Diliroth, I buy cream of coconut in a can on the alcohol aisle of any of my local grocery stores (and I live in a fairly rural area myself). It is used in Piña Coladas, so most stores carry it. Jenny, You cracked me up! Sorry I don't have a good recipe. I love hushpuppies, but the closest thing I make to them is a southern version...very crispy and flat, not round and thick. But they sure go well with fish, etc.! Good luck! -
Just to add on to this... Are tapioca starch and tapioca flour the same thing? How about potato starch? I'm curious... In some of my recipes, I have substituted corn starch for potato starch, but I have never substituted tapioca flour for potato starch. Just a little confused. Thanks! -Julie

OH BOY! I'm so glad you posted this! I was out to eat this afternoon with my sister-in-law and I really didn't eat anything, but they had fried mushrooms on the menu....that was the only thing I really wanted on the whole menu. I wanted a burger plain to eat like a steak with no sauces, gravies, or spices. As he walked away, I told him again that all I wanted was the burger and the plate and nothing else. Do you think it would be to bold of me to e-mail my neurologist some of the links and research that I've found? Honestly, she brushed me off so quickly. She said that without a positive biopsy, it wasn't Celiac anyway...
