maybe I'll risk it some other time, but not right now. My hubby and I are planning a 4-day trip and I'm a little nervous. But, I'm going to take a...
