Home Made Noodles

just wondering if anyone has any tips for making homemade noodles. is there a certain flour mix that works better than another, or tastes better? could i make home made lasagna noodles?

I posted a recipe for homemade pasta/pelmini (russian ravioli) in December. I'm sorry I can't figure out how to link to it. If you do a search for "Homemade pasta" or "Pelmini" you should find it easily. This dough works great for making ravioli, so it should work for lasagne too. I have served it to gluten eating people and they have liked it too.

liz, if i make lasagna noodles, do i cook them first, or can i just lay them over the meat and sauce since they are already so pliable? if i didn't cook them first, would i add extra liquid like i would with regular uncooked (dry) noodles?

Don't precook them or add extra water. Just layer them like regular noodles. They'll be plenty moist already. They shouldn't be too hard to work with. Make sure you don't skimp on the xanthan gum, but don't overdo it either. Let me know how it works! I've made the dough into pelmini (ravioli) and boiled noodles with butter, but not lasagne yet.

Pelmini is very similar to perogy. You can make it with the same dough. I'm sorry I can't figure out how to post a link, but do a search for Pelmini or perogy and it will come up. Very simple dough.

      Hi everyone  This has been a crazy year so far... How many people actually get entire sensory overload from gluten or something similar ?  My jaw is going nuts ..and that nerve is affecting my upper back and so on ...  Bones even hurt.  Brain fog. Etc  I had eggs seemed fine.   Then my aid cooked a chicken stir fry in the microwave because my food order shorted a couple key items .   I was so hungry but I noticed light breading and some ingredients with SOY !!! Why are we suffering with soy ? This triggered a sensitivity to bananas and gluten-free yogurt it seems like it's a cycle that it goes on.  The tiniest amount of something gets me I'm guessing the tiny bit of breading that I took one tiny nibble of ...yikes ..im cringing from it .. Feels like my stomach is going to explode yet still very hungry 😔  How long does this last?! Thank you so much

      I have had orthodontic work done. The 3M invisalign material was no problem. BUT my retainers are another matter. They seemed okay for a few months. Now, however, they cause a burning sensation on my tongue, gums and insides of my lips. The burning sensation is now spreading to my throat. I notice it when I breathe. This is annoying and interferes with my enjoyment of eating. I am visiting with my provider tomorrow. We'll see where this goes from here.

      Exactly which blood tests were done? There are a few different ones and some docs don't do them all. Also, your results and reference ranges for each?
