Let us know what you did and how it turned out. One loaf lasts my husband at least a week, so I won't need to bake another loaf until next week. I'm so hoping I canl make a "perfect" loaf (Not that the "fallen" loaf doesn't taste just as good.) -

Well, from the picture of your loaf, it turned out perfect! Unless someone has a suggestion for me, I think the next loaf I'll reduce the water slightly and let it rise only about 1/4 inche from the top, rather than all the way. (It is perhaps just a tad too moist.) -

I burned the motor out using my little light-weight hand mixer (probably 20 years old, so it's no great loss). Anticipating making another loaf today, I went out yesterday and bought a KitchenAid "Ultra Power" hand mixer. It has regular beaters and dough beaters. Welcome back - I'm glad you're feeling better. Just wanted to relate that my heartburn issues left after about 5 weeks on the gluten-free diet and have never returned. I know there are others here who have reported having GERD that cleared up after going gluten-free. -

Regarding CORNSTARCH in Kimberly Clark paper products... Recap: They DO use cornstarch during the process of wrapping the paper products in plastic packaging. That would be all their toilet paper brands and paper towels. -

Me too. I was VERY CAREFUL on the second loaf I baked to not let it get above the pan, but again it just poofed up quickly in the oven. I turned the loaf on its side immediately after taking it out of the oven and that helped to keep it from imploding, but it still was sunk in on one side. I'd sure like to know what to do about this, also. -

That's interesting. Will be looking for others' replies. I have taken kelp in a supplement for several years - three caps twice a day - to up the iodine in my system. I've had low thyroid, but I think this is slowly resolving, as the last test I had was in the low normal range.

Scott is a Kimberly Clark product, so, yes, it's gluten-free. I suspect that there aren't ANY toilet papers that have ANY gluten in them. Just doesn't make any sense. According to the folks at the avoiding corn forum, Angel Soft and Scott are corn free. (I am waiting for an answer from Georgia-Pacific about the corn issue so I can verify - see the thread I started for this.) I use toilet paper instead of facial tissues for blowing my nose. I emailed Georgia Pacific and asked specificatlly about Angel Soft toilet paper, and here's the response. This isn't as full an answer as Kimberly Clark gave (I asked about their packaging, too), but it's not likely they'd use any flour on anything. I went the for the Enterolab test, also. Since I had been gluten-light for several years, I didn't think any test would be valid, even though I still had major IBS symptoms. Before I had to give up eggs, I used to make a thin crepe-like pancake with only egg. I would beat the egg until frothy, then put in a hot oiled non-stick pan and tip the pan in a circle to evenly spread the egg so that it became very thin. This produced a thin, slightly rubbery crepe that I would use as a dessert crepe. Might be too eggy for as a sandwich...
