Liz, I love ginger snaps. I wonder if one could just roll the dough in logs, refrigerate, and then cut off slices like refrigerator cookies, without rolling out and using a cookie cutter. I think I'll give it a try. Thanks for the recipe. -

I was always getting gastritis - from many years ago up until about a month ago when after being gluten-free for a few months allowed for enough healing that I no longer have acid stomach issues. Before I discovered that it was gluten causing all my GI problems, it was like you say - just out of the blue - pow - hit me like a ton of bricks. It was very puzzling. Burdee - I made the Chocolate Almond Slice and Bake Cookies from your recipe today - YUM YUM!!! I couldn't find any almond flour at Whole Foods today, so I bought whole almonds and ran them through the blender - worked pretty good but left some larger pieces of almond which I just sifted out. This is probably cheaper than buying the almond flour anyway... -
Good idea for a thread. This is one of my favorite combinations, but instead of fresh tomatoes I will partially reconstitute sundried tomatoes (just soft enough to cut but still sort of chewy) and add them to the mix. These tomatoes really ad a great taste. I like this combination with cooked rice, too.

I didn't seem to have any gluten reaction to the oats in my meatloaf. I am going to try eating some oatmeal after the holidays - right now I'm having some GI issues so need for that to settle down (I don't always know what sets it off, don't think it was gluten but could have been something else!!!). -

you need to take calcium with the magnesium at a ratio of 2-cal/1-mag. (If you just take the magnesium your body will take calcium from your own store to break down the magnesium). You usually find the cal/mag combinations at 1,000mg calcium/500mg magnesium. I take one with breakfast, and one with supper, and have in the past taken a third one with lunch... -

I'll add my experience here, addressing the tension headaches. I don't get typical migraines but do have some light sensitivity when they're bad. I used to have 24 hr headaches that lasted for days. Chiropractic helped some but didn't address the cause (the bone-cruncher type chiropractor). All my headaches went away when I started supplementing with magnesium... -

I cannot tell you how many supplements I've given/thrown away in the last few months because of containing one or more of my allergens. From now on, I only purchase those supplements where the manufacturer lists whats NOT in them. I'm just not willing to call/email those who don't bother to disclose allergen information about their product on the label... -

I've been there, too. It's hard to give up so many foods. Gluten is hard enough, but when you add soy, corn, egg, milk.... I mean, what's left!!!??? That's how one feels, anyway. But, in reality, there's a lot left. It's just not convenient anymore. It does take time to get adjusted to a new way of eating, and there's a certain amount of getting over... -
I've had trouble digesting apples, too, so I'm careful about eating them. I do better with the less sweet varieties, and I always peel them - the peel has so many chemicals and fungacides on it and I'm sure not all has been washed off before they're dipped in wax so that you can't get it off even if you want to - I just don't want to be ingesting all that...
