This weekend is Mule Day in Columbia, it is a busy weekend with losts of get togethers and parties! In the past I find it hard to have something to eat there so I am thinking about bringin some stuff where I go, does anyone have any good gluten free snack foods or just pick up foods, trail or chex mixes? I thought it would be nice to have some things around the house this weekend..

Snacks that you would have to prepare:

- Sugar Nuts (peanuts, almonds, pecans, cashews coated with butter/sugar/cinnamon, then baked)

- Chex Mix (gluten free generic chex, peanuts, gluten free pretzels, butter, worcestershire sauce, garlic, then baked)

- cold cheese quesadillas with fresh salsa make a great quick snack that can be made ahead of time

- trail mix (nuts, raisins, sunflower seeds, dried fruit)

- Nut thins or Mary's Gone Crackers w/ cream cheese dip (cream cheese, cracked black pepper, garlic, basil, parsley, onion powder)

- celery and peanut butter

- Honey Bits - use your favorite gluten free cereal, mix with a small amount of honey, form into shape, then bake until not sticky

Snacks that you wouldn't have to prepare:

- Lara Bars or Clif Bars

- potato chips (Grandma Utz is labeled gluten free)

- Utz cheese balls

I alwways have Lara, Cliff or Bumble bars on me. I'll often make my own snack mix of mixed nuts, dried fruits and you could throw in the chocolate chips or MnM's.

last week i made "rice krispie" treats but used Fruits Pebbles!! they were good and gluten free. felt good to eat something i could just pick up at the grocery store like everyone else and make at home!

Here's a recipe from allrecipes.com: Open Original Shared Link

INGREDIENTS:

1 egg white

1 tablespoon water

1 pound pecan halves

1 cup white sugar

3/4 teaspoon salt

1/2 teaspoon ground cinnamon

--------------------------------------------------------------------------------

DIRECTIONS:

Preheat oven to 250 degrees F (120 degrees C). Grease one baking sheet.

In a mixing bowl, whip together the egg white and water until frothy. In a separate bowl, mix together sugar, salt, and cinnamon.

Add pecans to egg whites, stir to coat the nuts evenly. Remove the nuts, and toss them in the sugar mixture until coated. Spread the nuts out on the prepared baking sheet.

Bake at 250 degrees F (120 degrees C) for 1 hour. Stir every 15 minutes

I keep meaning to try it with almonds because I'm allergic to tree nuts (almonds are in the peach family). It's got great reviews!

Here's another easy candied nut recipe:

2 generous Tbs. pure maple syrup

2 C pecans (or almonds or walnuts)

Heat syrup in a sauce pan over med. heat until it's bubbly. Add nuts and stir to coat well with the syrup. Reduce heat to med. low. Continue to stir until syrup "sugars" - it will go from moist to dry on the nuts. (This will take 3-4 minutes.) Remove from pan and cool on a plate. I usually double this in a large saucepan.

The sugar nuts are fabulous. Way better than most candies, and definitely more nutritious. Just be careful to pack them in small bags because it's REALLY easy to eat a whole bag at a time. I made that mistake more than once. You can sub melted butter for the egg and water in ChelsE's recipe. I don't know exact amounts though, I always just kind of wing it. I've never put salt in mine either and they always turn out really well. My favorites are the almonds, but I'm an almond freak. If you use pecans or walnuts, be sure to shake the excess sugar off before baking or you may end up with nuts that are too sweet to eat. I made that mistake before too.

If you want to try different variations, you can use nutmeg, clove (a VERY small amount), or vanilla extract. You can also add a little bit of cayenne pepper to spice them up if you like sweet and spicy.

Liz--That looks wonderful--I'm definately trying it. It looks easy, too (which is good) ;)

Thank you all for the suggestions, I made some trail mix stuff yesterday with peanuts, peanut butter chips, chocolate chips, rasins, almonds, and energy pretzels! it is great and it isn't even quite the weekend and I have eaten a lot of it!

