  2. I was wondering when reading that you used a pasta maker if, perhaps, Hagmen's cooking time was for a thicker noodle. I agree with Jerseyangle - just reduce the cooking time and test early on. Now you've got me thinking about making noodles again. Hmmm... chicken noodle soup.... sounds good.

  12. I like risotto and used to make some box mixes with it - until I had to quit eating dairy and corn. I still use it but make the dishes from scratch. There are so many varieties of rice.
  13. I've been adding the gluten-free oats to various dishes - no problems at all. Haven't had a bowl of oatmeal, though - don't really like oatmeal. I DO like oatmeal cookies and that will probably be next on the list.

  15. I attribute difficulty with left/right and other directions as a form of mild dyslexia. I also have some reading problems. Not real bad as to interfere with work or other things, but definitely the directions thing is a challenge. I always have to stop and think before saying left or right.   17. If sub-classifying presenting symptoms of celiac/gluten intolerance will help MDs make accurate diagnoses, then I'm all for it. The way it is now, if a patient doesn't present a very narrow set of symptoms, then they don't get a diagnosis that would greatly help them.

  20. With me it was corn. It's in so many gluten-free bread stuffs, and I just loved Bob's Red Mill chocolate cake (contains corn meal). I was really puzzled because I knew I was gluten-free, but still had ups and downs with GI issues. And then, there was the heartburn. I've never gotten glutened from washing my hands in a public/office restroom, but I use the "soap" sparingly and really rinse well, along with rubbing my hands well on the paper towel when drying (and not just blotting). I feel like I've eliminated gluten even if it were in the soap, which it probably isn't. But some places use moisturizing liquid "soap"...

  25. If you have a blender, you can process the seeds in it and make your own flaxseed meal. That's what I do. I keep the seeds in the freezer and only process what I need for a specific recipe - that way they stay fresh. Put about 1/4 cup seeds in the blender and run on medium speed for a few minutes.
