    Simple French Butter Leaf Salad (Gluten-Free)

    I recently took my wife out for dinner at one of our favorite little French restaurants. Among the many delicious foods we ate was a butter lettuce salad. It was one of the simplest, most delicious salads I've ever had, so I took some notes and then set out to recreate it at home.

    Butter leaf lettuce
    Apple, thinly sliced
    Goat cheese, crumbled
    Candied walnuts
    Mandarin orange slices
    Salt and pepper to taste

    Dressing ingredients:
    2 tablespoons Dijon mustard
    2 tablespoons fresh lemon juice
    2 tablespoons honey
    1 garlic clove, finely chopped
    ½ cup extra virgin olive oil
    ¼ cup champagne vinegar
    ½ teaspoon salt
    ½ teaspoon freshly ground black pepper

    Dressing directions:
    Whisk together the garlic, mustard, vinegar, lemon juice, honey, salt, and pepper

    In a large bowl, whisk together all of the ingredients except the olive oil. Once the ingredients are well-mixed, slowly whisk in the olive oil until the dressing is emulsified.

    In place of a whisk, I sometimes like to use a blender or a food processor and simply pureé all of the ingredients until smooth. Either way makes a good dressing.

    Salad directions:
    Thoroughly wash and dry the lettuce leaves. If the leaves are large, tear them into large pieces and place into a bowl. If the leaves are small enough, you may use them whole. Toss the leaves with a bit of the dressing.

    Cut slices from a nice, sweet, crisp apple, such as a Braeburn or a Fuji apple, and add four slices to each bowl.

    Crumble goat cheese over the lettuce and apples.

    Add a few candied walnuts and a few skies of mandarin orange.

    Serve.

    This is one of my favorite soups because of it’s so simple to make yet still yields a rich, rustic texture. A few simple spices and fresh ginger beautifully compliment the sweetness of the potatoes.
    Unlike a lot of soups I prepare, I like to leave this one un-blended. The softness of the potatoes pieces is really comforting. This soup goes great with a piece of gluten-free bread. I also like to top it with a mild salsa or chutney.
    Mango chutney offers a delightful surprise to the palate and makes for a sophisticated presentation.
    Ingredients:
    3 large sweet potatoes, peeled and diced

    4 gloves garlic, minced

    I remember zucchini and squash growing in the neighbor's garden when I was a kid. Though I didn't much care for it then, I've come to love zucchini. Good zucchini soup is a delight to taste. This summer favorite goes nicely warm, but I prefer it chilled and garnished with dill for cool, delicious, savory soup at its best.
    Ingredients:
    2 tablespoons butter
    2 garlic cloves, roasted
    2 onions, chopped
    2 potatoes, peeled and diced
    8 zucchini, chopped
    1/4 teaspoon dried thyme
    1/4 teaspoon dried rosemary
    1/2 teaspoon dried basil
    1/4 teaspoon ground white pepper
    4 cups chicken broth
    1 cup whole milk
    1/4 cup dry potato flakes, gluten-free
    1 tablespoon gluten-free tamari or soy sauce
    4 tablespoons chopped fresh dill weed

    The time is here for sweaters, scarves, and soups that taste like they've taken all day to make. This earthy spin on pumpkin soup is a real treat. Keep and toast the pumpkin seeds for garnish or snack. In a pinch, canned pumpkin also works well but with the season upon us, there are too many uses for fresh pumpkin to pass them up. I like to roast up a separate one to use for serving. Just remove the top, cutting wide enough to fit a ladle and hollow out the seeds.
    Ingredients:
    2 medium-sized pumpkins
    2 cups chicken broth
    1 cup water
    1 cup milk
    2 tablespoons honey
    2 fresh bay leaves
    2 teaspoons ground cumin
    ½ teaspoon each salt and pepper

    Serves 2
    Ingredients:

    1 large fennel bulb, slice stalks and bulbs into thin strips 1 small jicama, peeled, sliced into 1/3 inch pieces