I also made gluten-free rice crispies to have around the house, and my mom made some great chicken salad for me to munch on so I have a nice varity around here.

I went to wild oats today and got the Kinnick Pizza, however you spell that and am looking forward to tryin those before I go to the Mule Day Party tonight!

      I was tested for celiac at the same time, so I wasn't taking naltrexone yet. I say that, because I don't. The endoscopy showed some mild inflammation but was inconclusive as to celiac disease. They took several biopsies and that's all that was shown. I was not given a Marsh score.

      Food and environmental allergies involve IgE antibodies.  IgE antibodies provoke histamine release from mast cells.   Celiac disease is not always visible to the naked eye during endoscopy.  Much of the damage is microscopic and patchy or out of reach of the scope.  Did they take any biopsies of your small intestine for a pathologist to examine?  Were you given a Marsh score? Why do you say you "don't have intestinal damage to correlate with lifelong undiagnosed celiac disease"?   Just curious.

      I was tested for food allergies and environmental allergies about 7 months before I started taking Naltrexone, so I don't think that is the cause for me, but that's interesting!  The main thing with the celiac thing that is throwing me off is these symptoms are lifelong, but I don't have intestinal damage to correlate with lifelong undiagnosed celiac disease.

      Welcome to the forum, @Kara S! Warrior bread is a grain free bread product. Google it. There are commercial mixes available, I believe, Youtube videos and many recipes.

      @Colleen H, I have had similar reactions and symptoms like yours.  I started following the low histamine Autoimmune Protocol diet developed by a doctor with Celiac Disease herself, Dr. Sarah Ballantyne.  Her book, The Paleo Approach, is very helpful in understanding what's going on in the body.   Not only do you have antibodies attacking the body, there are mast cells spreading histamine which causes inflammation.  Foods also contain histamine or act as histamine releasers.  Our bodies have difficulty clearing histamine if there's too much.  Following the low histamine AIP diet allows your body time to clear the excess histamine we're making as part of the autoimmune response, without adding in extra histamine from foods.  High histamine foods include eggs, processed foods and some citrus fruits.  The AIP diet allows meat and vegetables.  No processed meats like sausage, luncheon meats, ham, chicken nuggets, etc. No night shades (potatoes, tomatoes, peppers, eggplant).  No dairy.  No grains.  No rice.  No eggs.  No gluten-free processed foods like gluten free breads and cookies.  No nuts.  No expensive processed gluten-free foods.  Meat and vegetables.  Some fruit. Some fruit, like applesauce, contains high levels of fructose which can cause digestive upsets.  Fructose gets fermented by yeasts in the gastrointestinal tract.  This fermentation can cause gas, bloating and abdominal pain.   The AIP diet changes your microbiome.  Change what you eat and that changes which bacteria live in your gut.  By cutting out carbohydrates from grains and starchy veggies like potatoes, SIBO bacteria get starved out.  Fermenting yeasts get starved out, too.  Healthy bacteria repopulate the gut.   Thiamine Vitamin B 1 helps regulate gut bacteria.  Low thiamine can lead to SIBO and yeast infestation.  Mast cells release histamine more easily when they are low in Thiamine.  Anxiety, depression, and irritability are early symptoms of thiamine insufficiency.  A form of thiamine called Benfotiamine has been shown to promote intestinal healing.   Thiamine works with the seven other B vitamins.  They all need each other to function properly.   Other vitamins and minerals are needed, too.  Vitamin D helps calm and regulate the immune system. Thiamine is needed to turn Vitamin D into an active form.  Thiamine needs magnesium to make life sustaining enzymes.  Taking a B Complex and additional Benfotiamine is beneficial.  The B vitamins are water soluble, easily lost if we're not absorbing nutrients properly as with Celiac Disease.  Since blood tests for B vitamins are notoriously inaccurate, taking a B Complex, Benfotiamine, and magnesium Threonate, and looking for health improvements is a better way to see if you're insufficient.   I do hope you will give the low histamine AIP diet a try.  It really works.
