I am wondering if Chia seeds are ok? I mean if I can find them gluten-free? Just wondering. I have heard mixed messages about them. Mostly bad from Paleo. Evidently not on their list of stuff they can eat so they deem them un safe to eat. I look up alot of Paleo recipes because of my corn intolerance , Soy intolerance and stuff so it is easier to look up Paleo instead of gluten-free. Any thoughts on this?? And I do apologize if this is not in the right spot. It's hard when there are so many threads going on to pick the right one.

Chia seeds are naturally gluten-free.  You do have to make sure you get a brand that is not processed on shared equipment, stuff like that, same as any other foods.

Chia seeds are fine from a celiac standpoint. Just get a brand labelled "gluten free."

 

No need to make life any harder than necessary, by cutting out extra stuff.

We  use  organic  white  chia  seeds....Salba brand .....lately  some  brands  have  been recalled  but  not  this  one.... many use  chia  seeds  in place  of  eggs  in  recipes.....

Yea I have heard of replacing them with eggs in recipes. They are supposed to have alot of good stuff in them. I will try and add them in my meals. Now I know they are ok. 

I had found a recipe on line for some bread I wanted to make. It called for Almond flour , Coconut flour, Chia seeds, Almond oil, and a bit of salt and Baking soda, and ACV , I mixed it all up and thought it doesn't have enuf liquid, so I went to the computer and looked and yup I got it right. So I went ahead and put it in the oven. After it was supposed to be done I took it out LOL looked like roasted nut flour which was what it was because I failed to see "5 EGGS!" lol so I am going to use it again. I will have to go get some eggs LOL. I guess I don't have my brain back as of yet!

I too  have  read  recipes  wrong but  your  combination   of  flours  & such  sound  like  you will get  a healthy  bread..... We  eat  salba  seeds  in  everything because they are tasteless.... but  if  in  throwing  in some  in  a  baking  recipe  be  careful not to add  to much.... I use  them a lot in smoothies, scrambles eggs  & things like  that...

Thank you! I have read they take up some liquid I do like this lil bread I made. It is very good nothing for a sandwich or nothing but it has a nice lil crunch from the Chia seeds and has a nice flavor. I just cut a bit off and have some with my tea in the morning. Better than no breakfast at all ...

      @Martha Mitchell, your reaction to the lens implant with gluten sounds like it could be an allergic reaction rather than a celiac reaction. It is possible for a celiac to be also allergic to gluten as it is a protein component in wheat, barley and rye.

      Scott I also have different symptoms than most people. It affects me bad. Stomach ache, headache, nauseous, heart racing, whole body shaking, can't walk then my throat starts to close. It attacks my nervous system. The only thing that saves me is a 1/2 of Xanax...it calms down my nervous system

      Scott Adams. I was dealing with a DR that didn't care about me being celiac. I repeatedly told him that I was celiac and is everything gluten-free. He put an acrylic lens from j&j. I called the company to ask about gluten and was told yes that the acrylic they use has gluten....then they back tracked immediately and stopped talking to me. The Dr didn't care that I was having issues. It took me 6 months and a lot of sickness to get it removed.... which can only happen within 6 months. The Dr that took it out said that it was fused and that's why I lost vision. If they would have removed it right away everything would be fine. He put in a silicone one that was gluten-free and I've had no issues at all in the other eye. Do not do acrylic!

      Welcome @Martha Mitchell, I too would like to know more about your prior lenses, and especially about the potential of gluten in lenses. In theory this should not harm most celiacs, as the autoimmune reaction normally begins in the gut, however, in those who are super sensitive or have dermatitis herpetiformis it may be a potential issue.
