Yes.  I assuming you are not doing the slaughtering and are buying the meat from a butcher/store.   But check the label if buying it at the store.  Some companies will add gravy mixes, etc.  So, read the label!

Yep, and the way most commercial butcher/slaughter houses work they do not rupture the stomach, or guts when removing so non of it spills in your meat. In the case of a local butcher I might be a be apprehensive but it should be safe. Main concerns with meats is if they used wheat flour or ingredients in a glaze, or in the broth they bird is packed in.
If your purchasing deli meat, do not get it from a local deli fresh cut. Some meats have gluten on them, some products have gluten in them. They use the same deli slicer for all of it. Not worth the chance. But prepackaged deli meats labeled gluten free. IF someone else cooked the turkey be concerned if they used the bag method or a glaze, the bag method involves using a turkey bag coated with flour to bake the bird in it to keep it moist. If they do not know or did not prep it for you with this in mind they probably used wheat flour (we use potato starch in my kitchens for this) If they are basting it some times people use gluten ingredients in the basting sauce like soy, non gluten free wesashire, etc. So be on guard against birds cooked by others.
