Gluten and severe inflammatory response

I have been eating very cleanly on a keto diet. No sugar, gluten free breads, fruit, etc. I have completely avoided eating out as well. I have contact dermatitis on my right hand which ivdd we been battling for nine months. Lo and behold, the diet is working and the rash on my hand is finally gone!  Last week I found it necessary to dine out, but kept it simple and hoped I was avoiding any gluten. Within a day, my arthritic knee blew up with fluid. Had two vials removed. The contact dermatitis came back with a vengeance. Is this from gluten? I made no other changes. Can a person with celiac experience severe and inflammatory responses where the body is weak?

Giving the time frame with you eating out and then your symptoms coming back, I think it would be safe for you to conclude that you likely got some cross-contamination when eating out, especially because you were doing so well for so long when you avoided eating out. This is a very common problem. I take GliadinX (a sponsor of this site) before eating out, which helps bread down small amounts of gliadin in the stomach before it reaches your intestines, but not eating out is still best.

It seems obvious to me that indeed, inflammatory processes pick on the weak areas of our bodies as they are often the same areas that were initially damaged by these same inflammatory processes.

@StuartJ, what brand of gluten-free flour did she use?

Congrats! Can you share the recipe? We just picked up a bread maker from an estate sale and are experimenting.
