  1. That's a real possibility. It would be better if you stopped using regular flour. If others in the family must have gluten foods, then buy them ready made and keep them separate. You can make many very delicious baked goods that the whole family will like just as much as if it had gluten in it. Another positive aspect of this is that your daughter will...
  2. Pain Free, by Pete Egoscue. Open Original Shared Link The exercises are not strenuous, are mostly holding a position for a number of minutes. They realign the structure, relaxing tense muscles. There are maintenance exercises to keep good muscle tone. I have a pinched nerve in my lower back and was about to have surgery the pain was so bad. A massage...
  3. My working career was mostly clerical, word processing, typesetting and desktop publishing. I had a home transcribing business and mostly transcribed reports from psychologist and a detective agency. About ten years ago I began to pursue my lifetime dream of painting and began to learn how to draw and how to paint with watercolors. Three years ago I started...
  4. I avoid dairy most of the time and at home will not have it. But, if I'm eating out (a rarity for me) I don't stress over a tiny bit of dairy in something. I have a casein intolerance. There is no immediate reaction that I can detect, but if I continue to eat it I will end up with very sensitive, itchy skin, which won't go away for weeks. My understanding...
  5. Happy anniversary! My one-year is up the end of next month. It sure has been a journey, hasn't it! I know soooo much more about foods than I did a year ago. I'm like you, I'll never go back to eating gluten again - not even tempted! It just feels too go now.
  6. A lady in my church who is diabetic keeps glucose losenges with her for emergencies. They're available in the pharmacy area of a drug store. They're like hard candy, but the glucose, unlike sugar or frutose, does not have to be broken down to be used so it can go immediately toward raising the blood sugar level.
  7. Diestel makes some frozen turkey sausage (no gluten, no corn) - breakfast sausage and Italian sausage. Actually, there's not a lot of difference between the two. After defrosting, make small patties and fry. It's nice to just do up the whole roll and then freeze for another day so you don't have to cook every morning. I mix the Italian variety with hamburger...
  8. Did you drain the pineapple? Maybe there's too much liquid otherwise.
  9. I was never much of a bread eater before, and never with meals, so giving up bread hasn't been too much of a problem. Since I can't have egg (or the corn that's in EnerG egg replacer) what I end up with is a very less than adequate loaf of gluten-free bread. I have made some fairly good biscuits, though, and will serve them with a meal occasionally. Now...
  10. I've eaten at our Chili's several times with no problems. I do ask to talk to the manager, though, and explain that the grill has to be cleaned before they cook my meat and they are always willing to supervise the kitchen staff. It's nice to have a place one feels relatively safe eating out.
  11. I'm afraid Lisa (MommaGoose) is right. Once you become intolerant to gluten, you can never go back to eating it. There's more going on than just what's happening in the gut. Celiac or intolerant. Maybe there's less intestinal damage being done if you're "only" intolerant, but there's also other problems that you probably aren't aware are gluten related. And...
  12. Boy, I can relate to the nighttime munchies. I've been trying to follow a low carb diet (somewhat successful but could improve) One thing I noticed about your dinner - it was way high in simple carbs - taco shells, rice, beans, chips, and very little good carbs like veggies and salad stuff. I'm thinking that the high simple carbs late in the day might...
  13. Congratulations on your bread. Would you mind posting your revised recipe? I see from your blog that you cannot have eggs. I've been trying, and not succeeding, in baking a good loaf of gluten-free and egg-free bread.
  14. Thanks, Donna. Mystery solved!
  15. Why is my message "sent" folder empty? I noticed this when I wanted to double check what I'd sent, and no messages showed up in the sent folder - although I have sent several messages.
  16. I truly understand the difficulty you're facing in trying to avoid corn. I must avoid it also. I have found a lot of help through the Delphi formum, Open Original Shared Link I would recommend that you check this forum out and ask questions. There are many on that board who are in the same boat you are - children with corn allergies. Open Original Shared...
  17. Natalie, You've had some good responses. I am casein free - for life. For me, this is not just a temporary lactose intolerance because of villi atrophe. So I have been finding creative ways find alternatives. Milk substitutes, such as Almond milk, taste great and aren't difficult to switch over to. If your daughter can tolerate soy, there are some...
  18. Celiac.com has some very helpful lists of safe and non-safe foods and food addatives. Here's a quick link to the list index info on foods You get to this by clicking on "Site Index" at the top of your screen - on the left just below the Celiac.com logo, both on the horizontal and vertical link bars. I keep a 3-ring-binder with printouts of lists,...
  19. I've been making some coconut sugar cookies for my husband, adapted from a gluten-free matza recipe. He likes them real well. The rehydrated coconut adds moisture so that, while the cookies are crunchy, they're not too dry. The difference between what I make for him and for me is that with his cookies I use oat flour for the 1T flour. I run certified gluten...
  20. Welcome to the board, and welcome to the gluten-free lifestyle. It's wonderful that you've discovered what has been your problem all along and that you had such an immediate positive response to eating gluten-free. I wouldn't go back to gluten if they paid me. I, too, went over 30 years undiagnosed, and am really self-diagnosed. No way would I go back...
  21. I don't have celiac genes, but do have two intolerant/sensitivity genes. So, technically, I do not Celiac (at least by current definition). So I say that I am intolerant to gluten. I'm confident that as the research on all levels of gluten intolerance proceeds, and as more genes are identified as a genetic link and the whole range of symptoms is better...
  22. I find this research information about the early wheat grains to be interesting. It certainly explains why early agricultural civilizations did not have the autoimmune problem we now have with gluten. I had wondered about this before, and why it is only in recent history that there has been so much gluten intolerance. Obviously, we have a higher exposure...
  23. When you ask questions on a forum like this, you will get a variety of answers based on others' experiences. Of course, this is not a diagnosis of your particular case. No one can do this for you - all they can do is tell you what happened to them and what they have learned from the experiences of others. A forum is like a group conversation. Take from...
  24. You can still enjoy baking and be safe. One can bake some truly delicious gluten-free cookies and cakes that no one will know the difference. Why subject yourself to cross contamination when you really don't have to.
  25. I am dairy free and know what you mean about missing cheese and cheesecake.... One source of fat that I like are ripe olives - I can snack on them just out of the can. You can make a pudding with coconut milk instead of cow's milk. Coconut milk is also good in a fruit smoothie - run thru a blender. No-grain baked products that use almond flour would...
