    Apple Butter Cookies (Gluten-Free)

    Reviewed and edited by a celiac disease expert.
    This recipe comes to us from Valerie Thayer.

    Ingredients:
    2 cups gluten-free flour mix
    1 teaspoon salt
    1 teaspoon baking soda
    ¼ teaspoon cloves
    ¼ teaspoon nutmeg
    1 teaspoon cinnamon
    1 cup dates, quartered (optional)
    1 cup seedless raisins
    ½ cup margarine or butter
    1 cup sugar
    1 egg
    1 cup Lucky Leaf Apple Butter

    Directions:
    Combine dry ingredients. In another bowl, cream butter and sugar; stir in egg, dates, and raisins. Stir in dry ingredients alternately with apple butter. Chill dough for about 30 minutes. Drop by rounded teaspoons onto greased baking sheet 2 inches apart. Bake in preheated 375F degree oven for about 12 minutes.

    To help prevent the cookies from spreading too much we chilled the dough before dropping onto a baking sheet. These cookies can stick together once cooled so I always slip a sheet of wax paper between them. And these freeze well for later!!

    Very good for celiacs but not much on the sugar free as my son has both celiac and diabetes.

    Try making them with Xylitol, it works just like sugar but is safe for diabetics, and delicious. Plus, no cavities!

    I love these cookies! I first made them for my brother, and now am making them for another friend who recently learned he can't have gluten. Thanks for a great recipe!

    Any suggestions on making it egg free...I was going to try using applesauce as a replacement (as I normally do for other baking needs) but....this already has apple butter so would that be too much apple?

    Preheat oven to 350.
    In a bowl mix:
    2 ¼ cups tapioca flour
    1 tsp. salt
    1/3 cup sugar
    ½ tsp. xanthan gum (omit for pie crust)
    In a blender or food processor mix:
    1 cup Filberts/Macadamias
    ¼ cup water
    ½ cup canola oil
    1 tsp. vanilla
    Grind the nuts very fine. Add contents of food processor to bowl and mix. Roll into balls and flatten. Bake on greased cookie sheet at 350 for 10 - 15 minutes, or until they begin to turn golden-brown. The recipe makes 2 ½ dozen cookies.
    This dough rolls out on a potato-starch-floured board quite successfully to make cookie-cutter cookies. It also makes an excellent pie crust - flaky and delicious. Cover the edges with foil and pre-bake for 15 minutes before filling.

    In a large bowl Beat together:
    ½ cup margarine
    ½ cup sugar
    2 egg yolks
    1 level teaspoon of Baking powder gluten-free
    When creamy add:
    1 cup gluten-free cornflakes
    ½ cup rice flour
    ½ cup maize flour
    ½ cup of chopped crystallized ginger
    ½ cup chopped apricots
    Mix until combined and place teaspoons of the batter on a greased biscuit tray and bake in hot oven at 375F for 15 to 20 minutes. Remove and let cool on tray.

    Fig Spread Ingredients:
    1 pack of cut up dried figs
    1 cup water
    Fig Spread Directions:
    Soak overnight and/or simmer until soft and process until smooth.
    Cookie Dough Ingredients:
    1 cup of tallow or butter
    1/3 cup honey
    1 teaspoon vanilla
    ½ teaspoon baking soda
    1 ½ cups rice flour
    2 teaspoons guar gum
    ½ teaspoon salt
    freshly ground nutmeg (optional)
    Cookie Dough Directions:
    Preheat oven to 350F and combine cookie dough ingredients in food processor until they form a ball, then roll out half of the dough (or press) into a pie pan or cake pan for the bottom layer.     Peanut Butter Cookies (Gluten-Free)
    Delicious, easy, and really--peanut butter and chocolate--need I say much more!? Gluten-free (flourless) cookies that will literally melt in your mouth.
    Ingredients:

    1 pkg Vanilla Candiquik 1 pkg Chocolate Candiquik 2 ½ cups Peanut Butter 1 tsp Vanilla Extract 2 tsp Baking Soda Two eggs 6 oz. flaked coconut, toasted (optional) Directions:
